The Capel Vale team subscribe to a philosophy that working hand in hand with nature is the best way to produce fine wine. The family owned operation manages mature established vinyards around the premier viticultural precincts of Western Australia, striving to produce wines which reflect the distinct climate and soils. Capel Vale hold a long term commitment to interacting with the environment for the production of the highest quality fruit. Harvested to a schedule determined by the development of vibrant varietal characters, Chardonnay is treated to a course of rich barrel ferments, malolactic and a spell of battonage on sedimentery lees, followed by a spell of maturation in a selection of fine oak barriques.
 
Pale yellow hue. Aromas of citrus and grapefruit are complimented by French vanilla oak and rich lees characters. The aromas follow through to a long and complex palate, textural with creamy mouthfeel and exhibiting fine length. An elegant wine which drinks beautifully alongside crispy chicken recipes, delicate white meats or washed rind cheese.

Parcels of Chardonnay and Pinot Noir are all hand picked off superior vines. Fruit is chilled and whole bunch pressed, retaining only the finest free run juices and minimizing phenolics. Components are treated to a variety of vinification techniques for added complexity, structure and richness, malolactic ferments and long term maturation in seasoned French oak barriques. A course of regular, non-oxidative, lees stirring battonage is employed to develop luxurious mouthfeel and texture. An extravagant term of several years repose on yeast lees is followed by the traditional disgorgement, dosage and reseal.

Hand picked parcels of Chardonnay are chilled and whole bunch pressed direct to barrel, the balance is harvested throughout the cool of night to retain vitality. A mix of choice winery cultures and wild indigenous yeasts initiate vinification, batches are fermented to dryness, a component is treated to full malolactic. A couse of regular, nonoxidative lees stirring is employed to infuse palate richnes while developing luxurious mouthfeel and solid structure. A term of maturation, aimed at striking the optimal balance between French oak tannins and expression of fruit, is followed by the assemblage and bottling in December.

The team at Castelli can call on precious yields of the most exceptional Chardonnay, the goal being to construct a new world wine that's very much in the style of Grand Cru Chablis. Essential to the task is a judicious component of early picked fruit, wild yeasts, battonage and fermentation on full solids in a high proportion of new French oak. A big boned Chardonnay of creamy acidity and the most stately structure, its myriad of undulating flavours and profound complexity intertwine and evolve around the solid core of exuberant, savoury fruit.

Two elite vineyards at Denmark provide the quality of Chardonnay requisite for the Il Liris style, superior sites which can deliver the intense oyster mineral character that's so necessary. A canon of select clones including the eminent Mendoza, are closely husbanded to manage leaf cover and crop load, airflow and light penetration without exposure. Grapes are all hand picked at different levels of ripeness over three separate pickings, chilled to 5C and whole bunch pressed directly to a balance of low toast, seasoned and new tight grain French oak barriques for vinification and regular lees stirring for mouthfeel and structure. Bottled late November as oak and fruit come into perfect balance.

For those who like their Chardonnay in the big boned euro style, mesmerisingly layered in complexity and flavour, richly barrel fermented in a high proportion of new French oak, followed by ten months building palate texture and infusing interest as it ages over gross yeast lees. Angelo and Wendy Diletti selected the Castle Rock site in 1981, with a view to creating a range of superlative wines which express the opulence of Albany's magnificent maritime clime. Brimming with stonefruits, meal and brulee, the Chardonnay of choice to accompany white meat recipes, fresh fishes or fowl.

Clairault was the sixth Margaret River estate to plant vines, it remains one of the oldest privately owned operations within the premier Wilyabrup appellation. The pristine, undulating property, situated less than four kilometres inland from Cape Clairault peninsula and 120 meters above sea level, is endowed with bountiful creeks, natural springs and some of the oldest native forests in the southwest. Biological farming is a passion at Clairault, incorporating a mix of organic and conventional farming techniques which place a strong emphasis on soil biology. The achievement is high quality Chardonnay, such low intervention techniques ensure that only the healthiest grapes are grown, achieving optimum flavour for in the final wine. Fruit is picked early morning and pressed, a portion as bunches, oak fermented in a high proportion of French barriques, partial malolactic and nine months maturation, stirred and topped fortnightly before the final assemblage.

Kevin John Cullen was a passionate believer in the quality of Margaret River wines and particularly for the potential to achieve one of the world's great Chardonnay growing regions. He established the International Chardonnay Tasting, now in its third decade, to enable the efforts of Margaret River to be compared alongside the best vintages from around the world. Kevin John anticipated that the lessons learned from these comparisons would inspire his winemaking team to optimise the quality of Chardonnay grapes grown to the Cullen estate vineyards.

Diane Madeline has found her oenological paramour. Kevin John is named after the estate patriarch and shares provenance with the most stately Margaret River Chardonnay. Grapes are picked at ideal physiological ripeness, after achieving healthy profiles of natural sugars. Acid levels in the fruit grown by Cullen are remarkable, with low pH and fine balance, making any additions for adjustment unnecessary. Chardonnay is harvested around the full moon to a cycle in accordance with the best biodynamic practices. Grapes are whole bunch pressed and spontaneously fermented in French oak barriques, two thirds of which are new, followed by partial malolactic and five months maturation.
