The cool climes of High Eden Ridge, the large clonal variation and the very different aspects of the Mountadam blocks necessitate careful attention to the ripening of fruit. Fruit is harvested throughout the chill of night and gently pressed, juice are fermented in an extravagantly high proportion of new French oak barriques and treated to the occasional lees stirring battonage, completion of malolactic, racked and returned, followed by a year's maturation and final racking before assemblage.

Light golden hue. Classic Chardonnay fruit aromas of peach, nectarine and nashi pear. A rich barrel ferment palate of grilled nuts with clove and nutmeg spice supported by a citrus grapefruit core, all contributing to the immense flavour and length. Marble Hill was a stately old manor in the Adelaide Hills, the colonial Governor’s summer residence. Planted to a unique clone of Burgundy Chardonuet in the 1860s, the ancient vines came to the attention of the legendery David Wynn, who removed cuttings back to Mountadam, the oldest cool climate Chardonnay vines on the continent. The original stocks in Burgundy were wiped out by phylloxera and Marble Hill was destroyed by fire in the 1950s. There truly is no Chardonnay in the world like Marble Hill.

Determining the optimal date for picking is essential to constructing a wine of balance and finesse. Following harvest and the crush, batches are drained directly into French oak hogsheads set in a cool environment allowing natural yeasts present on the grapes to initiate ferment. Upon completion, the wines are treated to partial malolactic, barrels are topped up and stirred regularly for eight months prior to stabilisation and bottling.

Fine green/ gold tinge to the colour. Lovely nose of cut stonefruits and lemon preserve, hawthorn and ripe nashi. A lovely balance of fruit complexity on the palate has been derived from rich barrel ferments and battonage. H&V will acquire a deeper gold colour and become richer in flavour as it evolves. Today it represents a very ready to appreciate Chardonnay alongside chicken roast and rabbit terrines.

Pinot Gris has found the perfect idyll within the cool climes and elevated aspects of Valley Eden. The long slow ripening produces an exceptionally well balanced style of Pinot Gris with heightened acidity and brisk natural fruit characters. An aromatic, textural white wine that's so highly engaging, while serving as a contemporary Australian take on the established French style. H&V's mouthfilling and complex, layered palate makes it a cinch with food and a fine match to all cosmopolitan faire.

$2299each $275DOZEN EACH DOZEN Parcels of Pinot Gris grown to a splendid site, high up the Eden Valley, atop bony, rocky soils, are picked a little later in the season to make a more textural style of wine. Following harvest, grapes are crushed and the juices drained immediately away to ensure a finished wine of delicacy and softness. A small portion is inoculated in French oak hogsheads to create a Pinot Gris of characteristic barrel ferment richness, the balance is treated to vinification in chilled fermenters to retain the urgency of Eden Valley fruit. After a few weeks on sedimentery yeast lees, components are assembled, stabilized and bottled early to preserve freshness. Alcohol 13.0%

Delicate colour with a green tinge. Bouquet of freshly cut pear, blossoms and pine nut, nashi and quince. The palate is rich and soft, offering lemon zest stonefruit flavours, hazelnut and vegetable, textural with a mineral crunch, before a pleasingly dry finish. Named for Andrew Wigan who has been the maker of every Riesling bottled under the Peter Lehmann label since the very beginning, Wigan is a testament to Andrew's success within Australia and the international show circuit. From low yielding Eden Valley Riesling vineyards, the grapes are picked early and chill fermented for a fortnight. Upon completion, Wigan is treated to clarification and bottled immediately, followed by five years ageing under the Peter Lehmann cellars.

The Pewsey Vale property was first planted to Riesling by Joseph Gilbert in 1847. They believed the site could produce delicate Rieslings in the Germanic style. High in the Eden Valley's low fertility, grey and sandy loam soils, a prolonged ripening late into the cool autumn season develops recognizably consistent flavour profiles, today known as classic Pewsey Vale.

From a clone planted in the Eden Valley during the 1800s, traceable to some of the original vine cuttings brought into Australia by James Busby. Any new plantings are propagated from the original vines. Pewsey Vale is not an easy vineyard to manage. Lean and hungry soils which limit the vigour of the vines, the high altitude and the vineyard's specific microclimate have necessitated the adoption of specialised viticultural management. The property itself is an idyll of gently undulating hills, fifty hectares of which are under vine, nestled close to Pewsey Vale Peak, just west of Eden Valley town centre.

Pale straw, green hues. Intense fruit aromas of talcum, crushed stone and lemon lime fruit with a hint of overlaying dried herb. The palate shows great length and depth with lime, a hint of white flowers and fresh rosemary, finishing with a fresh natural acidity that balances the intensity and minerality. Flavours evolve elegantly, toast, orange blossom and honey can be expected, while retaining the classic fresh citrus lift and palate weight of Pewsey Vale.

The quality of fruit from Pewsey Vale Vineyard, higher up the contours of Eden Valley, is a reflection of altitude and low fertility, grey, sandy loam soils which prolong ripening late into the cool autumn. This longer season develops unique flavour profiles which are classic Pewsey Vale. Contours is Pewsey Vale's flagship, held back for five years under the estate cellars. The grapes themselves are picked from the oldest vines, established to contoured rows in 1962. This exceptional wine already shows signs of bottle development immediately upon release.

Block to block variation enables winemakers to select from separate parcels of fruit, tailoring wines to the Pewsey Vale style, ensuring consistency from vintage to vintage.

Clean and dry with refreshing natural acidity, Contours is only just showing the first signs of bottle age after five years. The wine continues to evolve as it unravels layers of complexity, any sweet fruit characters will continue to retain vigour and vitality alongside the toasty, aged qualities.

Inspired by elder bottles of Pewsey Vale Riesling, Yalumba resolved to make an early harvest wine with lower alcohol, a fine balance of natural acids and idyllic levels of residual sugar. Prima is made from grapes picked three to four weeks before the rest of the vineyard. Chosen for their fine citrus flavours, grapes are carefully selected when their natural sugar levels are near 10° Baume. The wine is finished to a semi dry style which retains some of the fruit in balance with chalky mineral acidity, exhibiting purity of style, as it evoves layers of toastyness and spice.

Gilbert trialled many different grape varieties at Pewsey Vale, later distributing cuttings to aspiring growers in surrounding areas. Pewsey Vale eventually fell into disuse until 1961, when the estate's proprietor Geoffrey Angas Parsons, paid a visit to his good friend Wyndham Hill Smith at Yalumba with a proposal to restore the ancient Pewsey Vale Vineyard. Prima is bottled to enhance the exotic nature of this wine whilst preserving its pure fruit flavours. The naturally lower alcohol of the wine further heightens its refreshing character.

Very pale in colour with green hues. The aroma has a hint of the classic Pewsey Vale but is most redolent of lemon blossom, nectarines and lychees. The palate shows great length with a vibrancy of perfumed fruits such as guava and sweet peach overlaid with a touch of spicy clove. The balance of the wine is succulent and mouth watering as it invites a second glass. Exhibits a purity of style, slowly developing flavour layers of fresh toast and spice.

Pewsey Vale once succumbed to the fate of so many of Australia's great, foundation vineyards, falling into disuse as a result of severe economic hardship. The site's potential was rediscovered at a time when only the history books recorded any existence of the original plantings. The long ripening periods at such altitudes encourage rich flavour profiles, known today as classic Pewsey Vale. The winemaking is simple and natural, hand picked grapes are whole bunch pressed directly to older oak barrels for ferment by indigenous yeasts.
