Ashbrook Estate Chardonnay

Hailed at inaugural release by industry savant James Halliday as the nation's finest Chardonnay, Ashbrook is crafted from harvests of Old Chardonnay Mendoza clone, picked off parcels of forty year old vine and assembled with a small block of Clones 3 and 5 transplanted from neighbouring Leeuwin Estate. The long, balmy ripening seasons at Wilyabrup encourage development of the most intense varietal characters, a big boned, dimensional Chardonnay, enhanced through a course of new French oak ferments and extended term on lees.

Ashbrook are the archetypal Margaret River boutique winemaking estate. The dedicated team strive to achieve perfect balance between parcels of the highest quality Chardonnay and treatments in fine French oak. Ultimately the wine remains essentially driven by fruit, maintaining sound structue and clear definition. Grapes are picked fully ripe and in excellent condition, displaying attractive varietal characters. Half the wine is fermented and matured in new French oak barriques over the course of several months without any battonage or malolactic treatments, preserving the distinctive expression of Margaret River and highlighting the primary fruit characters of solidly structured west coast Chardonnay.
 
Light straw yellow hues. Intense bouquet of varietal fruit, rich peach, melon aromas and light oak characters. A long flavoursome palate displaying strong and complex fruit flavours. It's virile aromatics and engaging palate is matched by substantial textures and luxuriant barrel ferment flavours, grapefruit and vanillan, cashews, nutmeg and clove.

Chapman Grove were established in the 1990s, after a decade of search to identify the most propitious terroirs in all Margaret River. A wonderful old vineyard was discovered between Witchcliffe and Warner Glen, an elite site which provided harvests to the most prestigious brands, until the wines of Chapman Grove were ready to be bottled behind their own label. The Atticus Finch range is small in volume yet imposing in depth and breadth, only ever produced of the finest vintages. A Chardonnay of exuberance and profound weight of fruit, treated to a judicious measure of luxury French oak.

Bellarmine Chardonnay
Pemberton

Bellarmine jugs were used throughout the middle ages to carry wine from oak cask to table. The Bellarmine property at Pemberton was planted entirely by hand, vines were trained from ground up, to expose the ripening grapes to optimal sunshine. The terroirs and clime here are a Chardonnay maker's dream come true. Soils are red gravel laterite, offering excellent drainage while providing warmth to the vine root systems at night, courtesy of heat that the gravels have absorbed during the day. A lightly oaked wine, highly evocative of the dry and fruity Chablis style.

Chardonnay is sourced exclusively from Bellarmine vineyard in the high quality cool climate region of Pemberton. Fruit is harvested throughout the cool of night. Juices are gently pressed off skins and separated from the harder solids. Juices are cold settled for two days, the clear juices are racked away from lees and innoculated. A portion is transferred to oak for vinification, the balance remains in tank. Ferments are temperature controlled to achieve a gradual drop in sugar levels whilst retaining maximum flavour. Upon completion, the wines are battonaged to infuse complexity and introduce a touch of creaminess, followed by a term of maturation in a selection of new and seasoned French oak barrels.
 
Pale yellow hues. Stonefruits and nectarine, citrus with subtle oak. Complex palate with citrus, green apple, and nectarine flavours. Subtle spicy oak, tight acidity and a creamy texture, supported by crisp minerality, extended palate length and persistence of flavour. Enjoy with crispy skin roast chicken, crackling pork or fine wet cheese.
Bellarmine Half Dry Riesling

Bellarmine are expert at Riesling and famously produce three different interpretations, each with its own story and appeal. One of very few vineyards in Pemberton to grow Riesling, no doubt indulging the German ancestry of proprietors Dr Willi and Gudrun Schumacher. Grapes are exclusively sourced from the estate property, planted by hand in 2000, vines are trained to receive maximum exposure from sunshine throughout the growing season.

Vineyard soils are red gravel laterite and vines are trained to vertical shoot positioning. Grapes are harvested in the cool of the night at optimum flavour levels. Vinified from the first free run juices taken after the initial crush and from the light pressing of skins. The latter component contributes greater depth of ripe flavours which suit the slightly sweeter style. Vinified in fermenters at cool temperatures, oak is avoided and the natural expression of fruit is optimised. A sudden chill to arrest ferments is timed when there's a single baume of sugar remaining. This stops the yeast cells and achieves a slightly sweeter palate so very appealing to enthusiasts of complex and engaging Riesling wines.
 
Pale straw hue. White flowers, limes and spice on the bouquet, aromatic and crisp, a fully elegant Riesling wine. A clean, perfectly balanced palate, full of citrus and floral flavours supported by minerality, splendid length of flavour before a crisp, clean finish. Enjoy this captivating style alongside moreton bay bugs or WA marron, dressed in wine and mornay sauce.

Sourced from choice vineyards, Breathing Space puts a focus on capturing the intense Margaret River regionality while retaining eloquence of fruit character. The highly favourable mesoclimes are further tempered by prevailing winds from the Indian Ocean which deliver excellent ripening conditions throughout the growing season. Hand picked throughout the cool of early morning, whole bunches are treated to a gentle press for extraction of the purest free run juices. The inclusion of light solids in the ferments contributes texture, aromaticness and complexity. After several months ageing on yeast lees, components are assembled and bottled unfined.
 
Brilliant pale straw with a light green hue. Ripe aromas of lychee and pear, paw paw and apple gala, mango and tropical fruits. Time spent on yeast lees has added white bread notes, barrel ferments in large format French oak has infused luxurious complexities. A richly flavoured palate brimming with lychee and pear, ripe apples and stonefruit, which continue on to a long, dry and refreshing finish.

The well protected, south facing slope of the central Wilyabrup vineyard provides a cool pocket within an otherwise warmer location. These more temperate mesoclimes are further balanced by cooling breezes from the Indian Ocean, which deliver excellent ripening conditions throughout the growing season. Breathing Space wines are styled for fun, designed to be easy to drink and allow one to escape the chaos of the big city. Minimal winemaking influence allows the fruit to be the defining factor in the finished wine.
 
Light pale straw hue. Good varietal characteristics show through on the nose, tropical and stonefruit aromas. A zesty upfront palate of citrus and ripe orchard characters is followed by green vegetable and herbaceousness, over a backdrop of complex muted nettle and green pea notes. Clean, beautifully balanced and lingering, Breathing Space makes for easy and enjoyable drinking.

Brookland Valley have consistently led the way with innovation, quality and style. Intensely flavoured Chardonnay grapes are grown to a sunny ridge on an ancient landform, through which a small brook famously known as Wilyabrup, flows to the nearby sea. The spectacular Brookland Valley property, set against a gently undulating landscape, offers protection from the wind and warmth to the vines, a perfect viticultural microclimate. The estate was founded in the 1980s when Malcolm and Quentin Jones acquired the ancient dairy property with the intention of making cheese. Today, vineyard management built on principles of sustainability of viticulture that's reliant on a respect for the environment and love of the land, rewards Brookland Valley with wines of quality and elegance. Grapes are hand picked and whole bunch pressed into French oak barriques, for a wild, indigenous yeast fermentation, full malolactic and several months battonage lees stirring.
 
Pale straw hue. White peach and walnut bouquet, complexed by apples and honey dew over subtle oak. A wine of controlled power and finesse, nectarine and white peach flavours, ginger and lemon citrus are completed by hazelnut and brioche notes derived from barrel ferments. A wonderfully creamy texture before a lingering finish with excellent length of flavour.

Brookland Valley retain access to the finest fruit, grown to the best sites in five of Margaret River's six sub regions, providing an impressive palette of flavours from which to craft wine. Exclusively hand picked Chardonnay from the estate vineyard at Wilyabrup, fruit is whole bunch pressed to retain freshness and fineness, transferred to an extravagantly high proportion of new French oak barriques for vinification through wild indigenous yeasts, infusing wonderful texture and complexity. Upon completion, batches are treated to full malolactic on gross lees solids for nine months, occasionally lees stirred battonage for lovely creamy textures and extended length to the palate.
 
Pale straw green hues. Intense aromatics of pink grapefruit, nectarine and stone fruit, cashews and spice. The palate is richly flavoured, flintyness, lemon zest, nougat and grilled nuts, a full Chardonnay of power and concentration. Barrel fermentation has lent creaminess and palate weight to a wine that finishes with extraordinary length of flavour.

Brookland Valley's vineyards are closely planted as the lie of land flows down the valley, from sun drenched north facing slopes to gentle flats along the banks of the Willyabrup Brook. After adopting a technology driven approach to viticulture, the quality of all Brookland Valley's white wines have improved dramatically. Parcels Semillon and Sauvignon Blanc harvested from choice sites, are cold pressed to capture the intensity and retain freshness. Juices are vinified in controlled fermenters to preserve the crisp and crunchy characters of the vineyard. After a spell of extended lees contact to infuse depth and complexity, components are assembled into the definitively classic and dry, Margaret River white.
 
Pale straw hue with tinges of green. Fresh and punchy nose, light herbaceous characters are complemented by notes of freshly cut hay, braced with citrus blossom. A soft and vibrant mouthfeel, juicy acidity, crisp and lush tropical fruit flavours dominate, passionfruits and a squeeze of fresh lime. Herbaceousness finishes back of the palate, a fresh and fine acidity adds persistence and depth.
Cape Mentelle Wallcliffe Sauvignon Semillon

Wallcliffe is a tiny production wine from a unique parcel of soil in the middle of the Margaret River region. The wine represents the vagaries of climate, individuality of site, the complimentary characters of the two varieties and a restrained yet evocative winemaking approach. Wallcliffe is crafted to evolve and to develop different characters and complexity. Treat Wallcliffe to scallops or sticky belly of pork.

Cape Mentelle enjoy access to some of the Margaret River's most elite vineyard sites, and have long been one of the region's most ardent formulators of classy white wines. The Wallcliffe Vineyard was established on a ridge of free draining lateritic gravel between 1970 and 1972. Sauvignon Blanc and Semillon were grafted onto shiraz vines in the early 1980s and today produce the distinctive fruit. Wallcliffe is a wine that creates itself in the vineyard. Plainly fermenting the different plots individually in French oak barriques helps to build and define individual characters. A selection of the best barrels are then blended to make a wine which best reflects the characters of the season and the vineyard.
 
Aromas of lemongrass, citrus blossom, lychee, coriander and wet slate. The fresh citrus fruit characters of the nose transfer seamlessly to the palate, with some white fleshed nectarine and subtle smoke characters also evident. The palate is tight and focused complementing the creamy texture derived from wild yeast barrel fermentation and leads to long bright and expressive finish.
