Fraser Gallop have successfully tamed the assertive tannins of sanguine Margaret River Cabernet with the inherent palate richness of the gentler Merlot. From unirrigated blocks yielding concentrated fruit, treated to the latest Turbo pigeur technologie from France, a lavish process which can pump whole intact grapes without grinding pulp and skins, leading to better homogenisation and extraction, translating into a wine of great vigor. Hand picked fruit is destemmed with minimal crushing to keep the berries whole. Chilled to 8C for cold soaking into closed fermenters, designed with a one-to-one ratio of height and length, just great for colour and flavour extraction. The ferments are pumped over daily using a turbopiguer. On skins for ten days, tasted regularly to monitor tannin, before pressing off skins through an airbag tank press. Pumped to French oak barriques from a number of Bordeaux cooperages for malolactic, barrels are racked twice over ten months maturation and development. Treated to fining trials for essessment of the final balance, Fraser Gallop is bottled unfined after a cross flow filtration.
 
Bright crimson, ruby hues. A nose of red fruits and plum, mulberry and cranberry, floral notes and violet, the trademark Wilyabrup Cabernet dustiness over subtle oak adds complexity. The palate is soft and approachable with juicy plum and pomegranate flavours. Consistent, grainy tannins not unlike the astringency of cranberry juice. Background oak allows the fruit to shine, acidity and alcohol levels are in balance.

Inspired by the great Crus of Bordeaux, the aim is to build complexity within a single vineyard wine, to allow the fruit to shine, as complemented by the finest oak, a Cabernet of profound structure, polish and finesse. The inclusion of small portions Merlot and Malbec, Petit Verdot and Cabernet Franc, are treated to a regimen of cutting edge and old world vinification techniques. Fraser Gallop's superlative Cabernet vines are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavours.

Fruit is hand picked, destemmed with minimal crushing and chilled to 8C for three days cold soak in closed fermenters. The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.
 
Deep crimson colour with rich hues. Fraser Gallop shows a remarkable complex array of aromas of black cherry, dark fruits, bitter chocolate, forest floor earthiness and pomegranate molasses richness. Layers and layers of flavour provide for a seamless palate. Tannins are quite fine and chalky, providing great structure for aging. A wine of richness and elegance.

One of Evans & Tate's most enduring labels, drawing fruit from across all of West Australia's premier winegrowing precincts, Gnangara have consistently delivered opulent, mouth filling red wines which are charged with the definitive west coast style and charm. Cabernet and Merlot grapes from each block of vines are tasted twice weekly to determine the perfect time of harvest. Merlot is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Fruit is gently destemmed into fermenters for a few days of cold soak, infusing aromatics, good colour and tannin structure. Cabernet Sauvignon is picked during the day for immediate vinification. Each parcel is fermented for several days, thoroughly aerated every eight hours along with seed removal. Upon completion, batches are pressed and racked off yeast lees, a choice component is filled to a selection of French oak barrels for a term of maturation, followed by assemblage into the final wine.
 
Dense purple colour, bright red, purple rim. Lifted ripe plums and red berry fruit notes on the bouquet, complimented by hints of clove and vanilla bean spice. Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by a lovely acid line and supporting oak. The tannins are just there, velvety, the palate extends itself with persistence, to a long dry finish.
Hay Shed Hill Cabernet Merlot

Dominated by Cabernet Sauvignon with a fifth of Merlot off the Hay Shed Hill estate vineyard on Harmans Mill Road at Wilyabrup. Grapes are all de stemmed into open topped fermenters for a traditional course of hand pumpovers on skins, followed by a year's French oak maturation. Blooming with intense berry fruits, cassis and chocolate mint notes over bramble and cedar oak. In well defined Margaret River Cab Merlot styling, an indulgent array of ripe, juicy blue fruit flavours over a fine length of melt in the mouth, carob tannins.

Howling Wolves Claw Cabernet Merlot
Margaret River
The majority of vineyard blocks contributing fruit for Howling Wolves are bordered by towering eucalypt trees that influence the grapes to develop distinctive qualities which are a trademark of Margaret River. This is particularly recognizable in the red varietals which take on unique mint and gum leaf characters. A spell of ageing under fine French oak further infuses the palate with vanilla bean and light spice.

Howling Wolves retain access to the finest parcels of Cabernet and Merlot in Willyabrup. Grapes are harvested from blocks which have been earmarked on the basis of strong varietal definition and refined tannins, to a schedule determined by full physiological ripeness. Following a sorting and crush at the winery, the batches are treated to a cold soak for the extraction of flavour and tannins, before being inoculated by a selection of yeasts for temperature controlled fermentations in tank. Matured to soften the tannins and integrate the components under a selection of French oaks, followed by a 100% vegan fining to smooth the palate and make Howling Wolves approachable immediately on release.
 
Rich dark red colour. A delicious bouquet of mulberry, cherries and fruits of the forest. Blackberry and plums, red ruits and chocolate on the medium bodied palate, finishing softly on a note of fine balance. To accompany roasts, game dishes or a sauced poultry recipe.

Close study and a meticulous grafting of vines have contributed to the exceptional suitability of the Leeuwin property for Merlot, Malbec and Cabernet Sauvignon. Subject to the Margaret River's most isolated and pristine natural environment, the influence of Leeuwin's viticultural practice is intentionally minimal. Vineyards are kept balanced to the annual environmental conditions. With the emphasis on quality rather than quantity, yields at Leeuwin are kept low. To alleviate the problem of strong winds damaging setting buds, Leeuwin maintains an extensive program of tree planting. Cereal rye has been planted every second row to act as a windbreak, legume mulch supplies natural nitrogen as organic matter. Alcohol 13.5%
 
Deep garnet colour. Lifted aromas of plum, raspberry, cassis and chocolate are complemented by subtle hints of black olives and French oak. The palate displays medium to full bodied weight with excellent fruit intensity revealing blackberry, plum and red berry fruits. A supple wine and very long palate with velvety fine tannins that drive the fruit intensity along to an endless finish. The ideal accompaniment to the finest meat cuisines.
Lenton Brae Cabernet Merlot

Named for the Chapel district of Lenton in Nottingham, Brae is Scottish for a small hill, which is what the Lenton Brae vineyard is situated on. Fortuitously placed within the very epicenter for superior Margaret River Cabernet, the site was planted after advisement from the proprietors of nearby Moss Wood, with which it shares a similar terroir and microclime. The inaugural vintage of Cabernet won Lenton Brae a place in the pantheon of great Margaret River estates when it claimed two trophies, including best of show, at the WA winemakers exhibition.

The gravelly loams under the Lenton Brae site at Wilyabrup facilitate water drainage without supporting any excessive vigour. The clay base retains moisture and encourages root penetration. A cepage of roughly equal proportions Cabernet Sauvignon and Merlot with a tot of Petit Verdot. In crafting the wine, an emphasis is placed on minimal tannin extraction to produce a style rich in flavour with a softness to allow the wine to be enjoyed immediately upon release. Vinification techniques such as cooler fermentation temperatures and an earlier removal of juices from seeds and skins have facilitated the construction of a gentle, palatable wine whilst avoiding the extraction of bitter, green tannins.
 
Bright scarlet colour. Aromatically disposed, fruit cake and spice, brambleberry perfumes, plums and cassis, the lightly floral notes of Petit Verdot. On the palate, the structure and tannin of Cabernet Sauvignon compliments the mid palate sweetness and fleshy mouthfeel of Merlot. Lenton Brae mates beautifully with lamb but would also compliment any red meats.

One of the more profound Margaret River constructs of the complex Bordeaux blend, a cépage of Merlot and Malbec, Cabernet and Petit Verdot. Combines the blueberry and blackcurrant fruit characters of Yallingup with the perfumed violets and toothsome red currants of Cowaramup, generous fruit depth with soft oak influence, in fine support with a toasty, spiced background. Full body and sweet round flavours of cherry and other dark fruits, as well as melted chocolate, make Amy instantly appealing and oh so easy to enjoy.

Bunches are destemmed into open fermenters and the juices seeded with pure yeast culture. Temperatures kept to a maximum of 30C and ferments hand plunged up to four times daily. As each batch reaches dryness it is tasted daily for tannin balance and pressed when the optimum has been reached. Skin contact ensues for a period of ten to fifteen days.Wines are racked to tank and allowed to settle before being racked off gross lees and seeded for malolactic. Upon completion all batches are racked, assembled and returned to barrel. After fifteen months maturation in a selection of new and seasoned French oaks, the wine is treated to a light skim milk fining, sterile filtered and bottled.
 
Deep brick red. The classic ripe fruit aromas of each variety in the cepage, Cabernet shows blueberry and cedar, Petit Verdot is dark jube and confectionery, Malbec contributes ripe plum and earth. A very light oak background to exude a perfumed, lifted nose, juicy, sweet red and dark fruit flavours. Firm tannins along the palate to a suitably balanced finish, malt biscuit and spicy oak flavours arise, a palate of balance and great length.

A key to the success of Ribbon Vale is an astute understanding of how tannins develop through skin contact and fermentation. Through tasting, the right balance between fruit, tannin and the correct time to press is struck. Merlot is a contrary beast, the goldilocks of grapes and the porridge has to be just right. The inclusion of Cabernet Franc fulfills a long time ambition to, fashion Ribbon Vale in the style of the great right bank wines of Bordeaux. Fruit is hand picked and de stemmed into small, open fermenters. Inoculated to a pure yeast culture and vinified at controlled temperatures peaking at 28C. Each batch is hand plunged thrice daily over the course of a fortnight, regularly tasted to ensure good extraction of flavour and tannin. As fermentation progresses, the treatment of varietal components begins to vary, batches are pressed at varying stages of completion, drained and treated to malolactic. Parcels are filled to a combination of seasoned and new 225 litre French oak barriques, racked and assembled in late summer, followed by an extended term of maturation and unfined bottling.
 
Deep brick red hue. Concentrated Cabernet fruit aromas of red currant, leather and cedar, complemented by fragrant notes of violets and rose. The Merlot adds mulberry and dark fruit, oak age adds complexity, charry and tarry characters. Generous red and dark fruit flavours give the wine a rich mid palate and good length. Smooth texture, displaying the exceptional balance which is the hallmark of Ribbon Vale.
