Hay Shed Hill Vineyard was planted to vine in 1973, right at the heart of the acclaimed Willyabrup triangle at Margaret River, during the early pioneer days of local viticulture. Hay Shed Hill can now boast of fully mature vines, yielding small amounts of noble varietal grapes which have established the reputation of Margaret River as a world class winegrowing region. Vinified to world's best practice, the Chardonnay of Hay Shed is characterful and charming, resonating with the essence of a truly wonderful site.

A product of exclusively free run juices from the old vine Gin Gin clone Chardonnay , the very highest in quality with the most intense fruit expression and the lowest in undesirable phenolic skin characters. Clear juices are fermented in French oak barriques, a third of which are new, the balance being one, two and three years old. Following vinification, the wine is matured in the same barriques for a further ten months. No lees stirring or malolactic fermentation is employed, the intent being to preserve and to retain freshness and purity of fruit. The objective is to construct a wine which expresses the character of a superb vineyard within an elegant and restrained style which drinks vibrantly and fresh.
 
Fresh green tinges within a pale straw colour. Aromas of cut pear and honey dew melon with some zesty citric notes. A very clean nose exhibiting clarity and definition of primary fruit without any overt wood or buttery characters. Fresh and lively with crisp acidity complementing vibrant flavours of stonefruit, melons and citrus. A restrained style offering an extended palate and identifiable Margaret River regionality, finishing clean and bright.

Since inaugural release, Howard Park Chardonnay has wowed wine judges and reviewers internationally. It was awarded Best White Trophy at the Tri-National Wine Challenge, Gold Medal at the Concours Mondial de Bruxelles and Blue Gold at the Sydney International, two years in a row. There is a measure of opulence which defines this statuesque wine, a modern barrel fermented style, elegant and sophisticated. A well rounded palate of mineral, citric and pear fruit characters, seasoned by savoury nut notes from the interaction with oak and lees.

From a select group of vineyards in Margaret River and the Great Southern which experience wonderful ripening conditions, yielding harvests of Chardonnay with exceptionally fine acidity. Grapes are hand picked and refrigerated overnight. Fruit is manually sorted to eliminate any damaged berries before a whole bunch press of the purest, most elegant, clean free runs into a selection of seasoned and new, French oak barriques, hogsheads and puncheons for fermentation by indigenous vineyard yeasts. A regimen of lees stirring battonage is followed by a course of malolactic and nine months maturation on gross solids. Components are assembled and treated to a minimal fining filtration.
 
Pale straw in colour with bright green hue at the rim. A defined bouquet of grapefruit and white nectarines with underlying hints of cashew nut and fresh oyster shell. Fermentation to indigenous yeast in French oak barriques provides a creamy texture with flavours of almond meal, honeyed apricots and fresh figs. A crisp acidity combined with some gun flint mineral complexities adds to this contemporary and sophisticated style.

Crafted from a selection of superior parcels Gin Gin and Mendoza clones, picked off the best rows Chardonnay, grown to the south facing slopes of Block 5 Allingham vineyard in the Karridale sub region of Margaret River. Whole bunches of grape are gently pressed to reserve the purest free run juices, vinified to the action of wild indigenous yeasts in a high proportion of new French oak barriques, hogsheads and puncheons. Stone fruits and honeysuckle are deftly integrated with nutmeal, lemon curd, fondant oak, fine mineral texture and extraordinary palate length.

From fruit grown to the Dante and Churchview Estate vineyards within the Willyabrup district of Margaret River. Parcels of grapes are selected from the choicest blocks with a view to creating a fully integrated Chardonnay wine with the requisite balance and optimum flavour profile. The traditional approach to winemaking at Howling Wolves is facilitated by state of the art technology. Chardonnay is harvested throughout the cool of night and immediately treated to a gentle press. Juices are vinified with a small proportion of solids to improve texture and mouthfeel. Upon completion, the wine is cold stabilised, filtered and promptly bottled to retain freshness and vibrancy, completely unoaked to articulate varietal regionality.
 
Pale straw colour. Peaches and cream nose with lifted pear and tropical fruits. Medium to full bodied, a fully flavoured, well rounded palate, rich and soft, highlighted by ripe tropical flavours before a warm lingering finish. Howling Wolves drinks at it's best immediately upon release, perfect with grilled fish or creamy chicken curries.

The Howling Wolves lair is a large, modern state of the art winery on seventeen picturesque hectares of rich, ochre soils shaded by tall stands of native trees, one of the largest in Western Australia. Semillon and Sauvignon Blanc is sourced from Churchview Estate and Allison Valley Vineyard in the prestigious Willyabrup sub region. Grapes are harvested throughout the cool of night, each parcel at optimal maturity, retaining the natural balance of flavours and acidity. Fruit is immediately processed, juices are clarified and cold settled before a vinification to choice strains of yeast. The wine is filtered and promptly bottled, capturing the fresh primary fruit flavours and aromas.
 
Pale straw in colour with a green tint. Lifted grassy and citrus notes over a tropical fruit salad background. Medium bodied, clean, fresh and lively with crisp grapefruit and peach flavours giving way to a zesty lemon finish. Drinks at its best immediately on release, the perfect accompaniment to grilled fishes and prawn risotto.
