Forest Hill work hard at extracting the best possible Shiraz out of Block 9. Better soil maintenance with no herbicides and more composted material, while leaf plucking is applied earlier in the season and more diligently. The maturity of the vines, management of the property and evolution in the quality of fruit all impact on the excellence of the finished wine. Its long and fine, chewy structure is dominated by bold varietal fruit characters, while the background gamey nuances intensify the palate, along with subtle earthiness and sweet spice undertones.

The raw Shiraz grapes at vintage feature ripe, fleshy, berry flavours with firm, fine, elegant tannin. Vine health is fastidiously maintained and canopy densities are always optimal as a result of shoot thinning to ensure balanced growth. Grapes are cold soaked in eight-tonne fermenters to extract and retain desirable varietal flavours and aromas. The juices are vinified at around 45C to prevent over extraction of tannins locked in the skins. Macerations are not extended for the same reason. The wine is transferred to barrel for malolactic, softening the palate and completing the integration. Matured eighteen months in a combination of new and seasoned Francois Freres and Sirugue French oak bariques.
 
Dark red, purple hues. Intense aromas of blueberry and satsuma plum, subtle anise and earthy undertones. Intense flavours of red and black berries over a length of fine silky tannins, perfectly integrated within a long and generous mouthfeel, its palate sweetness and cherry ripe oak will continue to soften and evolve. A suitable match to the finest red meat gourmandise.

The Forest Hill philosophy is to make individual wines of the highest quality which can express the distinctive regionality of Mount Barker. They have taken aim to produce an approachable, understated Cabernet that's a pure expression of the unique blocks that lie within the forty year old Forest Hill vineyard. An exuberant wine displaying intense layers of plump black fruits, chocolate box aromas and well integrated, luxuriously tight grained oak. An accomplished Cabernet of finesse and elegance, of power and suitably vigorous varietal definition.

Forest Hill's timeline with Cabernet Sauvignon goes back to the original two hectares of planting in 1965, when the earliest batches of fruit were vinified at Houghton's. Forest Hill choose to dry grow their vines, believing it to be a major contributor to vine health and concentration of fruit flavour. As the vineyard developed and more vines were planted, Forest Hill began to be recognised throughout Australia as a producer of very high quality fruit and the backbone behind some of WA's most famous wines. The unique attributes of the region were recognised by the late Robert Holmes à Court who, in 1989 purchased Forest Hill as the oldest vineyard in the Great Southern to complement his ownership of Vasse Felix.
 
Deep red, purple hue. Lifted aromas of dark berries with hints of dry tobacco leaf, earthy undertones and savoury notes add complexity, subtle spices evolve. Medium bodied palate with a firm rich mouthfeel, a wine of considerable intensity and concentration, flavours of black and mulberry, tobacco leaf and subtle earth characters carry through onto the palate. Slightly dusty, chewy tannins, well integrated with good middle palate richness and definition.

Forest Hill is a Great Southern of class and distinction, a Chardonnay of elegance and controlled intensity. Aromas of ripe peach and apricot are complemented by light citrus, hints of vanilla, dry fig and perfumed lifted Burgundian oak introduce a style with rich intense full palate backed by pleasant hints of roasted almonds and butterscotch. The product of choice fruit from a great vineyard, the recommended match to salt & pepper squid, a combination that will amalgamate its savoury notes with the fine acid structure and complexity of such a vibrant wine.

All grapes are hand picked in pristine condition, refrigerated overnight and treated to a gentle whole bunch pressing. Juices are transferred directly into Burgundian oak barrels under strict temperature controls to ensure a slow fermentation, allowing for the development of more complex flavours and seamless integration with oak. Upon completion, without any exposure to malolactic, lees are stirred gently once a week until the perfect balance between oak, lees and fruit is achieved. Components are matured ten months in a selection of new and prior use French oak barriques by François Freres, Seguin Moreau, Damy and Marsannay.
 
Brilliant medium straw. Lifted aromas of fresh white nectarine, apricot with lemon rind notes as underlying nutty aromas develop in the glass. Vibrant stonefruit and delicate citrus flavours, subtle hints of roasted nut, the mouthfeel is fleshy with intense fruit characters yet medium in weight and beautifully structured. The oak is perfectly integrated within the lingering spicy finish, ideally alongside garlic butter seafood over lemon dill risotto.

Mount Barker shares an uncanny confluence of soils and clime with the world's great Malbec regions, the unique gravelly terroirs of Bordeaux, the nether latitudes and invigorating elements of Mendoza. Malbec was planted at Forest Hill in the 1990s, now in their third decade of productivity, they yield the rare quality of Malbec that merits bottling as a pure varietal wine. Multi dimensioned and structured, an intensity of blackcurrant, cherry and cloves, its well proportioned palate lined with mocha, supported by the softest tannins, resolving on a lingering, black olive finish.

Forest Hill Estate Riesling

Forest Hill's experience with Riesling dates back forty years to when the first two acres of vine anywhere within the Great Southern region were established. One of the most precious sites planted to the superior terrains around Denmark, it was selected by Dr John Gladstone, one of the pioneers of West Australian viticulture, later acquired by Robert Holmes à Court. Nothing short of exquisite, a fine acid structure will see it evolve beautifully, clean varietal fruit and softness make it a perfect match today alongside Thai prawns in ginger, chilli and lime.

Riesling is harvested early in the morning to ensure the coldest possible fruit temperature. A key aim of the winemaking process is to preserve the very delicate flavours and aromas. Fruit is immediately pressed without enzyme for a gentle and quick extraction. Only the first portion of free run juice with the freshest flavour and the lowest concentration of phenolics is transferred to tank. Juices are cold settled, racked and left to ferment with wild yeast at 14C to 16C. Wild fermentation of the juice although risky for such a fragile variety adds complexity of flavour and increases palate texture. Upon completion the wine is fined, filtered and bottled as soon as possible to preserve the vibrant flavours and aromas.
 
Brilliant pale straw. Lifted aromas of citrus blossom, zest of lemon, green apple, underlined with floral notes, citrus zest and rose petal evolve in the glass, waxy lemon leaf and lime, complex floral notes feature. The natural acidity is very well balanced and integrated, lifting the freshness of flavours and lengthening the fleshy mouthfeel as it evolves on the palate. Flint stone characters linger, persisting into a crisp mineral finish.

Established 1965, Forest Hill is the oldest cool climate vineyard in Western Australia and the first ever commercial planting in all of Great Southern. This solidly structured Shiraz demonstrates the virtues of a region that's endowed with an outstanding potential to craft the most intensely structured Rhone style wines. A medium bodied, fleshy style, Forest Hill displays white pepper and subtle spice on the palate enhanced by delicate toasty vanilla and perfumed Burgundian oak flavours, fine chewy tannins and a full firm finish.

Forest Hill can lay claim to producing some of Western Australia's finest Shiraz grapes. The winemaking facility itself is closely managed to vinify the exceptional fruit into a solidly structured, vigorous wine. Grapes are destemmed and crushed into open fermenters for a cold soak, inoculation and two or three pumpovers daily throughout the ferments. Vinifications are capped at 25C to prevent over extraction of tannins locked in the skins. A short spell of maceration is followed by transfer to barrel for malolactic where the wine integrates and softens. Matured sixteen months in a combination of new and seasoned, Francois Freres and Sirugue French oak barriques.

Cabernet and Merlot grapes from each block of vines are tasted twice weekly to determine the perfect time of harvest. Merlot is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Fruit is gently destemmed into fermenters for a few days of cold soak, infusing aromatics, good colour and tannin structure. Cabernet Sauvignon is picked during the day for immediate vinification. Each parcel is fermented for several days, thoroughly aerated every eight hours along with seed removal. Upon completion, batches are pressed and racked off yeast lees, a choice component is filled to a selection of French oak barrels for a term of maturation, followed by assemblage into the final wine.
 
Dense purple colour, bright red, purple rim. Lifted ripe plums and red berry fruit notes on the bouquet, complimented by hints of clove and vanilla bean spice. Supple fruit core of juicy dark plum and bright red berry fruit notes dominate, held together by a lovely acid line and supporting oak. The tannins are just there, velvety, the palate extends itself with persistence, to a long dry finish.

Gnangara Sauvignon Blanc
Manjimup Pemberton
Gnangara, pronounced nan-gara, is a reference to the underground spring which nourishes much of the fertile region surrounding the original Evans & Tate wineworks. The perpetually replenished vines yield grapes with great flavour intensity and natural acidity, particularly from sites around Manjimup and Pemberton. The freshness of lime zest comes from Manjimup, Pemberton contributes vital slatey and grassy characters.

Sauvignon Blanc, principally from Manjimup and Pemberton, a pure varietal wine of intensity and concentration. The cool maritime nights and favourable ripening seasons stimulate the vines to develop pungent characters and electrifying acids in the fruit. Grapes are picked throughout the cool of night and lightly pressed. Juices are cold settled in tank at 10C for two days before being racked, warmed to 17C and inoculated to choice strains of yeast for a cool fermentation. Upon completion, portions are kept on light, fresh yeast lees for up to three months. Components are assembled and lightly fined, stabilised and filtered, minimal handling retains the attractive primary fruit qualities of the Gnangara style.
 
Brilliant pale yellow hue. Intensely varietal with layers of lime zest, fig, passionfruits and cut grass. Dry and beautifully refreshing, especially when slightly chilled. The freshness of lime zest comes from the Manjimup component, Pemberton contributes slatey, grassy flavours. One of the most mouthfilling Chardonnays to eventuate out of Pemberton, Wisdom has been recipient of the white wine equivelent to the Jimmy Watson trophy, an outstanding achievement. Chardonnay is hand picked into 10Kg picking buckets at varying levels of maturity, taken to the winery and chilled as whole bunches. Fruit is whole bunch pressed in small batches to capture and retain the maximum level of flavours. Houghton has been making wines in the same cellar since the 1850s and has built up it's own population of ambient yeasts. Juices are transferred to a selection of exclusively Burgundy coopered French oak barriques for indigenous yeast ferments and nine months ageing on lees.
 
Pale straw hue. Lovely complex aromas of peach and lemon citrus with nuances of lemon curd, walnut and oak spice. The palate is vibrant and full flavoured with abundant fruit characters. Finely textured with creamy complexity, derived from extended lees contact, a fine acid finish, bound in rich, creamy textures for a wine great length and exquisite balance.

Abercrombie has claimed Grande Medialle d'Or at Concours Mondial de Bruxelles. Over the years it has been internationally feted with multiple awards including Best in Class International Wine & Spirits Competition and two Blue Gold Medals at the Sydney International. Since inaugural release, the best parcels from a selection of the oldest vineyards in Margaret River, the cooler ripening climes of Mount Barker and Porongurup sub-region of Great Southern, have been set aside for Abercrombie. All fruit is hand picked, sorted and vinified in a mix of small static fermenters and open vats. The wines are hand plunged and pumped over as required to balance the extraction of colour, tannin and flavour development.
 
Opaque red with a purple rim. The nose is filled with blackberry, cedar, tomato leaf, dusty bitumen road and chocolate representing each distinctive component of the harmonious blend. The palate starts with a rush of plush red berry fruit and reaches its zenith with damp earth and forest floor complexity balanced by ultrafine powdery and layered tannins. The finish displays long fruit and structural elements balanced by supporting mocha oak.
