Catching Thieves make wines with so much style, you'll do just about anything to get your hands on them! The highly skilled McWilliams team have matched the nobility of Cabernet Sauvignon with the affability of Merlot, to achieve a succulent Margaret River wine of substantial style and flair. Catching Thieves is built to exude alluring dark berry plum characters, to be in fine balance and ultimately deliver a soft and flavourful, aromatic juicyness to the palate.

$1999each $239DOZEN EACH DOZEN Cabernet Sauvignon and Merlot are picked throughout the cool of night to retain freshness. Grapes are gently destemmed, cold soaked and vinified in static fermenters at 22C to 26C over the course of a week, pumped over thrice daily. Upon completion, batches are held on skins for several days to soften the tannins, batches are pressed and transferred to a combination of finely coopered oak barrels for a term of age to enhance the complexity, while being treated to a series of rackings over the course of a year. Catching Thieves is ultimately assembled with a view to creating a seamless Cabernet Merlot wine whilst retaining the ebullient Margaret River bramble berry opulence.

Brick crimson red colour. Leafy aromatics, redcurrants and wild black berry, spice over supple chocolate oak. A medium weight palate featuring delectable flavours of currant and mulberry, plums and lovely cassis notes, juicy acidity, persistence and length. A touch of cinnamon complements the fruit, as it rests upon a soft but supportive tannin structure.

Clairault are all about taking care of the little things to build a much greater wine, vineyards are all managed like a wildlife sanctuary and the vinifcations are treated as gently as one can. Berries must be only barely split, to iintroduce just the right amount of tannin while retaining a press of the purest juices. The most exquisite parcels Cabernet Sauvignon, a touch of Cabernet Franc for interest and finesse, are delicately fermented before eighteen months of age in an extravagantly high proportion of new French oak, the fruit of Margaret River at its finest, graceful and most eloquent.

Deep crimson black. Aromas of cherry blossom, mulberries and aniseed, cedar and cigar box, blueberries and cassis. Highly focused, west coast Cabernet of amazing precision and drive, fine grain, mouth coating tannins in support of the dark fruit core, held in perfect balance by genteel acidity and perfectly framed oak, a luscious finish with yet more cherries and simmering French vanilla pudding oak.

Clairault Estate is situated approximately ten kilometres south of Yallingup, within the superior Wilyabrup dress circle of Margaret River. The property contains four dams, forty hectares of grazing land and eighty of remnant bush. The vineyard itself has been cultivated with a commitment to local flora and fauna, it yields harvests of small but intensely flavoured grapes. Merlot and Petit Verdot are assembled around a solid backbone of Cabernet Sauvignon, a stately wine of penetrating bramble fruit characters and refined, tensile tannins.

$2299each $275DOZEN EACH DOZEN Bunches of Cabernet Sauvignon grapes are de-stemmed and each berry is split, to ensure minimal degradation and encourage fresh, clean flavours. Merlot is crushed to fully expose the delicate flesh, for a more refined and elegant textural development. A fortnight of cool, gentle vinification on skins, allows for slower, more controlled extractions of tannin and flavour. Ferments are pumped over thrice daily over the course of a fortnight and judiciously backed off as the juices evolve into wine. Upon completion, batches are gently pressed into a selection of French oak barriques for ten months maturation, followed by clarification and the final assemblage.

Bright garnet colour. A compelling bouquet of vibrant cherry skin and dark berry characters , mintiness, dried herb and vanilla. A bold palate driven by blackberry and mocha oak, fleshy plum sweetness followed by a herbal savoury length. The tannins are fine grained, almost silky in texture, in fine balance before a dark chocolate allspice finish. Match with lamb, steak or eggplant, a superb accompaniement to rare, gamey duck.

Margaret River makes mighty Cabernet but Clairault make a priority of gentle winemaking. Parcels are cannily crushed so that each berry is only, barely just split, affording the ferments minimal berry degradation, encouraging the retention of fresh, clean varietal Cabernet characters in the finished wine. Vinified on skins for optimal extraction and treated to a timely ten months in nothing but the finest French oak, a vivid articulation of Margaret River Cabernet, brimming with dark blue currants and cassis, its refined minerality resolving on a refreshing glace cherry finish.

From the dry grown, organically farmed Calgardup vineyard, just two kilometres inland from Redgate Beach. An essential part of the making requires a fastidious sorting of fruit, every grape has to pass the test, before being added to a large French oak vat for a course of natural indigenous yeast ferments. Followed by a term in seasoned barriques to retain the primacy of fruit. Designed to express the pristine and vibrant coastal climes, Corymbia actually tastes of the Cabernet Sauvignon grape, the dirt and the sea without pretention, Margaret River at its most eloquent and most vibrant.

Aged ten months in a single French oak vat, this west coast blend captures and expresses the magnificence of Swan River Valley. A sweet and savoury nose of satsuma plums, rosewater and black olives, a mere sprinkle of aniseed, its fresh and lively palate of pomegranates, cocao and maraschino fruits, supported by the rakish elegance of Tempranillo’s coal dust tannin structure.
