Bellarmine is a fully endowed, auspicuously high quality vineyard that yields restrained, savoury wines full of good flavour and fine balance. The property is an elevated site with gravelly laterite soils, established by Dr Willi Schumacher and his wife Gudrun. The couple are passionate about great wine and searched the world for a great site to plant vines before settling on the sensational property which is Bellarmine Vineyard.

$2599each $311DOZEN EACH DOZEN Harvested at optimum flavour levels when the tannins are ripe and the seeds are brown, determined by the winemaker taking regular samples in the vineyard. Fruit is managed carefully to ensure a maximum yield of five tonnes per hectare, to achieve even ripeness and maximum quality potential. Crushed and destemmed gently to allow some whole berries through into the ferment, the must is inoculated with a neutral yeast. Once the cap of skins has risen, the juice is pumped over the skins twice daily so that colour and flavour is extracted from the skins as the ferment cools. Once complete, the wine is racked and seeded with malolactic bacteria. Matured fourteen months in extravagantly new French oak barriques.

Deep purple red. Rich ripe aromas of mulberry and chocolate with spicy oak and plum fruit characters. Rich and savoury plum and berry fruit on the palate are supported by fine tannins. $1999each $239DOZEN EACH DOZEN The Evans & Tate team have called upon a harvest of Cabernet Sauvignon from a special block of vine at Wilyabrup. Grapes are all hand picked, crushed and destemmed for several days of cold soak. Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation.

Deep garnet/ purple colour. Lovely bright red strawberry fruit followed by a hint of vanilla showing through on the nose, a balance of bramble/cassis and cherry/plum over supple influence of oak that seems just right. Juicy blood plum and pomegranate flavours, supported by the solid Cabernet structure. Medium bodied, the smooth yet rich, lingering finish is complimented by a length of stylish, firm and judicious tannins.

Harvets from the north are invariably sweeter and fuller in flavour, particularly the Merlot and Cabernet Sauvignon. Grapes are all hand picked and sorted into open top fermenters for vinification through wild indigenous yeast over the course of ten days. Batches are gently pressed off and basket pressed for completion of malolactic, followed by a year's maturation in a selection of new and seasoned French oak.

Deep plum colour. Ripe and intense cassis and spice aromas over hints of tobacco leaf and leather, a light leafiness balanced out by fine French oak. Classic Margaret River characters of cassis, ripe plum and dried fruit flavours are complemented by hints of dark chocolate. Structure, fine tannins and oak spice provide structure, complexity and length to the palate.

It was in 1881 that a fine gentleman by the name of Daniel McGregor paid 62 pounds and 2 shillings for a Crown Grant of a hundred acres. The yearly rent for Sussex Location 165 on the fertile banks of Willyabrup Brook was a single peppercorn paid each year on the 25th March, or soon thereafter as demanded. In the 1980s it was replanted to vines and today is one of the Margaret River's most inestimable sites for first growth Margaret River Cabernet Sauvignon. A long lived wine of luxury and complexity, drinking superbly upon release.

$6499each $779DOZEN EACH DOZEN The estate operates fifty two hectares of vineyard at the heart of Margaret River, much of it is planted to Cabernet. Brookland Valley has been recognised for producing wines of exceptional quality, claiming numerous trophies and medals on the wine show circuit. Cabernet Sauvignon demonstrates the absolute commitment and focus of the viticultural and winemaking teams to achieve excellence. Grapes are harvested at optimal maturity, de-stemmed and put to small open fermenters. After daily plunging and an extended maceration, the ferment is pressed off to fine French oak for the completion of malolactic, racked several times during the maturation and given a light egg white fine before filtration.

Deep, concentrated red in colour. Displays blackcurrant, mulberry leaf and cassis, plum skin fruit aromas, whilst hints of black olive, mint and savoury oak lead into an enticing and complex bouquet. The varietal flavours envelop the palate, dark fruits and tobacco notes prevail. The cabernet expressions are sustained and lengthy, with soft, top shelf tannins and exemplary acid balance.

Since Margaret River makes Shiraz as good as it gets anywhere in the world, why trifle with nature's finest? Verse 1 is crafted with a minimum of intervention from the best quality fruit. Elegantly structured, an exciting Shiraz exhibting the stylish hallmarks of the region, medium bodied and flavoursome, maintaining true elegance and varietal definition. Expressions of spiced peppery fruit on the nose and palate, notes of berries and plum are enhanced by subtle nuances of cedar and French vanilla oak, the perfect accompaniement to osso bucco and lamb.

Verse 1 are fashioned to express true regionality with elegance and intensity, eminently drinkable upon release. Shiraz is sourced from the most superlative vineyards operated by Margaret River's most experienced growers. After harvesting, bunches are destemmed into static fermenters, inoculated for vinification and routinely worked to extract flavours, colour and tannin, followed by a pressing at dryness. Components are seeded and treated to a malolactic fermentation before being matured for up to a year under a mix of new and prior use French oaks.

Deep red with youthful purple hues. Nicely fragrant spicey black fruits, combined with hints of licorice, black pepper and cloves, all supported by subtle oak aromas. $1749each $209DOZEN EACH DOZEN Parcels of Cabernet and Merlot are collated on the basis of slow, even ripening, clean and expressive, optimal flavour development without disease pressure. Fruit is harvested at optimum ripeness and held for a term of cold maceration. Twelve days of ferment are treated to daily pumpovers and juice aeration, extracting excellent colour and tannin. Batches are pressed off skins for malolactic and a year's maturation in a selection of seasoned and new French oak, to be followed by assemblage into the final wine, with a view to achieving a soft and elegant style of Great Southern Cabernet Merlot.

Dark, rich plum colour, vibrant purple hue. Intense berry fruits, lifted spice and savoury oak. An initial burst of dense, dark ripe berries, subtle plum characters carry through the palate, combining subtle toasted oak, powdery tannins and a long, rich, fruit filled finish.
