The intensity of fruit in Cameron Vale mark it as being from a very special site. Unique microclimes and soil permit varietal characters to fully develop, yielding grapes of intense concentration and rich flavour. After crushing and de stemming, juices are vinified on skins for a week, temperatures peak at 26C early on in the ferments before being brought down to 22C. A quarter of the components are left on skins for a month, adding structure and enhancing the colour. Following completion and an extended maceration, parcels are treated to full malolactic in barrel. The assembled wine is then transferred into a high proportion of new and seasoned French and American oak barrels for eighteen months maturation.

Inky black in colour with vibrant purple hues. Dark fruits and blackcurrant are dominant on the nose, with hints of savoury spice courtesy of French oak. The palate is generous with dark fruits, ripe plums and a hint of chocolate with the richness of the wine balanced by fine, silken tannins and a refined structure. The rich and complex characters are a delicious match to aged beef or roasted kangaroo.

Grant Burge's Filsell property is planted to vines almost a hundred years of age, it is considered one of the finest vineyards in Barossa Valley and consistently yields vintages of great intensity and concentration. The lower cropping and limited harvest of these stately old vines translates into a Shiraz of opulence and remarkable balance. All individual pickings of fruit are separately crushed and vinified. Juices reach 28C at the onset of ferments before being cooled to 22C for a week. Batches are pumped over thrice daily before a gentle press and transfer to a selection of new and seasoned American oak barrels and French hogsheads for completion of ferments and twenty months maturation.

Deep, dark red with purple hues. Nose of dark chocolate, licorice and lifted raspberry fruit over hints of lavender. The palate is full of intense red berry fruits, ripe blackberries and rhubarb infused by lifted spice and rich vanilla, milk chocolate notes. Beautifully weighted with optimal balance between ripe, concentrated fruit flavours, sweet spices, tannins and acidity. A silky, well rounded fleshy fruit style, to partner with oven braises or mature cheddar.
Grant Burge Hillcot Merlot
Barossa
Available in cartons of six
When Grant Burge released his first pure varietal Merlot, there were only two other such wines in Australia. Burge is a pioneer of Barossa Merlot, planting the first exclusively Merlot vineyard at Hillcot in 1980. The fully mature vines can now yield grapes with intensely concentrated flavours, displaying the charm and characteristic softness expected of truly fine Merlot. Often called upon to soften the palate of more tannic varietals, pure Merlot makes a natural match to lamb and potato recipes.

Fruit is harvested off twenty year old vines, planted to Burge's Hillcot property in the Barossa. Grapes are delivered immediately to the Burge wineworks at Tanunda and crushed into static overhead fermenters, where they remain on skins for a week of extraction. Ferments are allowed to peak at 32C, then cooled to 22C, for the retention of plummy fruit characters. Juices are racked and returned every second day, pumped over thrice daily to further intensify the colour and flavours. Batches are transferred to a selection of American and European oak puncheons for completion of ferments, followed by the final assemblage and return to barrel for twenty months maturation.

Ruby red in colour. A bouquet of red fruits and blackberry, sweet spice and hints of dark chocolate. The aromas are complimented by a subtle herbal earthiness and charry oak. Grant Burge Holy Trinity GSM
Barossa

Grant Burge holds great reverence for the outstanding quality of Barossa Grenache, Shiraz and Mourvedre old vines fruit. He is inspired by the way they can coalesce into a wine that's so much greater than the sum of parts. Holy Trinity is modelled on the efforts of the southern Rhone, a style which early settlers recognized would excel in the idyllic climes and terroirs of Barossa Valley. An artisinally crafted wine, from grapes hand picked off old, dry grown vines, the youngest being some fifty years of age, the oldest is well over a hundred and twenty.
