$1799each $215DOZEN EACH DOZEN The story of Oomoo begins as Thomas Hardy's first wine venture at Bankside, a property on the banks of River Torrens just west of Adelaide. Hardy's now retain the finest Cabernet vineyards in Coonawarra and beyond. Fruit is harvested and taken to the Hardy wineworks for crushing, followed by a term of cold soak maceration. Exacting techniques are employed to manage the amount of contact between pulp, juices and skin for optimal extraction of flavour and tannin. Parcels are treated to a combination of new and old world winemaking techniques, inoculated in a combination of fermenters and vinified at controlled temperatures. The finished wine is matured for a year in a selection of fine French oak barriques.

Deeply crimson with garnet hues. Fragrant varietal leaf characters, mints and cassis, liquorice and cedar, blackcurrants and aromatic mocha oak, lifted sage notes. The palate is all about luscious mulberry and blackcurrant flavours, supported by spiced chocolate oak and regional mint, the tannins are seamless, offering terrific line and length. Oomoo will suitably accompany a slow cooked duck or marinated cutlets of lamb.

Vinified from a selection of fruit grown to older vine Cabernet Sauvignon planted in the shallow Terra rossa soils of Neilson's Block, replanted by Ian and Wendy Hollick circa 1975, with a contribution from the Wilgha vineyard, acquired in 1987. Hollick know that great wines are made on the land, to this end, grapes are handled carefully to retain the exquisite fruit flavours of the vineyard. A measure of barrel ferments, followed by twenty months maturation in a selection of new and seasoned French oak, achieves elegance and builds sound structure.

Ravenswood Lane is the link between the Hollick Coonawarra Vineyards, namely the Neilson's Block. First vintaged in 1988, Ravenswood is only released when the wine satisfies the very exacting quality parameters set by the Hollick team. The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood, typically the fruit comes from the oldest vines growing in very shallow Terra rossa soil. Released in extremely limited quantities, it stands as an icon Coonawarra Cabernet Sauvignon of great significance.

Extensive canopy renovation has envigorated the vines and revitalised the quality of harvest. Consistently producing some of Coonawarra's best Cabernet, the cream of crop is earmarked for Ravenswood. Once in the winery the utmost care is taken to preserve the unique and exquisite fruit characters which are its raison d'être. The fruit begins vinification in fermenters before being filled to completely new Tarandsaud & Seguin Moreau French oak barriques for completion and eighteen months maturation.

Dense crimson with purple hues at the rim. Lifted, penetrating aromas of blackcurrant and plums, cassis and black olive. A wine of genuine class with intense flavours of dark berry fruits and hints of dried herbs, menthol and chocolate oak, over integrated and soft, fine grained tannins that ensure the wine is approachable in its youth, the track suggests it cellars exceptionally well. Following the harvest, bunches are minimally handled to retain the intense fruit flavours of the vineyard. Partial barrel fermentation, followed by eighteen months maturation in a combination of French and American oak barrels, infuses elegance, structure and a long finish to the stately palate.

Excellent Langtons Classification. The consumate Cabernet, one of Australia's icon wines. John Riddoch brewed up Coonawarra's second vintage in 1896 under a woolshed which now ages barrels of Katnook Cabernet. The original Coonawarra Fruit Colony itself was headquartered in a limestone building which now serves as cellar door. Vines have been trained over the course of decades to extract maximum flavour from the long slow Coonawarra ripening, achieving harvests of Cabernet with ripe generous flavours and fine lingering tannins.

Katnook is home of the finest Coonawarra Cabernet, its vineyards, planted to prime Terra Rossa soils comprise two hundred hectares at the heart of this comparatively small and remote region, affording Katnook full licence to collate and assemble parcels of the finest fruit. Batch vinification takes place in closed static fermenters with regular pumping over. Upon completion, parcels are macerated for a week or two before transfer into a selection of seasoned and new 225 litre French and American oak barrels for thirteen months maturation. Alcohol 13.5%
