Early picking and wild ferments, exposure to grape solids and battonage gives the wine complexity with balance. Treatments in high quality French oak achieve a wine of generosity and grace, structured and refined. The fruit profile is distinctly Margaret River, the palate is long and tight, creamy with regional dried pear and pink grapefruit showing through, enriched by luxurious notes of mealyness and nut.

Grapes are hand harvested to modest baumes and natural sugar profiles. Picking at such levels creates a wine with sufficiently low alcohol, displaying a balance and delicacy that is often lost in Australian Chardonnay. The fruit is immediately taken to the winery, cooled overnight and whole bunch pressed. Components are barrel fermented in a combination of new and prior use French oak (Latour, Dargaud & Jaegle, Seguin Moreau and Cadus). A third of the parts are inoculated for a course of malolactic, building texture and introducing creamyness while lowering the natural acidity. Voyager is treated to regular battonage over the course of several months in French oak barriques.

Pale straw hues. Delicate aromas of white flower, citrus and nectarine over subtle flinty notes. Plenty of nutty flavours and mealy notes from the lees stirring and quality French oak, ripe stone fruits, tropicals and dried pear. Lovely soft creamy textures dominate the palate, a wonderful purity of fruit is perfectly countered by a savoury, mineral edge.

The application of simple vineyard philosophies is more important to making a great Chenin Blanc than introducing new techniques. Basic vineyard principles which remain universal are a good terroir and minimal intervention. The management of vines at Voyager Estate focuses on canopy maintenance, low bud numbers and small bunches. Clonal selection means finding the perfect match for each soil. Chenin Blanc is sourced from three estate blocks, grapes are immediately pressed, juices are cold settled, racked and inoculated with yeast QA23. After two to three weeks vinification at 15ËšC, batches are held on yeast lees for a month and regularly stirred to enhance textural richness. Alcohol 13.5%

Semillon and Sauvignon Blanc are harvested throughout the chill of night, each parcel is destemmed and pressed to fermenters for settling and clarification, each batch is racked and innoculated with a mix of X5, QA23 and UOA Maxithiol yeast cultures for two to three weeks of vinification. A part of the Semillon is treated to ferments in new tightly grain French oak barriques, followed by a course of maturation and lees stirring battonage for two months. Upon completion, components are assembled, stabilised and filtered for bottling.
