Vitulus provides an entry level to the Reschke family of statuesque Cabernet wines. Vitulus is barrel matured without being heavily oaked. The aim is for roundness and length derived from time spent in barrel, but not to interfere too much with the complex, defined fruit characters which are the hallmark of Coonawarra Cabernet Sauvignon. Its judicious level of natural acidity will see Vitulus develop slowly and gracefully, achieving great complexity as exciting cigarbox and chocolate characters evolve.

Intense colour, almost black with crimson edges. Aromas of plum, cassis and cedar with some stalk. Sweet blackcurrant on the palate, blackberry and dark chocolate flavours upfront followed by stalk and savoury characters. A well rounded Cabernet wine, soft in texture, offering plenty of cassis and spicy, almost peppery flavours. The structure is firm but not astringent, plush and soothing whilst offering great length.

John Riddoch founded Coonawarra in 1890, the list of his accomplishments in the development of Coonawarra as a premiere agricultural region is breathtaking. His descendants were also highly accomplished, among them are polar explorers and scientists, sailors and equestrians. Riddoch's great grandson established Rymill on the very centenary of Coonawarra in 1990. Stately and profound, the definitive Coonawarra Cabernet, displaying benchmark regional style, distinguished yet approachable, decanting is recommended before service.

Peter Riddoch Rymill, great grandson of Coonawarra founder John Riddoch was a keen equestrian. He studied Science at Adelaide University and developed new breeds of cattle. He diversified into viticulture in 1968 with an experimental vineyard and pursued studies at oenology before establishing Rymill Estate in 1990. Parcels of choice Cabernet Sauvignon are selected from fully mature vines and treated to a rich barrel fermentation to produce a full bodied, richly flavoured Coonawarra wine. Matured up to two years in a selection of seasoned and new French oak, principally 225 litre barriques from trees planted up to three centuries ago to provide timber for the French navy.
 
Good intensity and depth of colour. Undeniably Coonawarra with its pleasant dusty character, fresh red fruit aromas and hints of tomato leaf. Incredibly complex and absolutely delectable with flavours of berries, strawberry seed, homemade plum jam, orange peel and savoury spice. Well integrated oak, a slight smoky character and good tannin structure, it ticks all the boxes.

John Riddoch founded Coonawarra as an agricultural district in 1890. His daughter married neighbour Robert Rymill, they had a son who became a distinguished equestrian and lead the 1934-37 British Graham Land Expedition to the Antarctic. It was his son who founded the Rymill wineworks in 1974. Rymill make a powerful Coonawarra wine from harvests of Shiraz grown to distinguished old vines up to forty years of age, enhanced by an extended ageing in predominantly French oak, to achieve harmony, contribute volume and enhance depth.

A distinctive, cool climate effort from Australia's most precious Terra rosa soils, Shiraz has long thrived in Coonawarra and comprises the oldest vines on the Rymill property. Following the crush, fruit is inoculated and vinified in twenty tonnes capacity rotary fermenters, which periodically mix the fruit and keep the skins moist, maintaining ferments between 20C and 25C. A select culture of natural yeast is employed, which retains attractive berry aromas while dominating any wild yeasts which might impart disagreeable flavours. The finished wine is matured up to two years in a selection of new and seasoned French and American oak barrels.
 
Dark cherry red with purple hues. Rich, intense nose with lashings of black fruit, dark chocolates and white pepper. Red fruit flavours of plum and strawberry come through on the lifted palate, balanced and smooth. Integrated oak with lovely savoury notes, sweet berry fruit, appealing cinnamon spice and dusty cocoa characters, lingering on a beautiful long lasting finish.

Yearling has been subject to the same adroit vinification techniques lavished on the Rymill flagships. An exclusively estate grown wine with fresh aromatics by virtue of cool maceration and expeditious ferments. The soft, supple and approachable structure has been achieved by an early, gentle pressing. Designed to be forward drinking and fruit driven, components have been treated to minimal maturation in French oak barriques.
 
Dark cherry red. Blackberry and currants, tomato leaf and rhubarb, mint and strawberry nose. Spicy and herbaceous palate, velvety and round. Yearling is finely structured and well integrated, dusty tannins matching the dash of fruit and spice. The finish is deliciously refreshing with elements of mint and plenty of fresh, juicy fruit. Following the harvest, grapes are inoculated and vinified in twenty tonnes rotary fermenters, which periodically mix the fruit and keep skins wet, maintaining temperatures at 20C to 25C. A natural culture is employed, selected for its capacity to preserve attractive berry aromas while keeping wild yeasts in check. Regular tasting twice daily throughout a week of vinification is followed by a term of maceration on skins for optimal extraction. Batches are pressed, assembled and racked to a selection of pre loved oak barrels for a brief but judicious course of maturation, aimed at integrating all components and taming the tannins, while retaining fresh Coonawarra fruit character.
 
Deep purple, magenta hues. Dark cherries and plum notes, blackberry and fruit compotes, liquorice, vanilla and cedar box oak. The fruits carry on to the palate, vibrant, generous and round, supported by soft tannins, following through with a subtle spiciness on the finish. Yearling has been fashioned to enjoy today around the dinner table alongside a crackling roast lamb.
St Marys House Block Cabernet

St Mary's Winery is situated on a strip of Terra rossa soil, some fifteen kilometres west of the township of Penola. Originally a grazing property, the poor topsoils working in combination with rich Terra rossa underneath, yield scant quantities of the most powerfully flavoured wine grapes. Exclusively estate grown Cabernet is harvested for the creation of St Mary's House Block, a wine of overall richness and fine palate structure, dense with varietal fruit character and Coonawarra charm, harmoniously integrated after extended ageing.

The exclusive little vineyard is sited on part of a grazing propertry that has been owned and operated by the Mulligan family since 1937. The vines are planted on an elevated area of Terra Rossa soil over limestone. The soils are generally very stony. Some of the more austere parts of the vineyard are virtually pure rock. The vines that have survived on these stony areas produce relatively small tonnages compared to local averages. Small batches of hand picked grapes are fermented in open vats, basket pressed and barrel matured in climate controlled storage before being bottled on premises. Treated to an extended maturation in a selection of American and French oak hogsheads.
 
Black cherry colour with deep ruby hues. The bouquet is an enticing mixture of ripe, blackcurrant fruit characters complemented by gentle integrated French oak. House Block Cabernet demonstrates exquisite balance, fine Coonawarra richness persists, sultry aromatics expressing regional mint along with pepper and new leather over olives and graceful vanillan oak culminate on lingering and supportive tannins.
The Redman Cabernet Merlot Shiraz

From the Redman family's forty year old vineyards in the heart of Coonawarra, the most superior parcels each year yield a vintage of just eight oak hogsheads. Bill Redman's consuming passion was to make good red wine. His faith in Coonawarra Terra rossa as a world class winegrowing region was vindicated in 1936 when Redman Claret won the London Empire Wine Show. The best barrels are identified and assembled into the final Redman for a term in oak and a decade of repose in bottle under the estate cellars. A mere 200 dozen are made.

Harvests of Cabernet Sauvignon, Merlot and Shiraz are vinified in a mix of static and open concrete fermenters for a week, half of the batches are run off skins into completely new French oak hogsheads. Upon completion, components are racked off lees, the barrels rinsed and the wine returned. The balance is filled to seasoned French oak hogsheads for a course of malolactic. The most superior batches are set aside for assemblage into The Redman, treated to a further course of oak maturation and bottles for an extended term of age at the Redman wineworks until release.
 
Deep brick red. Dominated by gummy berry fruit bouquets, complexed by evolved Coonawarra characters of tobacco and cigar box, leather and terra earth. A finely structured palate of the most intense fruit, berries and mint supported by soft, praiseworthy tannins and juicy acid backbone. The flavours persist long and lingering on to the endless, mouthfilling, savoury finish.

Thomas Hardy was a visionary who embarked upon a journey to deliver a dependable range of the highest quality table wines to the nascent Australian market. He established his brand in the 1850s, at a time when most of his contemporaries were struggling to produce a wine which would appeal to the Australian palate. The Hardy company of today still retain some of the finest viticultural assets in the nation, the princelings of Coonawarra plantings are set aside in the most outstanding vintages, to be crafted into the national icon Thomas Hardy Cabernet.
