The Parish property is a ten hectare vineyard dedicated to producing the finest Shiraz possible. The extra efforts spent in managing the property and training the vines pay a good dividend, achieving harvests of the most spectacular Shiraz every year. A bounty of small but intensely flavoured berries, displaying juicy flavours, piquant spice and the elegant tannins, are crafted into a rich and full bodied McLaren Vale, offering profound structure in support of a powerful concentration of fruit.

Nugan Estate own properties in the Riverina, King Valley and McLaren Vale, making them the eighteenth largest vineyard holders in Australia. Their state of the art viticultural management regimens have claimed numerous accolades. McLaren Parish is protected from rainfall variation, being drip irrigated from water held in two dams and protected by a license to pump nine mega litres of surface water. Following the harvest, grapes are crushed, yeasted and pumped over in traditional style to avoid extraction of bitter tannins. Components are transferred to new and seasoned French and American oak for a course of rich barrel ferments, followed by an extended maturation and the final assemblage.
 
Deep crimson with a youthful purple hue. Aromas of cherry and plum meld with dark chocolate, vanillin and allspice. A rich, full bodied wine displaying powerful concentration of juicy dark plum, chocolate and anise with silky tannins and great length. Parish Vineyard should be enjoyed with rich meat recipes, beef burgundy and osso bucco.

William and Elizabeth Oliver emigrated from Scotland, eventually settling McLaren Vale in 1841. Their homestead flourished, the sixth generation Olivers are one of the region's great winegrowing dynasties. For many years, they sold fruit to Penfolds, where it became one of the primary components to the mighty Grange. HJ is the ultra premium flagship Shiraz, purposefully crafted at the Boar's Rock wineworks. A vigorous wine offering immeasurable girth of fruit, great poise, elegance and the strength of character to evolve majestically.

The Taranga site overlooks McLaren Vale township. Along with good old gut feeling, which comes from years of knowing the vines and terroir upon which they are grown, state of the art computer controlled irrigation technology is employed to administer the optimum stress levels to the vine, translating into some of the world's finest Shiraz. Each block is individually nurtured depending on vine age, terroir and requirements of the winery. Most of Taranga's harvest is destined for other companies, only the pick of the very pick will find their way into HJ Reserve. The finished wine is matured thirty months in nothing but the finest, tightly grained, exclusively French oak barriques, half of which are completely new.
 
Deep, dark maroon colour. Excellent spicy lift, strong mocha and dark chocolate overtones in the bouquet. Super intense palate, showing the distinctive HJ restraint and finesse. A wine with impressive depth of fruit right through the middle palate. Selected from the best parcels of old vine Shiraz, HJ has been barrel selected and bottle aged for optimum flavour and enhancement.
Olivers Taranga Shiraz

Established 1841, the McLaren Vale Taranga vineyards are still owned by the founding Oliver family. Even more remarkably, Taranga wines are today crafted by a sixth generation of the original winemaker. For most of the twentieth century, Oliver Taranga sold their precious yields to other wineries, much of it was destined for the nation's most esteemed labels and memorable flagship vintages. Since 1994, the Olivers have been reserving the pick of their low yielding, old vine grapes for bottling under the Oliver Taranga label.

Taranga was the name given to the southern section of the Oliver property in 1841. Sheep and cattle were raised, perfect for viticulture, vineyards were planted and the family prospered. Generations later, Don Oliver sold fruit to Penfolds, where it became one of the primary components to the mighty Grange. Oliver has since taken up the task of processing the pick of his own crop. Produced from vines up to fifty years of age, cropped at three tons of fruit per acre, aged in a mixture of seasoned and new French and American oak barrels for two years. Winemaker Corrina Rayment is McLaren Vale dynasty, daughter of Colin Rayment from the neighbouring heritage Kay Brothers Amery vineyards.
 
Deep, dark maroon in colour. Big powerful mocha, coffee, dark chocolate and spice aromas, rich and briary with vanilla and plum. Dark fruits and cherries on the front palate, long grained tannins and great length. A terrific richness, abundant blackberry, pepper and sweet earthy notions, low acidity and a mature, complex finish.

The Paxton team are focused on making wines of intensity, but also with layers of texture, good flavour and genuine interest. Paxton focus on soil health, bio-diversity and nonchemical weed control. Bee hives on the property contribute to diversity, aid pollination and maximise seed production of the inter-row pastures. Natural composts enrich the soils and are the basis for healthy vine growth. Each vineyard parcel is separately handled, destemmed and vinified in a mix of open and static fermenters, plunged and pumped over each twice daily over the course of a fortnight for optimal extraction of colour, flavour and tannin. Batches are pressed into a selection of seasoned and new French and American oak barriques for completion of ferments and a year's maturation.
 
Deep mulberry, purple hues. Powerful, lifted ripe berry fruit, vanilla and chocolate, French cocoa and American vanilla oak notes. Rich, juicy fruit, spiced berries and currant, dark chocolates and licorice, flavoursome, textural mouthfeel and a lingering savoury back palate. Mouthfilling, yet lingering, elegant flavours, drinking very well immediately upon release.

Pennys Hill Cracking Black Shiraz

Planted in 1991 and added to the Penny's Hill estate vineyard group in 1993, Malpas Road is named after the pioneering family who held lands in what was originally referred to as Bay of Biscay. A reference to the relatively infertile cracking, grey black soil upon which the hand tended Shiraz patch does its work. The fissures which occur as the black soils crack apart, sever surplus root structure, a process which lessens vine vigor and enhances the virtue of the grape. Unmistakably McLaren Vale, even more so Penny's Hill.

Shiraz is sourced from the Malpas Road site and the elevated aspects of Penny's Hill. Detailed canopy management, judicious irrigation and devoted viticultural practices contribute to the quality of these exceptional parcels of Shiraz. To best reflect the variations in terroir across the vineyards, harvest of individual parcels is conducted on different days. Fruit is crushed, de-stemmed and vinified on skins in static and open fermenters for a week. Some free run and pressings complete ferments and eighteen months maturation in a selection of new and seasoned French oak barrels. Parcels are kept separate throughout the process to preserve the individual character of site within the final assemblage.
 
Dark cherry red colour. Currant and blueberry fruit fragrances with a lifted violet perfume, followed by spice and lightly toasted French oak. Lovely primary forest fruits and red currants with traces of spice and silky milk chocolate tannins at the finish. Ready to drink alongside steak and vegetables.

McLaren Vale enjoys an unrivalled reputation in Australia and indeed the world, for Shiraz grapes with fully developed characters, translating into wines of excellent fruit and fine length. The original Penny’s Hill Vineyard is at the very foothills east of McLaren Vale, slightly cooler than the valley floor, a legacy of extremely low yielding vines which produce fruit of amazing richness and complexity. Only the most splendid rows are hand picked for inclusion into the icon Footprint Shiraz. Grapes are open fermented on skins for a fortnight, followed by pressing into an extravagantly high proportion of new French oak barriques for eighteen months maturation before the final assemblage.
 
Dark, black scarlet hues. Blackberry and dark plum fruit bouquets, black olives, cedarwood in support of underlying savouryness. Purity of provenance, elegance, minerality and focused oak, underlying layers of stunningly perfumed opaque fruit, a fully opulent wine of intensity and drive, resolves on a lingering length of black, blue and purple currant fruits.
