Wirra Wirra Angelus Cabernet

Robert Strangways Wigley was an eccentric South Australian cricketer who established Wirra Wirra in 1894. He produced a highly prized Shiraz which was exported to England and the Empire until he passed away in 1925. The cellars fell into disuse after the 1936 vintage and remained inoperable until Greg and Roger Trott rebuilt the ironstone winery by hand in 1969. Tradition has it that the ¾ tonne Angelus bell which sits atop Wirra Wirra was rung thrice daily from the Jesuit Church at Norwood, calling the faithful to prayer.

McLaren Vale, as well as being home to some of the oldest Shiraz vines in the world, is blessed with soils and climes which are ideal. Vineyards contributing fruit to Angelus are up to sixty five years of age, typically low in vigor, producing modest yields of intensely flavoured berries. Parcels are picked in small batches from superior sites at Seaview and Blewitt Springs, Onkaparinga Hills and McLaren Flat. Grapes are treated to a cold soak, inoculation and cap management throughout the ferments, followed by a traditional basket press to oak for completion of malolactic. Each batch is matured fourteen months in a mix of seasoned and new French oak barriques, rack and returned, before the final assemblage.
 
Deep violet purple. Fresh and exceptionally varietal with lifted blackcurrant leaf and cedar notes integrated with some toasty oak. The palate is refined and elegant, mouthfilling with plums and mulberry, black cherry fruits and long, persistent fine grained tannins. Aromatic cedary oak with anise and dark chocolate adds layers to the fleshy red fruit. A wine of balance, power and style, to be served alongside the finest gourmandize.

The late, great Greg Trott, patriarch of Wirra Wirra, saw many of his unusual dreams realised, such as the construction of a cyclopean fence which girts the entrance of the wineworks. One consuming vision however continued to elude him, the building of a medieval siege machine called a trebuchet. Why? To use as a catapult for bombing neighbouring properties with bottles of wine in the hope they would retaliate! A splendid, opulent rendering of Shiraz, brimming with intense fruit, a hint of varietal spice and a touch of Viognier to be different, just like Trotty.

The Catapult style is bright and juicy with textural tannins and plump fruit. A mostly Shiraz wine with a dollop of the aromatic Viognier, grown to superlative sites at Blewitt Springs, McLaren Flat and Seaview. A small inclusion of Viognier is crushed, de-stemmed and cold soaked along with Shiraz for two or three days, extracting maximum colour and flavour without the influence of alcohol. Each ferment is tasted daily throughout vinification. Once the desired level of colour, flavour and tannin are extracted, ferments are pressed into a combination of French oak hogsheads and barriques. Upon completion of malolactic, wines are rack and returned every four months, bottled after a year to fifteen months maturation.
 
Vivid red, brilliant purple edge. Lifted bouquet of musk, ginger spice and bright blueberry fruits with notes of ripe cherry and raspberry. Touches of cedary oak and some complex pine needle and herbal nuances add to the appeal of the bouquet. Juicy sweet fruit floods the palate with plum and blueberry dominating. The soft silkyness is enhanced by fine tannins, flavoursome with wonderful joie de vivre, a wine of vibrant character.
Wirra Wirra Chook Block Shiraz

From time to time, Wirra Wirra produces wines from very small parcels of extremely intense, high quality fruit. Chook Block is a unique wine which is only assembled in the most outstanding vintages, pointedly one year in four. It is not made to a particular style, winemaking is purely, in a custodial sense, attempting to reflect the remarkable quality of Chook Block Vineyard Shiraz in exceptional years. Bunches are all picked by hand and treated to the highest scrutiny, removing any fruit that is not of the highest order before inclusion.

Chook Block was planted in 1960 on Nocowie Vineyard immediately behind the Wirra Wirra wineworks. The terroir is fortuitous and unique, sandy topsoils over subsurface sandy loam with red brown impervious clay and patches of limestone. Fruit is cold soaked for five days to extract maximum colour without excess alcohol. Ferments are hand plunged and tasted twice daily. At the required level of dryness and extraction, juices are basket pressed until the first sign of tannin hardness. Batches are transferred to a high proportion of new French oak barrriques for completion of malolactic. Barrels are rack and returned every four months throughout twenty one months of maturation.
 
Dense plum hue with garnet rim. Fresh boysenberries, blackberries and plum, interlaced with sweet cedar, bitter chocolates and licorice, tar and earthy notes. The palate is mouth filling with rich satsuma plums and blackberry fruits, dark chocolate and aniseed. Rich and brooding, balanced by mouth watering savoury tannins and fine cedary oak.
Wirra Wirra Church Block Cabernet Shiraz Merlot

Church Block was the first wine which the late Greg Trott produced under the Wirra Wirra label back in 1972. He took the name from one of the original estate vineyards, which runs next to the small Bethany Church est. 1854 across the road from Wirra Wirra's century old ironstone cellars. Over four decades, Church Block has become an Aussie favourite, consistently offering a smooth, soft red wine that balances the complexity sought by ardent enthusiasts, with the approachability desired by those seeking pure red wine drinking pleasure.

Wirra Wirra sources fruit from a combination of estate vineyards and premium growers at Seaview and McLaren Flat, Whites Valley and Blewitt Springs. Fruit is gently crushed, de-stemmed and vinified at 20C to 28C, pumped over two to four times daily for flavour and colour extraction. Once batches achieve optimal extracts, the ferments are pumped over gently once daily to keep the cap, skins and seeds moist. As juices approach sugar dryness, batches are drained and the remaining skins treated to a basket press. Parcels complete malolactic in barrel and components are assembled, followed by maturation in a selection of new and seasoned French and American oak hogsheads and barriques.
 
Deep plum with vivid red hues. Aromatic nose of leaf, cedar, aniseed and clove spice. Fragrant varietal lift with bright red fruit aromatics of raspberry and plum. Rich, generous palate full of dark cherries over lingering textural tannins. Oak plays a minor yet complimentary role, supporting with cedary complexity and a structural backbone leading to a long lingering finish.

The topical old world accord of Grenache and Shiraz was the first style of wine to be made after the re-establishment of Wira Wirra in the 1970s. It is occasionally released as a special limited edition when the vagaries of vintage permit, the aim being to construct a likeness of McLaren Vale, as it was decades ago, when the requisite accompaniement to such a wine was meat and three veg. Wirra Wirra Original is equally satisfying today alongside paparadelle and porcini, offal and pistachio ballotine or five spice crackling pork.

The founder of Thomas Hardy & Sons is on the record for praising the founder of Wirra Wirra, as the hardest working man he ever knew. Hand picked parcels of Grenache are sourced from mature vineyards in McLaren Flat, Shiraz is collated from choice blocks at Seaview. Grapes are crushed and destemmed into traditional open top, two tonnes fermenters, gently macerated by hand plunging and pumped over for optimal extractions of flavour, tannin and colour. Components are fermented to dry and basket pressed into a selection of seasoned French oak for barrels for completion of malolactic. Batches are racked off lees and sent to mature nine months in neutral French oak puncheons and barriques.
 
Vivid crimson, vibrant deep red hue. Fragrant crushed cherries and raspberry nose, complexed by perfumes of dried herb and musk. The palate displays bright Grenache raspberry and rhubarb flavours, supported by fresh acidity and fine silky tannins. A wonderful, medium bodied style of candor and restraint, resolving on a spicy, savoury finish.

RSW is an acronym for Robert Strangways Wigley. He learned his craft during a tenure at Bankside under the tutelage of Thomas Hardy, who claimed to have never known anyone that worked harder than Wigley. RSW's wild pranks as a young man made him somewhat of an embarrassment to his family. In 1893 he was pointedly sent to rusticate in McLaren Vale where he undertook the planting of vines in 1894. By the turn of the century he was proprietor of the most eminent winemaking operation in the district, with a hundred acres under vine.

RSW is not made to a uniform style year after year, thereby crafted to reflect the very best wine Wirra Wirra can deliver. Parcels are picked from vineyards at Blewitt Springs, McLaren Vale and McLaren Flat in small batches and cold soaked for three days to extract maximum colour without the presence of alcohol. Each ferment is assessed twice daily to determine the cap management program, before basket pressing at the first sign of tannin hardness. Batches are transferred to an individual barrel selection, depending on vineyard block, before completing malolactic, rack and returned every four months. Matured nineteen months in a mix of seasoned and new French oak puncheons and barriques.
 
Deep plum colour with crimson rim. Bright plums, blueberries and raspberry fruits fill the nose, aniseed, leather and dark bitter chocolate add further complexity. The palate displays vibrant rich plum and raspberry fruits infused with bitter chocolate and aniseed that fill the mouth. The dense core of fruit is balanced by fine cedary oak and textural tannins providing a wine of superb line and splendid length, wonderful power, balance and style.

Woodhenge is about big ideas, in the manner of cyclopean fences built by Australia's early settlers. A wine of great elemental sculpture, the assemblage of individual vineyard and sub-regional characteristics is the key to success of the style. Woodhenge has previously claimed Decanter World Wine Regional Trophy and Gold Visyboard Great Australian Shiraz Challenge. Bold and tightly knit, incorporating ripe berry fruit and integrated oak balanced by velvety tannins, Woodhenge Shiraz, like it's namesake edifice, is solidly structured and imposing.

A legacy well worth toasting, named after the massive post and rail fence that now greets visitors to the Wirra Wirra wineworks. Shiraz from estate vineyards and good McLaren Vale growers is gently crushed, destemmed into open top and static fermenters, tasted twice daily to determine optimum number of daily plunges and pumpovers for extraction. Once pressed, parcels are moved to oak for completion of ferments, rack and returned every four months. The wine was assembled at fifteen months of age and returned to oak for two months before an egg white fining. Matured a total of seventeen months in a high proportion of new French and American oak barriques and hogsheads.
 
Deep red, bright edges. Fragrant bouquet of ripe plum, rich raspberries, polished leather with bitter chocolate and sweet cedar. The palate is rich and fleshy with layers of Satsuma plum and raspberries interwoven with nutmeg and aniseed spice. The bold yet soft fruits are balanced with fine sandy tannins resulting in a wine with structural power, great length and style. To accompany Scotch fillet steak with dill gherkins and fresh cut kipflers.

William Louis Townsend was granted a Crown Lease in McLaren Vale circa 1905, he made it his home, establishing the original vineyard. It has been known as Woodstock ever since. Doug Collett A.M developed a taste for wine while flying Spitfires over the vineyards of Europe. He was inspired to study Oenology at Roseworthy Agricultural College and graduated to manage Australia's biggest wineworks at Berri Estates. Collett acquired the Woodstock property in 1973, establishing Cabernet vines adjacent to the Stocks in 1988.

Woodstock are made to an elegant yet generous style. In the vineyard, the key is to manage leaf canopies carefully ensuring only the best fruit is produced. The number of leaves are reduced to ensure perfect ripening of berries, permitting good exposure to sunlight and air. Yields are deliberately kept low for good flavour concentration. The best Italian crushers are employed for their gentleness and ability to modulate according to taste. The finished wine is treated to eighteen months in a selection of small, seasoned and new French and American oak barrels, enhancing without dominating the palate, retaining strong varietal expression as complimented by soft, toasty flavours. Deep black purple hues. Bursts of blackcurrant, violets and choc mint, licorice, black olives and bay. The palate is full and rich in flavour, lush dark berries coat the mouth while savoury tannins and supporting cedary oak form the structure to encase the fruit as it lingers, retaining the bramble and chocolate savouryness which are so articulate of McLaren Vale Cabernet.
