Rolf Binder's story begins in 1950 when his parents arrived from Austria and Hungary, part of the large influx of post war immigration. They worked the Victorian railways for three years and picked grapes in the Barossa, before acquiring an old winery on Langmeil Road in 1955. RHB is made in the way that Rolf's father enjoyed his wine, full bodied, opulent, the old world style of Aussie claret with solid tannins in support of powerful fruit. An extravagant two year term in French and American oak hogsheads, integrates RHB into a whole that's so much greater than the sum of parts.

A backbone of Christa Rolf and Heinrich vineyards Shiraz, assembled alongside five choice Barossa parcels, embellished by the inclusion of estate grown Mourvedre and Grenache. All batches are crushed as one, pumped over and traditionally worked throughout the course of open ferments, followed by a year in American and French oak hogsheads. Blood red, bramble berries and dark bitter chocolate, pepper and anise, seamless and sound, its generously proportioned palate, exquisitely balanced over a languid length of creamy, velvet tannins.

Only ever bottled in the finest vintages, fruit is sourced from the superior Ahrens Vineyard at Lyndoch and the historic Moorooroo site at Jacobs Creek, which for more than 120 years, ended up with Orlando. Moorooroo is made from the four remaining rows of the original William Jacob Shiraz plantings, saved from the government sponsored vine pull schemes of the 1980s by estate patriarch Ed Schild.

In 1846 William Jacob accompanied Colonel William Light on the Seven Special Surveys expedition to open up Adelaide's north. Jacob and his brother John claimed the rich alluvial junction of Jacob's Creek and the North Para River for future farming opportunities, which they established shortly after. Moorooroo has been produced from the remaining four rows of original Shiraz plantings, saved from the vine pull of the mid 1980s by Ed Schild. Grapes are crushed and open fermented until dry. Moorooroo is matured twenty four months in a mix of new and prior use French oak hogsheads, followed by a minimal filtration and bottle ageing under the Schild cellars for a further two years.
 
Dark purple colour, almost black. Brooding bouquet of dark berry fruits, mocha and chocolate notes. An opulently rich style, showing cherries and subtle oak, vibrant floral fruit flavours evolve, a lovely palate borne perfume. Moorooroo defines power with balance in control, supported by fine, firm tannins before finishing integrated and immeasurably long.

Growing just a short distance north of Lyndoch Township, the feted vines on Schild's Liebich and Angus Brae blocks are meticulously husbanded to fully exploit the bounty of influences offered by the exceptional terroir and clime. Each vintage, certain parcels emerge as the stars. The Schild team set aside the pick of harvest for a highly deferential treatment, a minimal movement of juices throughout the vinification, as truly great wine needs to be unperturbed in the making, a generous style of unsurpassable excellence, elegance and finesse.

Picked at perfect ripeness, bunches are destemmed and crushed into open fermenters, inoculated and vinified, treated to regular pumpovers whilst in contact with skins, extracting deep colour, optimal flavours and judicious tannin. Upon completion of ferments and a course of malolactic, components are filled to a selection of seasoned and new French oak hogsheads, integrating intense fruit flavours while infusing subtle complexities, imparting a measure of cocoa warmth while softening the tannins. It remains a lovely surprise at assemblage time to see which barrels shine from the depths of the cellar to be worthy of inclusion into Pramie Shiraz.
 
Deep, dark ruby red. Full, soft and layered with aromas of vibrant blackberries and blood plum fruit, cedar notes, fresh vanilla bean, pan forte and clove spice. Intense primary fresh plum flavours, pure lifted blue and black berries, graphite and clove give way to a rich, dynamic palate of immeasurable length, discipline and control, truly great Shiraz of marvelous character, elegance and finesse.

Schild Estate's reputation is built on a commitment to translating the unique tapestry of vineyards into wines that speak of honesty and drinkability. Schild's Shiraz is another fine example of a classic regional style sourced exclusively from vines grown toward the southern end of Barossa Valley and the Schild Estate Angus Brae property. Fully ripened grapes are harvested throughout the cool of night. After crushing the musts are vinified in traditional open fermenters and given extended time on skins to carefully extract the full amount of colour, flavour and complexity. The wine is then treated to an extended maturation in a selection of new and prior use French and American oak hogsheads.
 
Vibrant, deep rich red colour. A nose of ripe cherries and plum, dark chocolates, christmas cake spice and vanillin undertones derived from the extended maturation in fine oak. A middle palate of vibrant, dark berry fruit is supported by clearly defined yet elegant tannin framework and some balanced acidity to provide structure and length. Long and lingering, bright, aromatic acids and a powerful intensity of fruit.

The Schild Estate vineyards sprout Shiraz grown to vines planted by the earliest Barossa settlers. Slightly cooler than its northern neighbour, the southern end of the Barossa Valley is perfect for growing Shiraz vines capable of providing lush, generous fruit, ideal for the production of sparkling Shiraz. A single vineyard wine from a small parcel on the estate Aherns vineyard near Lyndoch, harvested in mid March each year, destemmed and left on skins over several days for extraction. Juices are vinified in open top fermenters and allowed to develop for a year in seasoned French and American oak hogsheads. The wine is then put through a secondary fermentation and doseaged prior to bottling.
 
Dark cherry red, persistent mousse. Rich and inviting aromas of blackberry, dark plums, cherries, chocolate and licorice. Vibrant berry fruits and pepper spice are supported by a soft tannin structure with balanced acid and sweetness giving the wine a fine bead and creamy, elegant mouthfeel. Schild is an ultra fine example of a uniquely Australian winestyle, the finish is fresh, plush and lingering.

Hand picked grapes off the estate Home Block on the eastern ridge of Barossa Valley, the frugal vines yield a meagre harvest of small berries exhibiting the most amazing concentration. Bunches are destemmed to fermenters and cold soaked for the magic of wild yeasts, several days of cool vinification are treated to hand plunges and rack returns until completely sugar dry. A good old fashioned basket press and ten weeks of malolactic are followed by twenty four months of age. Succulent tannins and enormous length, Barossa Shiraz that speaks of its provenance, of season and of place.

Sons of Eden Eurus Cabernet Sauvignon

The temperate climes of Valley Eden are cooled by easterly gully winds, which ensure a long slow ripening and complete development of varietal characters in the grapes. A harvest of Cabernet Sauvignon from the warmer northern parts of the Valley, planted to auspicious red soils over limestone, is vinified alongside fruit from a cooler Eden Valley site, coalescing into a cornucopia of brambleberry and dulcetly perfumed blue fruit flavours. Only ever made in the most outstanding vintage years, barely more than a hundred dozen of Eurus were produced.

A collation of harvests from two superior Cabernet vineyards in Eden Valley, low cropped sites in the Moculta and Keyneton districts, yielding two tonnes or less per hectare. A variety of vinification techniques are employed, according to the individual character of each parcel, extended skin contact time and daily plunging to gently extract good colour, rich flavours and refined tannin. The active components are pressed to a selection of seasoned and new French oak hogsheads for completion of ferments, malolactic and twenty months maturation, naturally clarified, lightly fined and bottled with minimal filtration. Alcohol 14.5%
 
Deep crimson colour. Complex array of blackberry and cassis, varietal leaf, violets and plum notes. On the palate pronounced blackberry characters are complemented by red currant, dried herb and anise characters, a powerful Cabernet wine of excellent definition and great length, finely structured and supported by silky, persistent tannins.

The topical old vines Barossa cépage of Grenache, Shiraz and Mourverdre, fashioned to a style which would have warmed the hearts of the earliest Barossa settlers. The dominant component of Grenache is picked off an exceptionally low yielding property at Light Pass, originally planted by the Kennedy family in the 1960s. Leo Joe Kennedy husbanded these precious old vines for decades, he knew each planting by name and reserved the pick of fruit for inclusion into many of the Barossa's most memorable vintages.

Two thirds Grenache, sourced off precious sites in the Light Pass and Rowland Flat precincts of Barossa Valley, a quarter of Shiraz from Seppeltsfield and Gomersal, the balance of old vines Mourverdre from Moppa and Light Pass. All components are separately handled, most are sent for a warm vinification in a mix of traditional fermenters at temperatures peaking to 30C. Grenache and Mourvedre are macerated on skins for ten or two or three weeks before being pressed straight into a selection of seasoned French oak hogsheads and puncheons. The finished wine is treated to sixteen months maturation on gross solids, without any racking or clarification until the final assemblage. Alcohol 14.5%
 
Deep crimson colour. Raspberry perfumes, alluring and complex spice notes, chocolates and plum over supple background oak. The palate displays a concentration of red fruit flavours, complimented by sweetly fragrant spice. Soft, velvety tannins persist in support of the palate, finishing on a length of savouryness, licorice oak and bramble notes.

Harvests of old vine Shiraz are assembled, from splendid sites eighty years of age and more, in the premiere viticultural precincts of Moppa and Light Pass. Grapes are all hand picked, destemmed and crushed into small, open top ½ tonnes fermenters. A variety of vinification techniques are employed, unique to each parcel, to create layers of flavour and complexity. Batches are hand plunged daily, for gentle extraction of colour, flavour and tannin. After an extended term on skins, ferments are pressed to a selection of predominately new American oak hogsheads for completion, a course of malolactic and twenty months maturation. Components are assembled and bottled without fitration.
 
Deep crimson colour. Complex aromas of densely ripe plum, currants and red berry fruits, seasoned by liquorice notes, milled spice and vanilla bean. A powerful and fleshy palate of peppery plums, piquant red berries and oaken spice are framed by a border of fine American oak and supported by a length of persistent, firm, silky tannins.
