Chardonnay typifies the Coldstream Hills style, with good varietal expression foremost on the bouquet and palate. There is an emphasis placed on showcasing the fruit and deriving length of flavour. The aim is to construct a wine characterised by elegance and finesse, enhanced by subtle oak complexity. Grapes are selected on the basis of heightened flavour profiles, good balance between natural sugar and acid. Barrel fermented and matured in a combination of new and seasoned French oak barriques, puncheons and vats with occasional lees stirring, completed without any malolactic to remain an essentially fruit driven style.

Oak plays an important role, but does not dominate. Secondary characters of barrel ferments and soil grape solids impart minerality, adding further layers of complexity.

In addition to the twenty year old House and G Blocks, Briarston Vineyard provides an outstanding resource of French Bernard clone, which adds elegance and length. Gentle handling practices, including whole bunch pressings are carried out, every parcel is treated to a course of barrel ferments which adds richness, texture and layers of complexity. Upon completion, components are matured ten months in a selection of seasoned and new French oak barrels, without any malolactic to maintain natural acidity, before assembling into the finished wine.

Corte Giara is a cooperative of the best growers, they assemble their harvests every vintage to create a Denominazione di Origine Controllata, a predominantly Garganega wine in the tradition of the region, vinified alongside a component of locally grown Chardonnay. While remaining true to their regional Italian roots, they are innovatively crafted with inclusions of expatriate varietal grapes to create wines of great interest. Harvests of Garganega and Chardonnay, are all hand picked off fully mature vines in their third decade, grown to volcanic calcareous soils and trained to the Pergola system, planted to southeast facing hillsides at 150-250 metres above sea level in D.O.C. Soave. Bunches are destemmed and gently crushed into fermenters for a day of cold settle maceration, vinified for up to ten days at a cool 15C, followed by partial malolactic in October and four months unwooded maturation.

Kevin John Cullen was a passionate believer in the quality of Margaret River wines and particularly for the potential to achieve one of the world's great Chardonnay growing regions. He established the International Chardonnay Tasting, now in its third decade, to enable the efforts of Margaret River to be compared alongside the best vintages from around the world. Kevin John anticipated that the lessons learned from these comparisons would inspire his winemaking team to optimise the quality of Chardonnay grapes grown to the Cullen estate vineyards.

Grapes are picked at ideal physiological ripeness, after achieving healthy profiles of natural sugars. Acid levels in the fruit grown by Cullen are remarkable, with low pH and fine balance, making any additions for adjustment unnecessary. Chardonnay is harvested around the full moon to a cycle in accordance with the best biodynamic practices. Grapes are whole bunch pressed and spontaneously fermented in French oak barriques, two thirds of which are new, followed by partial malolactic and five months maturation.
