Mataro and Grenache, Carignan and Cinsault are sourced from warmer, lower altitude sites on the Barossa floor. It's the lighter textured quartz and sandy topsoils that produce more perfumed, delicate aromatics and give finesse. Some grapes are off vines as old as sixty years, most Grenache is about thirty years, while some of the Shiraz and Mataro can be from vines that are well over a century old. Winemaker Peter Schell is isolating the finest parcels in the Barossa and Eden Valleys, getting a handle on these old blocks and their different characteristics, capturing and preserving what they have to offer.

Fruit is delivered to the winery, immediately crushed into fermenters and inoculated with neutral yeasts. Each block of Shiraz is separately vinified on skins for eight to ten days. A regimen of daily pumpovers, allowing the colour, flavour and tannins to be gently extracted from skins, contribute to the overall complexity of the finished wine. Upon completion of primary ferments, batches are drained, pressed and seeded with bacteria for malolactic. Components of are sent to mature several months in a selection of seasoned French and American oak barrels before the final assemblage.

Vibrant plum red with purple hues. A fresh and lifted nose of dark cherry, plum and acai berry complimented by a subtle secondary aroma of spice. Flavours of dark cherries and red fruit flow across the mouth with dark blueberry fruit and white pepper. A national flagship wine, articulating the concordance between the Barossa and Eden Valleys, derived from low yielding vines up to a hundred years of age. The meticulous nurture and respect for these Old Vines demands that parcels are culled throughout the winemaking, from pruning in the vineyard until the final stage of sampling the ageing stocks, to determine the best barrels. Ferments are managed with pumpovers and drain returns to aerate as much as possible during the early stages, enhancing colour, flavour and tannin extraction. Parcels are pressed off skins into oak before beeing seeded with malolactic, a bacterial culture which converts natural malic acid to lactic acid, softening and stabilising the wine microbiologically. Each parcel is then assigned the most appropriate selection of seasoned and new, ancient French oak forest barrels. After twenty months maturation, the aged stocks are sampled to determine the final assemblage.

Deep crimson red. Powerful lifted aromas of mocha and dark chocolates, intertwined with soft, underlying dark berry fragrances. The palate oozes classic Old Block fruit, swirling the wine in the glass gives that sense of comfort as the enormous brooding complexity edifies. Rich dark fruits, blackcurrant and boysenberry with smooth chocolate textures, sensual tannins and a persistence of flavour. Decant for two to three hours before serving alongside venison or game.

All parcels are picked at different times during vintage to achieve harvests of perfectly ripened fruit. Bunches are destemmed into a mix of large oaken vats and traditional open top concrete fermenters, juice are gently pumped over the cap and skins twice daily throughout a week and more of vinification. Upon completion, batches are basket pressed and naturally settled before racking into a selection of older, prior use French oak hogsheads, for two years maturation and assemblage without fining or filtration.

Sourced from several elevated sites along the Barossa floor, sixty+ year old vines, assembled with forty+ year old vines from Valley Eden. Grapes grown to the Eden's higher altitudes ripen slower and later than their cousins down in the Barossa, resulting in distinctive quality of fruit with a lower pH and higher natural acidity, elegant, tightly structured and highly prized by winemakers. Batches are separately fermented and treated to an extended maturation in a selection of mostly seasoned French oak barriques.

A pure, single vineyard wine, from fruit picked off a single plot of Shiraz, planted 1960 and still managed by the same family. The rocky surrounds of Greg and Cynthia Knight’s highly elevated block of vine were so very reminiscent to winemaker David Powell of stone burial grounds on the hills above Torbreck forest. Nestled into the eastern slope of Mt. McKenzie, this cherished site yields a harvest of parched, intensely flavoured berries, brimming with extraordinary character, lined with the most graceful tannins, endowed with remarkable balance, elegance and poise.

Upon completion of ferments, vats are drained and components are treated to a basket press, racked into a selection of seasoned French oak barriques for a course of malolactic and eighteen months maturation, to be bottled unfiltered and unfined.

Dark black red, inky hues. A stirring nose of graphite smoke, crushed rocks and blackberry liqueur. Velvet palate of perfumed cherry, plum and dark currant flavours, persistent and refined. A partnership between Torzi and Matthews, they stumbled across a small, frost pocketed hollow on beautiful Mt McKenzie in Valley Eden. Torzi Matthews fell in love with the area for its remoteness and diverse thin soils. Attraction to the site was immediate, it was clear that this patch would produce low yields of Shiraz which could translate into the luscious style of dry racked Italian Appassimento wines. There were plenty of detractors and lots of unsolicited advice. The vines went in, frosts came and yields were low, Frost Dodger was born.

Frost Dodger are crafted via non intervention techniques. A diet of composts, native grasses and flora is used for ground cover, low water imput and natural sprays for diseases. Grapes are gently destemmed, a third is included as whole bunches into open fermenters for a warm vinification to indigenous yeasts. Pumped over, hand plunged and basket pressed to oak for completion of ferments. The final wine is matured in a selection of seasoned and new, French and Hungarian puncheons and barriques for twenty months.

Licorice and pepper, an remarkable intensity within a singularity of power, elegance and finesse. The Torzi Matthews team work to a formula that low yields translate into big, flavoursome wines. They selected a property in one of the most inhospitable parts of Eden Valley, where unending toil and frigid climes realize meagre amounts of parched berries each vintage. $2399each $287DOZEN EACH DOZEN The Mt McKenzie site is subject to traditional biological farming, a diet of composts with native grasses and flora as ground cover, low water input and natural sprays to keep disease under control. Vines eighteen years of age are grown to clay loam over a shaley schist rock bed, trained to single wire trellis. A very minimalistic handling includes a component of whole bunch, open top vinification and wild yeast ferments, soft pumpovers, hand plunging and an old fashioned basket press. Components complete their ferments and eighteen months maturation in prior use Frost Dodger barrels and seasoned French Cadus et Radoux oak barriques, before bottling, unfiltered and unfined.

Vibrant palate of mulberry, rasberries and cherry, espresso and chocolate, festive spice and all things nice, finishing long and complete on a length of fine grained tannins.
