Capel Vale Debut Cabernet Merlot

West coast Cabernet Merlot has evolved into a discernible regional style and established an international reputation, a new genre of wine that's unique and very special indeed. Debut is drawn from harvests of the finest fruit, grown to good vineyards across the eminent winegrowing precincts of Western Australia. The aim is to fashion a profoundly fruit driven wine, that's supported by supple tannins and a supple veneer of oak, to match tomato meat pastas, gourmandise sausage or juicy cut of lamb.

Grapes are destemmed but not crushed for a maximum whole berry inclusion. The musts are chilled and cold soaked for several days, followed by traditional fermentation. Musts are pressed, settled and racked off lees for completion of malolactic and a year's maturation in a selection of older oak barrels.
 
Rich red hues. The Classic Cab Merlot nose of mulberries and cassis, black fruits, capsicum and sweetly aromatic leaf. A supply structured palate exhibiting sweet fruit flavours, currants blackberry and plums. Barrel ferments infuse the wine with a delicious mouthful of chocolate/ cedar notes. Will complement many cuisine, the wine of choice to accompany roast leg of lamb or penne with chunky tomato and pork salsiccia.

Eighty acres of capel Vale vineyards are named after the original Capel Shire subdivisions, the Stirling district being one of the earliest areas surveyed in the entire state. Merlot grapes are partially hand picked off a split canopy trellising system and de-stemmed without any crushing for maximum whole berry inclusion. The musts are chilled and cold soaked for up to five days followed by a traditional vinification. Batches are pressed and settled, racked off gross lees for malolactic and maturation in seasoned French oak barriques to soften the tannins while building structure.
 
Plum / cherry coloured. Bouquets of kirsch and plum, blackcurrants, bramble and spice, luscious dark blueberry fruits are complemented by mint, leather notes and autumn leaves. The palate is rich and generous whilst maintaining elegance and finesse, sweet plum and cherry flavours, tomatoes and mint, complemented by subtle spice, chocolates and tobacco, over a length of fine tannins, leading to a dry, satisfying finish.

Capel Vale bears the fruit of more than thirty years research, trials and improvements, on the land and amongst the vines. Fully Cabernet Sauvignon and very, very Margaret River, enhanced by a regimen of new and old world vinification techniques, a full bodied red by one of the region's most accomplished teams. The choicest parcels, picked off the most superior blocks of the prestigious Scholar Vineyard at Cowaramup, elegant and statuesque, framed by stately tannins and refined French oak.

While relatively cool, the greater Margaret River region experiences an earlier vintage and can support red grape varieties which would not ripen so well elsewhere. The cooling influence of the Indian Ocean permits complex flavours to develop while warm days ripen the tannins. Picked at optimum ripeness, all vines are closely husbanded, harvest is carried out to healthy levels of baume. Fruit is destemmed but not crushed and each batch is handled separately. Treated to a cold maceratation and moderate ferment, yeasts are introduced to increase texture and aromatics. Following vinification and extended maceration, the wine is matured in a selection seasoned and new French oak barriques.
 
Vibrant red with purple hues. Mulberry, cassis and capsicum nose, multi black fruit characters, fragrant with blueberry and cassis. Mulberries, cassis and plum flavoured palate, supported by chocolate oak notes and exquisite licorice tannins. Delicious to drink young for its primary fruit characters, to accompany beef stroganoff, dukkah crusted lamb, mature cheddar or romano porcini tortellini.

Capel Vale played an important role in the establishment of West Australian viticulture and the recognition of Mount Barker as a world class winegrowing region. The ocean breezes here are the cleanest and most pristine to be found anywhere. Cool and windy with overcast skies, planted to propitious soils overlooking the Porongurup Mount Ranges, a profound microclime for harvests of the most sensational Shiraz grapes. A bloom of violet and bramble bouquets before a seamless, plushly lined palate, seasoned by a sprinkle of aromatic pepper notes, supported by a carpet of tightly woven tannins.

The winemaking philosophy at Capel Vale is to make intensely fruit driven and complex, powerful yet elegant wines, from fruit grown specifically to the mesoclime that's most favourable. Every Capel Vale vineyard was established from day one with the grape varieties most appropriate for the climate and terroir. Shiraz grapes are destemmed but not crushed for a maximum inclusion of whole berries. Musts are chilled and cold soaked for several days. Choice yeasts are added to initiate a traditional vinification in controlled fermenters. Upon completion, the batches are pressed, settled and racked off lees for a course of malolactic and maturation in a selection of the vey finest oak.

Crafted from parcels of hand picked Tempranillo grapes, grown to the exquisite Mazza Vineyard at Donneybrook, an hour's drive northeast of Margaret River. The greater Geographe region has been an essential component in west coast wines for many vintages, the quality of harvests rival her salubrious neighbours. An eloquent articulation of a splendid terroir and the fruit of closely cossetted vines, its classic old world savouriness, gardeniere complexity and light fresh tannins make Empirica the first choice alongside crackling pork or supple lamb recipes.

Castelli have chosen to fashion their harvest in a manner which highlights the bright berry fruit aromas and showcases the lovely savoury tannins which define Tempranillo. Parcels of hand picked fruit are crushed into small open top fermenters for several days of cold soak maceration. Batches are hand plunged twice daily for gentle extraction of colour, flavour and tannin. Upon completion, ferments are transferred to a selection of two and three year old French oak barriques for fifteen months maturation, integrating the wine while taming the tannins. A minimal influence of oak is essential to the style, seasoned oak achieves balance and structure while preserving the elegance of fruit.

It's no puzzling coincidence that the three noble grapes of Cotes du Rhône have endured as one of the wine world's most engaging, long lived accords. The plump, juicy sweetness of Grenache provides an amenable foil to the rustic tannins and pastoral earthiness of Mourvedre. Add a dash of peppery plum Shiraz and you have achieved a harmonious construct which drinks beautifully while fresh, beguiling and evocative after a term of bottle age.

Harvests of bush vine Grenache and Mourvedre are painstakingly picked by hand at optimal ripeness. Shiraz is vintaged slightly earlier in the season to capture and retain the fragrant spice of youthful berries. Batches are vinified in small open fermenters, Grenache and Shiraz are included with a measure of whole bunches to infuse aromatic lift. Ferments are hand plunged twice daily and pressed off quickly upon completion, transferred to a selection of well seasoned large format oak vats for an extended term of eighteen months maturation.

Fruit is cold soaked for ten days of maceration before being inoculated to Clos and F15 yeasts for a warm vinification at temperatures of 25C to 30C. Ferments are pumped over twice daily, and treated to several rack and returns for gentle tannin extraction and clarification. After three to four weeks of ferments, aimed at achieving optimal tannin development and perfect balance, components are filled to a high proportion of new, predominately Bossuet and D’Aquitaine French oak barriques for a luxurious fifteen months maturation.
 
Deep garnet. Sweet blackberries and cassis, liquorice and dark chocolate nose. Medium to full bodied palate supported by fine layered tannins, a solid core of fruit that's perfectly against bright berry acids and affable vanillan oak. Malbec adds muscularity and flesh, rounding out the tannin backbone. Powerfully structured, with the weight of fruit to match bold beef recipes or rare game meats.

The Castelli brothers are highly accomplished international engineers with a no expense spared approach to making great wine. Choice harvests from superlative vineyards at Frankland River and Mount Barker are assembled for an outstanding construct of Shiraz. Frankland River contributes rich mulberry flavours, Mt Barker adds complexity and spiced black pepper characters. An attractive earthy richness is at the core of the fine boned, textural palate, the oak is seamlessly integrated with the layers of fruit, all supported by fine, savoury tannins.

Choice harvests of Shiraz are crushed and held for several days of cold soak maceration, the musts are inoculated to yeasts RC212 and Clos for a warmer vinification at temperatures between 25C and 30C. Ferments are pumped over twice daily, while treated to a course of rack returns and a regimen of gentle extractions. After three weeks vinification on skins, timed to retain maximum intensity of fruit while brewing the softest tannins, batches are filled to a high proportion of new French oak barriques and puncheons, predominately Sirugue, Saury and Bossuet, for an extravagant term of extended maturation.
