There are only two hectares of Merlot at Haan but they have yielded a conspicuous tally of the nation's most memorable vintages in grand Barossa Merlot. The original property along Siegersdorf Road was acquired 1853 by George Friedrich Schmidt for the cost of a pound an acre. The excellence of the harvest from this princely parcel, known to neighbouring Barossans as Hanenhof, has established a celebrity for Merlot which belies its tiny size. An edifying indigo whorl of sweet and savoury fruits, supported by cedar, while seasoned by a soupcon of sage and spearmint spice.

The nation's preeminent vintage of pure Merlot, from precious parcels of tightly packed berries, picked off fully mature vines at a magnificent old Barossa site. Treated to traditional vinification and extended term of age in an extravagant selection of French oak, Haan's black cherries and ripe plum bouquets, precede a rich, voluptuous palate, brimming with ripe fruit flavours, festive cake spice and delicate mocha oak, all supported by silky grape tannins. An august Merlot wine of great length and persistence, Prestige should be decanted three hours before service.

The pick of Hanenhof Vineyard Shiraz, a superior site of closely coddled vines at Tanunda on Siegersdorf Road, cropped to a scant 3½ tonnes per acre and ripened to 15° baume before harvest. Prestige is inoculated with choice strains of yeasts to enhance the eloquence of fruit and maximize depth of palate, plunged and pumped over thrice daily, as the fermenting wine is allowed to rest on skins for a week. Batches are racked into a selection of the finest French oak barriques for a course of malolactic and an extravagant two years maturation.

Development of the site to the most exacting standards has been the keystone of success, to which must be added the consuming pursuit of excellence. An assemblage of Cabernet Sauvignon and Franc, Merlot, Malbec and Petit Verdot, the mesmerising Medoc style of rich Barossa red, deeply flavoursome and powerfully driven by concentratations of fruit.

No other wine in the world could manage such a monumental debut as that made by the stately Tappa Pass Shiraz. Henschke work at the top of their form, to infuse every bottle with the unique energy of historic Barossa vineyards. The very old, low yielding vines are grown mostly to low fertility Neoproterozoic soils more than a half billion years of age, ranging from red brown earths to Terra rossa. The fully ripe black Shiraz grapes are sourced from grower owned vineyards in the Tappa and Light Passes, earmarked by Henschke and vinified in traditional open top fermenters. Matured in a high proportion of new French oak hogsheads for eighteen months prior to assemblage.
 
Deep crimson, violet hues. Intense, fragrant aromas of blue and black berry fruits, satsuma plums and ripe mulberries interwoven with creamy cedar, mocha and roast meat nuances, subtle hints of Thai spices and flint. The palate is rich, round and lush, layers of concentrated dark plums and black fruits, an incredible intensity of flavours and beautifully balanced silky tannins for a long, fine, assertive finish.
Hentley Farm Barossa Shiraz

The family Hentschke have been Barossa farming since 1842, they know from good soils and settle on nothing but the finest land. Keith Hentschke chose a special site along Greenock Creek, at the intersection of Gerald Roberts and Jenke Roads, in the ancient winegrowing hamlet of Seppeltsfield to plant vines in the early 1990s. They now yield vintages of the most amazing concentration, saturated with the essence of grand Barossa Shiraz, a remarkable intensity of chewy bramble berry flavours, heady jube perfumes and soft, savoury chamois tannins.

The fortuitous soils at Hentley Farm are predominately red clay loam over shattered limestone, salt and pepper siltstone over a layer of bluestones at greater depth. All vines are dry grown on their own roots, with an emphasis on keeping the vine and earth in a natural state of balance with minimal interference. Shiraz is crushed and destemmed, pumped over two or three times daily for optimal extraction. Batches may spend up to several weeks vinification on skins before pressing and settling. Ferments and malolactic are completed in a selection of seasoned amd new French oak barrels, followed by ten months maturation and the final assemblage, unfiltered and unfined. Alcohol 14.8%
 
Deep dark scarlet red. Lifted nose of black currants and dark cherry, raspberry notes, satsuma plum and black olive. The palate is layered with Barossa richness over a length of soft succulent tannins, supported by dark fruits and balanced acidity. Lingering cherry and licorice add complexity, the balance of fruit intensity and oak through the back deliver a Shiraz of remarkable length.
