From the Chelmsford and Seward family vineyards at the northern end of Margaret River. Fermoy Estate is situated on Metricup Road at the very heart of Willyabrup, one of the new world's great viticultural precincts. Despite a history of little more than a decade, Fermoy's wines have won an acclaim which belies the estate's modernity. An intensely aromatic and profoundly structured Shiraz wine with captivating berry fruit essences and pliant, peppery tannins, to accompany the finest faire and most succulent meats.

Fermoy takes its name from the eponymous town in County Cork, which was founded by a forebear of the original owners. Vines are trained to vertical shoot position trellis system with extensive canopy management techniques, employed throughout the growing season, allowing harvest of the best possible fruit in the cool of the night to maintain maximum varietal expression. On arrival to the winery the fruit is crushed into ten tonnes static fermenters. Upon completion, batches are pressed to a combination of French and American oak barriques and hogsheads for a year or more before fining and filtration.
 
Crimson red. Aromas of white pepper and spice over a presence of cherry ripe fruit. The palate offers great textural mouthfeel with aniseed and blackberry flavours supported by well integrated, fine chalky tannins. A lingering aftertaste as the afterglow continues, the complex finish conjures up hints of freshly pitted berries, aromatic leaf and dusty, cocoa spice.

The length of Margaret River's coastline hosts a tapestry of terroirs, each expressing a subtle variation on the profoundly aromatic and intense regional style. Flametree have assembled a collation of fruit from five choice vineyards in the premier viticultural precincts of Wallcliffe, Wilyabrup and Yallingup. A well proportioned wine with seamless integration that's greater than the sum of parts, Wallcliffe grapes contribute a measure of pepper and spice complexity, fruit from vineyards further to the north add rich dark berry characters and a concentration of flavour.

Shiraz is harvested off vines planted to propitious gravel soils on select sites with a history of yielding moderate crops of the most intensely flavoured fruit. Grapes are treated to several days of day cold soak before inoculation to specialized strains of Rhone yeast, given plenty of air throughout the vinification in a mix of open and static fermenters, caps are plunged and/or pumped over twice daily. Some parcels are whole bunch fermented to encourage partial carbonic and introduce vibrant, spicy strawberry complexity. Batches are inoculated for malolactic, pressed off and transferred to a selection of seasoned French and American oak barrels for several months maturation before the final assemblage.
 
Bright, deep scarlet colour. Lifted blueberry and plums, liquorice and spice combine to create a soft fruit driven Shiraz perfume. Soft extraction techniques and open ferments have achieved a wine of ripe fruit flavours and fine tannin structure. The palate shows plenty of sweet dark fruits and spicy oak flavours. Ageing in older barrels has kept oak in the back ground and ensured that fruit flavours are star of the show.

Forest Hill work hard at extracting the best possible Shiraz out of Block 9. Better soil maintenance with no herbicides and more composted material, while leaf plucking is applied earlier in the season and more diligently. The maturity of the vines, management of the property and evolution in the quality of fruit all impact on the excellence of the finished wine. Its long and fine, chewy structure is dominated by bold varietal fruit characters, while the background gamey nuances intensify the palate, along with subtle earthiness and sweet spice undertones.

The raw Shiraz grapes at vintage feature ripe, fleshy, berry flavours with firm, fine, elegant tannin. Vine health is fastidiously maintained and canopy densities are always optimal as a result of shoot thinning to ensure balanced growth. Grapes are cold soaked in eight-tonne fermenters to extract and retain desirable varietal flavours and aromas. The juices are vinified at around 45C to prevent over extraction of tannins locked in the skins. Macerations are not extended for the same reason. The wine is transferred to barrel for malolactic, softening the palate and completing the integration. Matured eighteen months in a combination of new and seasoned Francois Freres and Sirugue French oak bariques.
 
Dark red, purple hues. Intense aromas of blueberry and satsuma plum, subtle anise and earthy undertones. Intense flavours of red and black berries over a length of fine silky tannins, perfectly integrated within a long and generous mouthfeel, its palate sweetness and cherry ripe oak will continue to soften and evolve. A suitable match to the finest red meat gourmandise.
Forest Hill Estate Shiraz

Established 1965, Forest Hill is the oldest cool climate vineyard in Western Australia and the first ever commercial planting in all of Great Southern. This solidly structured Shiraz demonstrates the virtues of a region that's endowed with an outstanding potential to craft the most intensely structured Rhone style wines. A medium bodied, fleshy style, Forest Hill displays white pepper and subtle spice on the palate enhanced by delicate toasty vanilla and perfumed Burgundian oak flavours, fine chewy tannins and a full firm finish.

Forest Hill can lay claim to producing some of Western Australia's finest Shiraz grapes. The winemaking facility itself is closely managed to vinify the exceptional fruit into a solidly structured, vigorous wine. Grapes are destemmed and crushed into open fermenters for a cold soak, inoculation and two or three pumpovers daily throughout the ferments. Vinifications are capped at 25C to prevent over extraction of tannins locked in the skins. A short spell of maceration is followed by transfer to barrel for malolactic where the wine integrates and softens. Matured sixteen months in a combination of new and seasoned, Francois Freres and Sirugue French oak barriques.

Medium bodied palate with plum and blackberry flavours following through with subtle hints of earthiness and white pepper spice. Isolation Ridge are part of a larger wool growing enterprise. The decision to diversify the farm and plant vines came after a tour of French vineyards and two vintages worked at Bordeaux's Chateau Senejac. The Isolation Ridge vineyard is managed to organic viticultural practices which is reflected in the depth and concentration and palate weight of the finished wine. An elegant, tightly knit Shiraz wine that unfolds to reveal opulent flavours and savoury stylishness, the fruit of meticulous care in the vineyard and winery.

Shiraz is sourced from mature vines planted to the Isolation Ridge vineyard. The property sits on an undulating north and east facing slope on ancient duplex soils of gravel and loam over clay sub soil. Vines are trained to Scott Henry trellis, enhancing sunlight penetration of the canopy for optimal ripening. Fruit is vinified as long and as slow as possible, at temperatures not exceeding 30C in open pot fermentation tanks, allowing the cap to be worked by plunging and gentle pump overs. An extended maceration is employed for optimal extractions. The finished wine is aged in 500 litre French oak puncheons, contributing textural complexity without compromising the opulent natural fruit flavours.

Mostly Shiraz with a cogent proportion of the torrid Tempranillo, bunches are de stemmed and separately vinified in open vessels, treated to extensive pumpovers and cap management for optimal extractions, pressed off skins and sent to a mix of seasoned and new French oak barriques for fifteen months before assembling into the finished wine. Violets and milled spice notes of Shiraz, deep plum flavours and a peppery edge to the fleshy fruit sweet palate, Tempranillo brings savouryness and an animate tannin structure.

Frankland River yields remarkable vintages of Shiraz, Houghton were at the very genesis of the region for viticulture, they retain the finest vineyards. A collation of the best parcels from choice sites have been assembled by the Crofters team, treated to vinification in traditional open top vessels, gently pressed to a selection of French oak for completion of ferments and a year of age. Its profound structure and piquantly spiced black currant fruit richness, makes a perfect match with game recipes, well seasoned lamb or freshly ground curry recipes.
