Wines are meant to complement life's experiences, to express the quality of good fruit without being overworked by the maker. To this end, Pitchfork is fashioned to an approachable modern styling. Cabernet and Merlot grapes are destemmed and fermented separately in open vessels with extensive pump over cap management to aid colour and flavour extraction, as well as optimize tannin development. The aim is to construct a wine with loads of fruit flavours and background tannin, providing structure without astringency. Components are pressed off skins and matured in a selection of new and seasoned French oak barriques, developing complexity and softening the tannins without dominating the fruit.
 
Youthful red hue, excellent depth of colour. The bouquet speaks of ripe berry fruits and chocolate mints which are the hallmark of Margaret River Cabernet. Good concentration of ripe plum, mocha and licorice with elements of blackberry, violets and cherry, all serving to form an impressive, fruit filled, fleshy middle palate. A soft round mouthfeel with ripe tannins to complete the finish.
Redgate Bin 588 Cabernet Merlot

The Redgate property is one of the southernmost vineyards on Margaret River, situated just three kilometres from the Indian Ocean. The family owned and operated wineworks at Redgate create impressive red wines endowed with the characteristic nose and flavour of Margaret River. Bin 588 was first made in 1988 and has always included harvests of grapes sourced from good local vineyards. This stylish cepage of Merlot with Cabernet Sauvignon is medium bodied with a delicious burst of of ripe dark fruits, plum and blackberry aromas.

Redgate was planted in 1977 by the Ullinger family, it remains family owned and operated to this day. Redgate's vines are grown on a ridge of ancient soils less than three kilometres from the Indian Ocean. This unique combination of soil and maritime clime enable Redgate to nurture fifty acres of vine for the production of true boutique wines. Crafted around a backbone of estate grown fruit, components of Bin 588 are vinified separately to drynesss, followed by transfer to a mix of one and two year old French and American oak barrels for completion of malolactic and a year's maturation. Barrels are treated to rigorous fining trials to achieve the finest balance and determine the final assemblage.
 
Deep ruby colour with purple hues. Black fruits and plum, blueberries and sweet spice dominate the nose, a delicious burst of ripe dark fruits and mulbery seasoned by subtle spice. Blackcurrant, jubes and fruit pastilles drive a palate that's framed by savoury oak and soft velvety tannins. There's plenty of action to Bin 588, a combination of fine texture and fresh bright fruits, worthy of ageing while ultimately fashioned for immediate drinking.

Margaret River is Australia's premier Cabernet appellation and Cabernet Sauvignon is without doubt Margaret River's great vinous endowment. Fine Cabernet should be perfumed yet poised, and meticulous site selection is critical to achieving these qualities. Stella Bella is a mostly Cabernet wine with a third of Merlot, all sourced from several select vineyard sites located centrally around the township of Margaret River and north to Cowaramup, in an endeavour to capture ripe fruit flavours yet retain the distinctive perfume of Margaret River Cabernet.

The key selection criteria are all about soil, the best sites consist of lateritic gravels over a clay loam base. The flagship Isa vineyard, just south of Margaret River provides the backbone of fruit. It's signature perfume is ever present in the wine, year in and year out. All the individual vineyard parcels are vinified separately. Following fermentation on skins and completion of malolactic, Stella Bella is treated to a luxurious selection of French tonnellerie's barriques for extended maturation. The length of time ageing is important for the complete integration of oak, fruit and tannins in the final wine. Bottling occurs in May of the second year, followed by several more months of bottle age.
 
Dark ruby. Young, powerful and deliciously ripe Cabernet aromas of cassis and mint with a touch of mocha and toasted oak spice. A rich, lush palate of abundant fruits over hearty tannins, currants and mulberry, blueberries and cassis, the savouryness of dried herb and and a long lingering finish of smoked meat complexity, cinnamons and clove, all supported by an inseparable length of the finest French oak.

The stylish Margaret River accord of Cabernet and Merlot, with a timely inclusion of the rakish Petit Verdot. The Swings & Roundabouts team purposely leave the fruit to ripen on the vine for the longest time allowed by nature, encouraging the development of fully developed tannins and sugars alongside heightened varietal characters. They then have to fight with the kangaroos over possession of these deeply flavoured grapes. A vigorous red wine to match aged cheddars, stronger cuts of meat or well prepared game.

Swings & Roundabouts is based at Yallingup where it crafts pure Margaret River wines and smart West Australian blends. Widely acknowledged as one of the region's leading winemakers, Mark Lane found his way home in rather a roundabout way. For a while he made cheese in Melbourne and completed apprenticeships in the Yarra Valley with the likes of Tarrawarra and Eyton-on-Yarra before making the trek west to take up position of chief winemaker with Deep Woods and Flying Fish Cove. Parcels of Merlot and Cabernet Sauvignon are harvested at optimum maturity, each parcel is separately handled and fermented, followed by a term of maturation in French oak.
 
Deep purple red with a dark core. Ripe plums with cherry and mocha notes over fine vanillin French oak. Dark fruits with classical Margaret River Cabernet varietal, choc mint characters lifting the nose. The cherry characters carry through to the palate, dark berry fruits are present, Rich and layered palate with generous flavours of plum and spice leading to a fine mouthfilling middle palate exhibiting fine grained tannins to finish.

Vasse Felix are known for their profound and compelling vintages of Cabernet Sauvignon, performing well whatever the vagaries of growing season, by virtue of auspicious soils and propitious clime. The finest Cabernet Sauvignon available to Vasse Felix hails from the northern end of Margaret River, off vines planted to gravel loam soils within eight kilometres of the coast. Individual vineyard sections are fermented as separate parcels, many are left on skins to macerate for up to thirty days. Tannin influence is controlled through traditional oxidative handling, creating a deeply coloured wine with great structure and length. The Cabernet backbone of blackcurrant and herbal nuances with long, dry sinewy tannins is lifted to glorious heights by smaller portions of Merlot and Malbec. The finished wine is aged eighteen months in a selection of new and seasoned, exclusively French oak barriques.
 
Deep red with crimson hue. Rich, concentrated blackcurrant, violets, bay leaf and dried twigs with hints of mocha, menthol and graphite, all perfectly framed by subtle spicy, vanillin French oak. Fruit is all hand picked at the time of mother nature's choosing, when natural sugar/ acid levels are deemed to be perfect, always differing from site to site. Bunches are de stemmed to retain as many whole berries as possible. Parcels are separately vinified in open and upright fermenters over the course of a fortnight at temperatures below 25C, while treated to a course of gentle pumpovers and plunging. Upon completion, some batches are held on skins for a term of optimal extractions. Components are pressed into a high proportion of new French oak barrels for twenty months maturation, periodically rack and returned for clarification before assemblage.
 
Deep ruby, violet hues. Lifted bouquet of black currants and ripe red cherry fruits, dusty oak notes and polished vanilla cedar perfumes. Soft sweet fruits dominate the palate, blood plums and dark cherry, blackberry brambles, dark chocolates and cedar complexity. The viticultural team employ maximum vine management in terms of canopy maintenance, aiming for low bud numbers and small bunches per vine for premium fruit quality, clonal selection is also an area of close attention. Parcels of Merlot and Cabernet are de-stemmed but remain uncrushed, to preserve whole berries, into a mix of open and static fermenters. Gentle hand plunging and pumpovers were employed up to three times a day throughout a fortnight's vinification at temperatures under 25ËšC. Upon completion, batches are pressed off skins into a selection of seasoned and new French and American oak barrels for a year's maturation.
 
Dark crimson red. Lifted bouquet of cassis and mulberries, dusty briar notes, hints of cedar and vanillin from the fine grained oak. An elegant wine of excellent flavour concentration, juicy, ripe fruit, blackberries, dark cherry and mulberry. Silky tannins integrate seamlessly, gently oaked and subtley spiced, the fine, comforting tannins taper to a structured, clean finish.

Frankland River is a region that's well known for the quality of its graceful Cabernet Merlot wines. West Cape Howe have spared no expense in acquiring some of the oldest established Frankland River vineyards. The finest harvests are treated to minimal intervention, for the realization of stately Cabernet Merlot wines. Hannan Hills is pure Frankland River, from estate properties which are closely managed to encourage strong vine development and achieve perfect yields of evenly ripened fruit, endowed with refined tannins and a concentration of flavour.

Fruit is harvested in small batches, as each parcel is separately managed and handled allowing greater control over the final wine. Parcels are settled for a period of cold maceration, maximising colour and flavour extraction. Batches are fermented while being treated to a course of regular plunging and pumpovers as tannin levels are closely monitored. Once the desired level of tannin extraction has been achieved, components are separately pressed off skins and prepared for malolactic. Up to sixteen months maturation in a selection of French oak barrels are followed by assembling into the finished Hannan Hills, a profound expression of the Frankland River Cabernet Merlot.
 
Dark rich plum colur, youthful violet hues. Lifted notes of cassis, plum and raspberries complemented by sweet oak. Intense berry fruits are accompanied by dark chocolate, supported by powdery tannin and seasoned by hints of cigar box oak. Rich, ripe fruit characters contribute great depth of flavour and linger on the finish.
