Tim Burvill draws his insiration from the crisp Sancerre wines of France. His straight forward, low intervention winemaking techniques translate into solid Chardonnay wines with bold varietal definition and intense fruit. The same careful approach is taken in the vineyard. Grapes are harvested in the cool of the night just as the tropical flavours begin to appear. A completely wild, indigenous yeast vinification serves to enhance the aromatics, ferments are run very cool to retain valuable volatiles. A component of large format oak ferments reduce acid harshness while contributing complexity. Five months of lees stirring compliments the mid palate texture and contributes a rich nutty taste.
 
Pale green hue. Pungent tropical and melon fruit laced with exotic dashes of kiwi and cashew. Stylish and elegant, the vibrant fruit drenches the tastebuds with a wave of intense pineapple, peaches and nectarine. The mid palate is textural with a bounty of creamy, mealy complexity derived from extended lees stirring. A balanced acid finish, crisp, lingering on notes of clean tangerine and lemon freshness.

Schild Estate Alma Reserve Chardonnay

Alma was the Schild matriarch, married to estate founder Ben Schild, she raised a family of eight children under primitive conditions while supporting her husband throughout the establishment of Schild vineyards. The original homestead at Three Springs was acquired by Ben in 1952 as a mixed farm with dairy sheep, stonefruit orchard and a small acreage of vines. Alma showed the greatest perseverance whilst encouraging her husband and nurturing a large family during some of the most impoverished times in Australian history.

The Schild approach is very much centred around progress in the vineyard. Everything is aimed at preserving the character of quality fruit without too much interference from the winery. Fruit is sourced from the Schild family's best parcel of Chardonnay at Moorooroo Vineyard near Rowland Flat, grapes are harvested and picked at optimum ripeness in the cool night air. Grapes are de stemmed and the musts are chilled, vinified in controlled fermenters followed by transfer to barrel for completion of ferments, lees stirring, malolactic and a term of maturation. Quality French oak and several months on lees infuses the palate and contributes texture to an elegant yet complex Chardonnay.
 
Bright straw hue. Fragrant peach and honeydew melon bouquets overlaid with toasty French oak. Fresh tropical fruits on the palate combine with restrained hints of oak and creamy, nutty mouth feel derived from lees stirring during maturation. Apricots and peach flavours dominate the palate, delivering richness of flavour along with a subtle acid backbone ensuring the wine remains stylish, fresh and elegant, all the way to a lengthy finish.

A selection of the finest Chardonnay from Schild's extensive holdings in the Barossa, around a backbone of fruit grown to the original Three Springs Farm and a further component from the precious Schild estate property in the hundred of Moorooroo. Demonstrating the excellence which can be gained from vines planted to a higher altitude, closely managed for a harvest of lower yields. Dominated by an intriguing mix of tropical and temperate orchard characters, a pure expression of Barossa Chardonnay, in a refreshingly fruit driven, unwooded styling.

The unique tapestry of Schild's vineyards allows the team to craft wines which are honesty and satisfying. Three Springs Farm is where the original Schild homestead is located. Situated on Steingarten Road at Rowland Flat, Three Springs sits at 380 metres above sea level. Vineyards at this altitude are traditionally much lower yielding than the Barossa Valley floor, producing higher quality fruit. Parcels of Chardonnay are fermented at low temperatures in tank to preserve fresh varietal expression and to achieve a bright fruit forward style, supported by a complex structure and full flavour development derived from extended lees contact post fermentation, bottled completely unoaked.
 
Pale gold with green hues. Lifted notes of banana and tropical fruit, guavas and a touch of lemongrass. Traces of stone fruit, apricots and young rock melon combine over a solid palate and fine taut structure, providing clear direction and balance. Ample flavours and good weight of fruit on the mid palate, fresh, crisp and extremely varietal without the use of any oak.

Hand picked grapes are whole bunch pressed into a high proportion of new 500 Litres French oak puncheons for a rich course of barrel ferments and term of maturation on gross sedimentery lees. An exquisite, fine boned Chardonnay in new world Burgundian styling, so highly articulate of an exceptional vineyard site.

M3 Chardonnay is sourced exclusively from a single site, the Shaw+Smith M3 property at Woodside, named after the three partners in the vineyard, brothers Michael and Matthew Hill Smith, along with cousin Martin Shaw. M3 is a major refinement in styling, a serious attempt to produce an exceptional Chardonnay with the capacity to age gracefully. A sophisticated, barrel fermented wine with pure fruit character and restrained oak, exhibiting great elegance and exquisite length. A must for all enthusiasts of stately white wine.

Shaw+Smith's M3 Vineyard consistently yields the most remarkable quality of Chardonnay, a continuity of harvests at every vintage, spectacular grapes offering great concentration of flavour and exhibiting splendid purity of varietal fruit. At an altitude of 420 metres, the close planted, low yielding vines are grown to sandy loam soils over red yellow clay with some shale. M3 is an assemblage of the respected I10V1 clone and the exciting new Bernard clones from Burgundy. Grapes are hand picked and whole bunch pressed prior to barrel fermentation and maturation in French oak. Wild indigenous yeasts ferment batches to dry, followed by partial malolactic, nine months maturation and sedimentery lees battonage.
 
Paler hues than most Chardonnay. M3 opens slightly austere, offering restrained fruit and a hint of honeysuckle before revealing a palate of great length. White stone fruit flavours and savoury, toasted nuts complexity around a solid core of fruit, the oak is beautifully handled. Elegantly structured with a long and fine, bone dry finish. A superior single vineyard wine of power and sophistication.
Tapanappa Piccadilly Valley Chardonnay

Tapanappa are a joint venture of elite peerage, a vinous concord between Petaluma's Brian Croser, Champagne Bollinger and Chateau Lynch Bages. Brian Croser selected the Piccadilly Valley at the centre of the Adelaide Hills in 1978 because it provided the best terroirs in which to grow Chardonnay for Petaluma and for Croser sparkling. Grapes are all hand picked and destemmed into a high proportion of new French Vosges oak barriques for ferment through the action of home yeasts over the course of a cool Piccadilly Valley autumn. Ripe peaches, quince and fig, marzipan and vanilla oak complement the fresh fruit.

Tapanappa Tiers Vineyard Chardonnay

Tiers is a mere three hectares of intensively managed, closely planted, historically significant Chardonnay vines. The growing seasons at Piccadilly are uncannily similar to the microclimes of Burgundy and Dijon. Tiers Vineyard was the first site planted in the region since the nineteenth century and is at the centre of the Piccadilly Valley, at 450 metres, near the Petaluma wineworks and Brian Croser's home. The Chardonnay vines on Tiers Vineyard were derived from an old Davis California clone, originally imported from Mersault during the 1880s. A mere 300 dozen are produced.

Hand picked grapes are de-stemmed, crushed and chilled to 2C on the way to an air bag press. Cold juices are gravitated away and only light pressings are added back. After two days of cold settling, the clear juices are racked to a high proportion of new French Vosges oak barriques for a long cool vinification under the estate cellars. Upon completion of ferments, the barriques are topped up, treated to partial malolactic and matured ten months on gross lees. In the spring, barrels are slightly sulphured, followed by rack and return for clarification and bottling.
 
Rich straw hues. Varietal bouquet of ripe peach and melon, subtle marzipan and brioche characters are derived from the malolactic, yeast lees contact and refined French oak. A consistent terroir feature of Tiers Chardonnay are its substantial textures, effusive palate, undulating flavours and mouth filling savoury finish. Tiers unravels a cornucopia of spiced honey and toasted brulee characters as it evolves in the glass.

The zenith in Clare Valley Chardonnay, St Andrews are a true labour of love for the Taylor family, sourced from an historical property adjacent to the estate wineworks. St Andrews continue to attract an impressive array of international awards and recognition for their outstanding quality. Parcels of French Bernard clone Chardonnay are selectively hand picked off the distinguished Angela block G30 and Victoria block V20, carefully sorted and gently pressed into the extravagance of new Louis Latour French oak for an opulent barrel ferment and course of age.

The aim is to craft a wine of delicacy and finesse, grapes are harvested throughout the cool of night, gently whole berry pressed and chilled to eight degrees C. The entire process with fifteen minutes of harvest to capture and preserve the excellence of fruit in the vineyard. Juices are cold settled and transferred to a selection of 80% new, tight grained French oak barriques by artisanal Burgundy coopers Louis Latour, for inoculation to Cepage Chardonnay yeasts. Upon completion, batches are treated to nine weeks of lees stirring battonage and ten months maturation, followed by minimal fining and filtration.
 
Youthful pale straw hues. Ripe stone fruit aromas along with hints of tropical fruit and subtle citrus zest, enticing sweet spice and savoury cashew of French oak. Medium bodied yet sumptuous wine with an enjoyable creaminess to the mid-palate, flavours of juicy white fleshed stone fruit, cleansing citrus at the finish, wonderful persistence and length.
