Domenico Scarpantoni originally worked for Hardy Wines and Seaview. To this day, Scarpantoni is very much a family business with every step of production, from viticulture to the packaged product done entirely on the premises. The last two decades have seen major expansions to the Scarpantoni Estate, the quality of the wines, whilst excellent in earlier vintages, has reached new highs. There have been renewed plantings of premium Shiraz, a wetlands development, a fully renovated winery and cellar door, and the restoration of the estate's historical homestead. The Scarpantoni family maintain complete control over every stage of the winemaking process, to ensure vintages of the highest standard.
 
Deep red-purple colour. Aromas of licorice and of cherry, leather and mint and spice characters, followed by leaf and berry aromas. Ripe blackcurrants and plums interweave with attractive cedary new oak and mocha barrel ferment influences, while the palate is generous and smooth - a delightful marriage of ripe fruit with sweet oak.

Conceptually, an adaptation of the pulp novel Sin on Wheels, realized through an equitable coupling of Cabernet Sauvignon and Shiraz. Fruit is harvested off fully mature vines, crushed into fermenters and treated to maceration for the optimal extraction of colour and tannins. A course of vinification on skins and pressing into a selection of new and seasoned French oak barriques, for the completion of malolactic and term of maturation. This is Passion, a monster bigger than the three of us that leads us to soapbox, even to grandstand and sometimes pass out on the couch.

Inky ruby colour. Complex aromas of vivid red and dark berries, pungent herbs and fresh flowers. Round and seductive, with silky raspberry and blackberry preserve flavors braced by nervy minerality. Tapanappa Whalebone Vineyard Cabernet Shiraz

Tapanappa acquired and renovated the precious Whalebone Vineyard at Wrattonbully in 2002. The thirty year old Shiraz and Cabernet vines have responded magnificently. The paradox is that despite being cooler than Coonawarra, the fruit ripens earlier and more completely. The still air, cool night and warm days particularly suit the rejuvenated vines. The quality of fruit is ideal for a masculine Medoc style, not surprising given the similarity of soil, geology and climate to that of St. Emilion in Bordeaux. By maestro Brian Croser, only a few hundred cases are made.

The precious grapes are hand picked and vinified in separate batches. Grapes are de-stemmed, partially roller crushed and chilled to 2C in one tonnes fermentation tubs. A four day cold maceration precedes fermentation by native yeasts and bacterial strains, hand plunged twice daily to break up the cap of skins. At the peak of vinification, temperatures reach 34C before fermenting to dryness. The wine and skins are sealed down for a further week of maceration before draining and gently pressing into French oak barriques. Upon completion of malolactic, batches are sulphured and racked several times over a period of fifteen months maturation, to be bottled unfiltered after a light egg white fining.
 
Dark garnet/ ruby colour. Intense black currant, dusty herb and spice edge of Cabernet, the anise and blackberry of Shiraz. Intense but refined flavours, the freshness and vibrancy of Cabernet accentuated by the smoky and minty hallmarks of Whalebone terroir. Significant tannin structure before an even, mouth coating savoury finish. To accompany spring lamb or rare pigeon breast with fines herbes.
Westlake Convicts Felon Cabernet Shiraz

An accord of estate grown Cabernet Sauvignon from the upper rows of Jaensches Vineyard, assembled around a backbone of Shiraz from the lower slopes of Block 3. Parcels are separately treated to a traditional old world vinification in open top fermenters, followed by a fortnight of maceration for optimal uptake of flavours and tannin, the Cabernet component is matured in French oak barriques while Shiraz is sent for a term of age in a selection of American oaks, to be assembled and bottled for maximal sauvage charm, unfiltered and unfined.

Wynns VA Lane Cabernet Shiraz

V & A Lane is a long, straight road that dissects Coonawarra's famous Terra rossa strip at its midpoint. Originally surveyed in the late 1840s, the lane divides the original electorates of Victoria and Albert. Traditionally it has been used as a landmark to separate northern and southern vineyards in Coonawarra, a prestigious and highly sought locality for growing exceptional Cabernet Sauvignon and Shiraz. The precious fruit from these vineyards exhibits a signature density and richness, the defining characteristic of this location along the Coonawarra strip.

Established by John Riddoch in 1896, Wynns was the first winery in Coonawarra. In 1951 Melbourne merchants Samuel and David Wynn purchased Riddoch's original vineyards and winery, renaming the property Wynns Coonawarra Estate. The Wynns family recognised the intrinsic qualities of Coonawarra wines, their richness and intensity of fruit character, and set out to build an independent identity for the region. They created the famous label that features John Riddoch's gabled winery, one of Australia's most recognizable buildings. An essentially Cabernet wine with a third of Shiraz, V & A Lane spent sixteen months in a combination of new and seasoned French and American oak barrels.
 
Deep crimson in colour. A ripe perfume of blackcurrant, violets and black mulberry balanced by a gentle underlay of cedar and creamy oak. Dark, dense Cabernet flavours and hints of spicy Shiraz frame a complex, savoury palate. Excellent concentration, structure and potential, delivering a seamless vibrant core of pristine dark berry nuances underpinned by silky smooth fruited tannins.

In 1974 Yalumba created an outstanding Cabernet Shiraz blend known simply as FDR1A. The wine soon became legendery, appreciated for its solid presence of fruit and controlled power. Grapes are all hand picked and crushed into eight tonnes open top fermenters. The natural, wild yeasts present on skins initiate vinification, cultured winery yeasts are added to complete the ferments. Skin management is controlled by a special Yalumba designed cap plunger, to achieve a wine with excellent depth of colour, richness and complexity. Aged sixteen months in a selection of seasoned and new French oak hogsheads and barriques, crafted by artisans at Yalumba's own cooperage.
 
Dark, intense red colour. Aromas of bright mulberry fruits supported by black cherry and anise, cedar and spice. Medium to full bodied, a complex and plushly textured wine, quite seamless with long, fine grainy tannins that reveal an elegance and refinement on the finish. An amazing level of approachability upon release, it's excellence of oak makes it the perfect red wine to serve as an accompaniment today alongside roast beef and bearnaise.
