Pinot Grigio is harvested from late February to early March, throughout the chill of early morning. Grapes are pressed and dejuiced into fermentation vessels, inoculated to wild indigenous yeasts for eighteen days of vinification on gross solids. Upon completion, components are held on yeast lees and stirred every few days for six weeks before bottling.
 
Pale straw with a salmon hue. Pear, white flowers, flint, apple and mineral aromas, a tickle of perfumed strudel spice. Crunchy white pear and fragrant straw notes, rich mid palate with a touch of honey suckle and a crisp mineral finish. Match with grilled scallops, schnapper and garlic aioli salad.

The higher altitudes of Adelaide and balmy aspects of Bellarine are the pre-eminent Australian microclimes for growing Pinot Grigio. Components from good vineyards have been assembled around a core of estate grown Scotchmans Hill fruit to achieve the consummate Italianate varietal wine in refreshing, new world styling. An intense expression of pear, guava and citrus, fleshy with a mineral backbone. It displays zesty pear and citrus characters, offers great intensity and varietal complexity before lingering on a clean flavoursome finish.

Scotchmans Hill grows suitable grape varieties in appropriate mesoclimates around the more salubrious viticultural districts of Victoria. The estate's wineworks at Geelong boasts an extensive temperature controlled 8000 cubic metre barrel storage room with 900 one to three year old French barriques, Alliers and Nevers, Troncais and Vosges. Great emphasis is placed on the delicate vinification and elevage processes required for complex and balanced wines. Pinot Grigio is sourced from specialised vineyards, trained to yield harvests of exceptional quality Pinot Grigio. The majority of parcels are treated to a closed tank ferment, the balance is vinified in French oak barriques.
 
Mid straw colour. Lifted nose of nashi pear and honeysuckle, leading to a bath salt perfume and background of ripe fruits. Full and ripe palate with nashi and stonefruits, a mid palate richness with bath salts and honey characters at the finish. The wine is supported by firm acid, a mineral backbone, and has a long, lingering aftertaste.

Vinsanto is also known as Vino Santo or sacred wine, so named for it's use by clergy and congregation during the holy mass. It has been vinified in Tuscany since at least medieval times and Antinori have been making it for centuries. A pious cepage of Trebbiano and Malvasia sourced exclusively off vines grown to three Antinori estates in Chianti Classico.

Grapes are selected and picked at various times throughout the harvest. Those picked during the earlier parts of vintage show higher acidity, while those picked later attain higher levels of ripeness, achieving a balance between natural fruit sugar content and acidity. Grapes are spread by hand on special straw mats in the appassitoio, a large, airy loft at theTignanello wineworks, where they are left to dry until the end of December. Fruit is pressed and the must transferred to traditional small, 50-200 litres oak casks known as caratelli, for a long, slow vinification which is arrested when the wine reaches 16. Vinsanto is aged in the caratelli three years before a very light filtration.
 
Bright yellow colour with deep amber hues. Gently vinous bouquet with honey and dried fruits notes. An attractive set of leather, caramel, roasted nuts, spices and orange peel. Dense and round on the palate with fine structure with a delicate and long finish. Aftertaste caracterized by pleasant dried fruits and toasty notes.

Abruzzo
Crecchio is an ancient commune on the Abruzzo coast, dominated by the battlements of a medieval castle, its main activities are tourism and good wine. Trebbiano is the white grape of choice and there is no higher provenance, known throughout the world of wine as Trebbiano d'Abruzzo. Hand picked and briskly vinified, it makes a clean, structured style that's easy to appreciate. Fruity and pleasant, it finds itself very welcome around the luncheon table, its dry and food friendly palate is a bliss alongside shellfish, risottos and ripe, pungent cheese.

Eighty years of crafting nothing but the finest wine, vinified from harvests of the best fruit, to arrive at a place of such prominence and prestige, has been a long journey. Vines are managed by growers who have been yielding the finest harvests for many generations, endeavouring with every vintage to deliver the quality that's so essential for the construct of approachable Tuscan white wines. Grapes are destemmed and gently crushed. The musts are cooled to 10C encouraging a natural clarification. Batches are transferred to fermenters for vinification at 18C. Upon completion the parcels are held at 10C to retain freshness and vibrant aromatic characters before assembling into the finished wine and bottling.
 
Straw yellow with green highlights. Intense aromas of orange blossoms and banana, hints of candied fruit and rose. A well balanced palate, smooth and pleasant, full bodied and refreshing with bright fruit flavours before a long aromatic finish. Match Bianco Toscana with calamri or snap fried sardines, Al fresco dishes and all northern regional Italian faire.
YarraLoch Arneis

The Italians named the variety Arneis because it means little rascal, a difficult grape to manage in the vineyard and rarely cultivated in great amounts. Mostly it is used with Nebbiolo in the same way as Viognier is added to Shiraz, to soften the palate, to enhance and to pefume. Within Australia, usually grown to the cooler vineyards of Victoria, it has finally found it's niche as a pure varietal wine. YarraLoch make a tight and elegant style, offering restrained ripe lemon and herb notes up front, light and fresh on the palate, mineral and crisp.

It can successfully be argued that nobody knows fine wine like investment bankers, YarraLoch's Stephen Wood is a case in point. He intuitively understood that unique microclimes are suited to different wine grapes and established his operations astride three unique sub regions of the Yarra Valley. Unashamedly inspired by the great wines of Europe, the singular focus of YarraLoch is to create world class Yarra Valley wines which are distinguished by their elegance, balance and complexity. Arneis is vinified through a mix of wild indigenous barrel ferments and inoculated tank components, a portion remains on oak for six months to balance the naturally high acid levels and promote palate richness.
 
Light straw hue. Tight and elegant, showing restrained ripe lemon and hints of herb. Traditionally fresh, bright and fruity with characters of pear, apple and almond. The palate is light, fresh, crisp and minerally. It has flavours of lemon, green apple and herbs with crisp steely acid and a dry finish. A sophisticated alternative to simpler, more popular table whites, ideal with oysters, fresh seafood, olives and antipasto.
