Stonehorse is an assemblage of several different sites, some planted as far back as 1961, all are closely managed to yield harvests of the most characterful Barossa Shiraz. Choice parcels are vinified to a style which emphasizes the old world, bucolic virtue of the grapes, as enhanced and complimented by an extended term of barrel age. The oak is designed to support and add structure without compromising early approachability of the wine, a forward drinking Kaesler, to be enjoyed in its youth.

Stonehorse Shiraz is full of character, a reference to the teams of Clydesdale horses which worked the heavy clay soils of Kaesler vineyard. Grapes are all hand picked and vinified through the action of wild indigenous yeasts for a healthy ferment. Ten days skin contact and regular pumpovers twice daily are aimed at optimal extraction. Batches are pressed and settled for a day before being run to a selection of oak barriques. Upon completion of malolactic, barrels are racked off lees and returned for fifteen months maturation, infusing just the right amount of oak while encouraging fruit to dominate. Bottled after a light filtration, a youthful old vine Shiraz with superb structure, definition and refinement.

Inky bright crimson, dark centre and youthful edge. Black cherries, fruits of the forest, spice and hints of cassis. A full bodied wine, supple, elegant mouth feel, dark fruit flavours, blackberries and blueberry with lighter red fruits, currants and plum. Spicy notes, spicebox and liquorice mingle on the palate, supported by ripe tannins over a background of genteel oak.

Shiraz is harvested in stages over the course of a fortnight, providing varying levels of sweetness and complexity for the finished wine. Grapes are vinified in open top fermenters and treated to a regimen of pumpovers twice daily. Several days after harvest, a portion of the free run juices are drained and fortified to arrest ferments and retain some natural sweetness. A combination of estate made brandy spirits, up to twenty years of age, are called upon to fortify the wine, achieving added complexity. Components are matured in well seasoned oak hogsheads for eighteen months, whereupon only the very best barrels are selected to be included in the final assemblage and bottling of this extra fine liqueur Shiraz.

After four years of devoted hand pruning and careful viticulture, the precious vines were nursed back to manageable conditions. These dry grown, hand pruned old vines yield less than two tonnes per acre, surrendering only the most exceptional grapes exhibiting extreme intensity of flavour. Grapes are hand picked, gently crushed and treated to an open fermentation and basket pressing into a selection of mostly new French oak barriques for two years maturation, handled in such a way as to preserve the integrity of the Freedom 1843 vineyard.

Shiraz is harvested off vineyards up to thirty five years of age, planted to deep sand and red clay soils, mostly trained to single and double wire rod and spur trellis, yielding a mere three to four tonnes per acre. Yields can be much lower during drier growing seasons and hotter vintages, as the parched vines grown to older, unirrigated sites struggle for nourishment. Fruit is crushed and sent for a cold soak maceration in a mix of fermenters, batches are inoculated and treated to a traditional vinfication, plunged and pump over for optimal extraction. Upon completion, components are filled to a selection of seasoned French and American oak barrels for a year's maturation.

Bright, juicy fruit flows over the palate, a lovely full mouthfeel and texture, fine white pepper and briar spice adding to the complexity, silky tannins in support of a long, fruit filled and subtley spiced finish.
