Block 1 is a steep gravelly slope of old, dry grown Semillon Sauvignon vines, amongst the first ever planted in Margaret River, yielding a very small crop of the most articulate Semillon and Sauvignon Blanc with a depth of flavour and intensity rarely seen. Only the purest free run juice are treated to a rich course of barrel ferments in seasoned French oak, followed by a term of eight months maturation. Lemony mineral, mesmerizingly complex with underlying toastyness, an amazing palate extension of gooseberries and lychee lingering to a clean ultra dry finish.

The Howling Wolves lair is a large, modern state of the art winery on seventeen picturesque hectares of rich, ochre soils shaded by tall stands of native trees, one of the largest in Western Australia. Semillon and Sauvignon Blanc is sourced from Churchview Estate and Allison Valley Vineyard in the prestigious Willyabrup sub region. Grapes are harvested throughout the cool of night, each parcel at optimal maturity, retaining the natural balance of flavours and acidity. Fruit is immediately processed, juices are clarified and cold settled before a vinification to choice strains of yeast. The wine is filtered and promptly bottled, capturing the fresh primary fruit flavours and aromas.
 
Pale straw in colour with a green tint. Lifted grassy and citrus notes over a tropical fruit salad background. Medium bodied, clean, fresh and lively with crisp grapefruit and peach flavours giving way to a zesty lemon finish. Drinks at its best immediately on release, the perfect accompaniment to grilled fishes and prawn risotto.

Lenton Brae can justifiably claim to be one of Margaret River's leading proponents of the ebullient fusion between Semillon and Sauvignon Blanc, having claimed multi trophies and gold medals for the style at regional, state and national competitions. The site was chosen after a chance conversation with the owner of Moss Wood who mentioned that the soils were uniformly excellent and equal to those of the eminent vineyard nearby. The overriding philosophy at Lenton Brae is to construct wines which rank among the Margaret River's finest.

The Lenton Brae property is planted to the finest soils in Wilyabrup, which is itself celebrated as one of the the most prestigious sub regions of Margaret River. The prevailing dry conditions during the final period of fruit ripening in early autumn allow for low humidity and disease pressures. The gravelly loams over clay base retains moisture and encourages root penetration, providing perfect conditions for the early ripening varietals of Semillon and Sauvignon Blanc. Parcels are vinified to retain freshness and vitality under cool temperatures, facilitating a gradual conversion of sugar into alcohol by selected yeasts, a portion is barrel fermented in new French oak for added richness and complexity.
 
Light green/ yellow straw hue. Beautifully perfumed wine, fresh grasses, myrtle and lychee fragrances, supported by mineral notes, wet pebble and slate. Sauvignon Blanc contributes aromatic elements while Semillon provides weight and depth of flavour. Lenton Brae will soften and develop the honeyed, toasty characters so desirable of bottle age.

In the spirit of the relaxed West Australian lifestyle, MadFish wines are without pretension and without fuss. The team at MadFish believe that good viticultural management grows healthier fruit and makes a better wine, while maintaining a healthier environment. The classic regional blend of white varietal grapes, Semillon and Sauvignon Blanc are treated to a controlled vinification without the interference of any oak to allow the complex fruit characters to dominate. Low fermentation temperatures achieve a maximum retention of fruit flavour and aromatics while ensuring the finished wine is completely dry. Early bottling has also preserved the fresh fruit flavours and vibrant characters of the vineyard.
 
Pale straw hue with tints of green. A wonderfully aromatic nose, bursting with fruity esters. The palate, like the nose, is also complex with many layers of fruit flavours and a clean fine structure. Again the riper fruit characters balance well with the leaner more elegant citrus flavours. The finish is generous and long with a clean acid thrust.
Moss Wood Ribbon Vale Semillon Sauvignon

For a wine that relies on lifted, zesty fruit notes as this one does, the final assembly sits very close to perfect. Ribbon Vale's fruit produces a different style to that grown at neighbouring Moss Wood. Sauvignon Blanc brings major aromaticness to the wine, the Semillon component contributes heightened flavour profiles. Ribbon Vale is vibrant and juicy, pristine and finer than most variants of the blend. Flavour builds in the glass before a finish that is refreshingly crisp with zippy acidity and an aftertaste that's long and fruitful, dry and lingering.

All fruit is hand picked, grapes are destemmed and chilled, pressings are kept separate and cold settled for two days. Juices are racked off lees and warmed to 18âC for inoculation with pure yeast culture. Batches are fermented to dryness, racked and adjusted for acidity and sulphur dioxide. Components are assembled and filled to a selection of 225 litres French oak barriques. After three months of age, the oaking adds palate richness and a measure of exciting minerality which beautifully frames the greener nature of Sauvignon Blanc. All parts are rack and returned into the finished wine at the end of October, bentonite fined for protein stability and sterile filtered before bottled.
 
Light to medium straw hue. Lifted fruit aromas of gooseberry, passionfruit, lychee, lemon sherbet and cheddar cheese - very bright and fresh. A palate of some impact, crisp acidity, juicy lemon, passionfruit and gooseberry flavours, showing full body and very clean finish, sans astringency. Great texture, long flavours, clean and fresh without any phenolics.

Hay Shed Hill was planted way back in the 1970s to the varietal grapes which have put Margaret River on the map, Semillon and Sauvignon Blanc. The mesoclimes which rejuvenate the vines at Hay Shed Hil in Willyabrup are generally excellent with generally favourable temperatures and ample sunshine, simply superb grape growing conditions. Sauvignon Blanc typically displays lovely tropical aromatics, the Semillon grapes are endowed with sweetly scented grassy, fresh fruit characters. Pitchfork is completely unwooded and bottled promptly after vinification. A low temperature, protective regime is adopted throughout the process, preserving the finer fruit characters of the crisp and aromatic varietals.
 
Pale straw/ green hues. Lifted Semillon/ Sauvignon aromas, lemon/ lime, gooseberry and pine, green mango and passionfruit with a distinctive grassy edge. Intensely flavoured, clean and zippy, offering fresh flavours of lemon, passionfruit and pineapple, before a clean linear finish. A match to Chinese scallops, gujons and quick fried fish.
Redgate Sauvignon Blanc Semillon

A fresh and vibrant blend of grapes which has become the signature of stylish Margaret River white wine. Redgate grow six blocks of Sauvignon Blanc and five of Semillon on gravelly loam clays less than three kilometres from the Indian Ocean. Each is nurtured from budburst until harvest to maximise flavour development, the vines are encouraged to yield fruit that's worthy of Margaret River's elder wineries. A vigorous bouquet of lively citrus fruit and freshly cut grass precedes an effusive palate of passionfruit and lime sherbet flavours, all competing for attention.

Sauvignon Blanc and Semillon are harvested block by block throughout the cool of night, as optimal flavour character, sugar levels and acid are achieved. Fruit is crushed and pressed, juices are transferred to tank and chilled below 10C for settling. Each parcel is processed individually and transferred again to leave sediments behind. Juices are warmed to 13C and inoculated with a specially select yeast. Fermentations can last up to a fortnight before chilling and permitting yeast and other grape solids to settle. Parcels are then ajudicated for assemblage following a series of trials to identify those components most compatible for inclusion, filtered and clarified for bottling.

Sandalford Margaret River Classic Dry White

Sandalford is designed to be fully fruit driven, completely Margaret River, refreshingly unoaked, classic and dry. The winemaking story goes back, way back to the 1840s as the second land title in all of Western Australia. In 1972 Sandalford broke out of their Swan Valley environs and established an estate vineyard along Margaret River, today it is one of the oldest and most salubrious. The exclusively free run juices of Semillon and Sauvignon Blanc are treated to a cool ferment on low solids, achieving an articulate expression of the enduring Classic Dry White.

The Sandalford team train their vines to yield Semillon and Sauvignon that's perfectly ripened and disease free, achieving marvelous sugar/ acid profiles. Viticulture is state of the art and only the vagaries of the growing season are left to chance, the quality of fruit from each vintage is second to none. Canopy management is either vertical shoot positioned or modified ballerina. Harvested throughout the cool of night and early morning, fruit is immediately processed, inoculated with choice strains of yeast and treated to a long, slow vinification. Ferments are stopped at the desired level of sweetness prior to the base wines being assembled, unwooded and unoaked, stabilised, filtered and bottled.
 
Pale lime in colour. Lovely, elegant, perfumed bouquet of fresh cape gooseberry and manage tout. A light bodied wine which is just so easy to drink. A real minerality to the palate, flavours seen on the nose translate beautifully to the palate. Acidity is perfectly judged, the wine finishes with a zesty crispness and harmonious balance.
