An exclusive assemblage of the most elite parcels, picked off a tally of the finest rows Shiraz on the Chinese and Sandra's blocks at Aldinga and Willunga. Remarkable for its opulence, seamlessness, linearity and textural aplomb, Marsican is defined by the richness of ripe black fruits, olive tapenade savouryness and fragrance of freshly milled tradewind spice. A long cool ferment and gentle press, before being treated to the luxury of completely new French oak for eighteen months, followed by a rigorous cull to determine the most outstanding barrels for inclusion into Marsican Shiraz.

Every Shiraz grape grown by Mitolo is cultivated and nurtured with passion and zeal, sparing no effort or resource to ensure that the best of everything is brought together to construct wines of elegance, purity and power. Savitar is the flagship Mitolo Shiraz, a tightly structured wine produced by maestro Ben Glaetzer in very limited qualities. Savitar features heady aromas and a powerful yet elegant multi dimensional palate. Shiraz is sourced from a single superb site, the elite Lopresti Vineyard's Chinese Block in Willunga, at the southern end of McLaren Vale.

Only the best quality fruit is ever considered by Mitolo, to be aged in the finest oak, for elegant wines of intense richness and complexity. Parcels of Shiraz from vines averaging over twenty years of age are grown on rocky, skeletal soils in the northeast part of the vineyard. Fruit is fermented on skins for fifteen days at 28C to 32C, softening the musts and releasing juices. A slightly longer period on skins ensures a tighter overall structure. Batches are pressed and treated to partial barrel ferment, followed by a natural malolactic before racking. Savitar is matured in a selection of completely new, medium to light toasted, American and Alliers/ Nevers French oak barriques for a term of eighteen months.
 
Opaque black in colour. The most brooding of all the Mitolo wines, aromas of camphor and cassis mixed with cracked pepper, truffles and earth. Layered textural mouthfeel, full bodied and rich whilst maintaining admirable precision. The palate is full bodied, meaty and complex. Well integrated oak and tannin provide elements of structure to the wine, it finishes with impressive length.
Mollydooker Blue Eyed Boy Shiraz

A breathtaking 16% level of alcohol provides Blue Eyed Boy with a measure of mischief to ingratiate the most demanding and ribald bon vivant. A collation of parcels off a tally of elite sites at Coppermine Road, Long Gully Road and the Mollydooker estate vineyard. Barrel fermented and aged in a high proportion of new American oak. Viscous with luscious layers of berries and peppered plum, espresso and chocolate cream. Full bodied over a backbone of well defined tannins, as the wine fills the mouth and continues to evolve with every glass.

Mollydooker take a highly scientific yet artisanal approach to winemaking and viticulture, employing a patented Marquis Vineyard Watering Programmeâ„¢ and Marquis Fruit Weightâ„¢ system. Fruit is treated to a week of ferment at temperatures as low as 14C, closely cap managed and imperatively tasted thrice daily. Batches are pressed while still sweet at five degrees of baume sugar level, into oak barrel for completion and a course of malolactic, an extravagant process which infuses and optimally consolidates the wine. Oak treatment is taken very seriously, working closely with World Cooperage and Heinrich, to develop barrels which are unique to the Mollydooker style.
 
Dark scarlet red. Red currants and licorice spice nose, intense black fruit notes, syrup, pitch and fertile loam. A double punch of fruit to the palate, cherry, red berries and plum flavours develop beautifully into spices and licorice, chocolates and cream. The soft tannins and underlining structure contribute amazing depth and lusciousness.
Mollydooker Carnival of Love Shiraz

The most extravagant celebration of McLaren Vale Shiraz, crafted from a meticulous hand picking of fruit, grown to the resplendent Gateway vineyard at Seaview, fermented and matured within the opulence of exclusively new American oak. Raspberry richness and fully fleshed plum, a twist of the pepper mill and curls of cinnamon oak, the full spectrum of Shiraz flavours from cherries to chocolate, currants, mocha and spice. An outstanding articulation of balance and poise, the lingering, intensely berry compote finish takes Carnival of Love to where Shiraz excels.

The engaging and entertaining flavours of Miss Molly make her anything but shy, her fine effervescence releases the flavour of fresh berries, chocolate plummyness and liquorice allsorts enriching the palate. An assemblage of Mr Riggs wines up to ten years of age, enhanced by an older parcel of Grenache for lift and spice, finished off with a tot of fortified Shiraz from the prestigious Piebald Gully Vineyard, contributing subtle sweetness to a richly complex wine. Battle Axe is a tongue in cheek reference to dearest mother in law, she appears formidable with her powerful pink effervescence, ultimately soothing the palate with her generous nature and refined affability but beware the after punch of her dark fruityness and engaging depth of character.

Mr Riggs makes a perennially bespoke assemblage of great Shiraz vineyards, owner operated by McLaren Vale's most eminent growers, his very own Piebald Gully, Paxton's Gateway and the sensational Martins property. The auspicious sites are located on some of the most fortuitious terroirs in McLaren Vale, narrow planted for low yields and stimulated by cooling gully winds which drift down the Mount Lofty ranges. These are the ideal mesoclimes for Shiraz and have been a source of the most memorable vintages.

Piebald Gully is situated in the coolest subregion of McLaren Vale, bordering Adelaide Hills. Gateway sits at the entrance of McLaren Vale, atop a hill overlooking Gulf St Vincent. Components are vinified in traditional open fermenters before being pressed into a combination of new and prior use French and American oaks for completion and malolactic. Parcels are kept separate throughout vinification and ageing, to be assembled into the finished wine just a few judicious months prior to bottling.

Monapilla is at the base of Willunga foothills, Duckcase is located above Seaview's old holdings to the north of McLaren Vale, the Bradens property is further towards Willunga, originally an almond grove, it is one of Bosworth's most meritorious plantings.

Deep dark red. A brilliant nose of dark red cherry, black fruits, elegant new oak and char, A palate of pristine dark red berries, hints of spice, earth, tar and leather along with seamlessly integrated oak. Ripe tannins are apparent but not overwhelming, for a wine which can be enjoyed now alongside good beef and savoury, tomato based casseroles.
