St Hallett are an auspicious commune of ancient Barossa grower families and leading, accomplished winemakers. Established by the Lindner family during the closing days of the second world war, industrious pastoralists who would fill a horse drawn cart with daily cuts of meat for the local markets. Sourced from a coterie of superior Barossa vineyards, the Butcher's opaque purple hues hint at the generosity within, a solid and tightly structured wine, much adored for its distinctive mint and blueberry aromaticness.

$3899each $467DOZEN EACH DOZEN Shiraz is sourced from some of the finest Barossa vineyards, sited to superior appellations such as Lyndoch in the south, Koonunga to the north and Valley Eden towards the west. Grapes are harvested throughout the warmth of day, brought to the winery, crushed into fermenters and inoculated with neutral strains of yeast. Following a regime of several pumpovers daily, batches are lightly racked, retaining a measure of the fluffier lees which add weight, texture and savouryness. Following completion of malolactic, components are assembled and treated to extended maturation in a selection of seasoned and new French and American oak barrels.

The old fashioned practice of treating ferments to a manually operated basket press, preserves the elemental rectitude and textural integrity of good wine. Bruno Tait sources a unique parcel of Shiraz from a single vineyard at Rowland Flat which yields a meagre tonne and a half per acre. The precious old vines are seventy years of age, they are consulted by Bruno twice a week at vintage time to determine the perfect day for picking. The vinification is wholly natural and very old world in style, an extremely limited 240 dozen are produced.

$4799each $575DOZEN EACH DOZEN The time of vintage is crucial for such a generously high alcohol wine, Shiraz is picked only when fully physiologically ripe, as natural fruit sugars and juicy esters are at their peak. Grapes are de stemmed into open vessels, pH is adjusted and the musts are vinified at 24C over the course of ten days. Ferments are treated to a regimen of plunging and pumpovers three times daily for optimal extraction of colour, flavour and tannin. Upon completion, juices are given passage through an old fashioned basket press into a selection of seasoned American oak barrels for malolactic and maturation, rack and returned over a term of eighteen months to achieve a natural filtration. Alcohol 16.0%

Deep black purple. Intense aromas of blackcurrant, stewed plums and cherry, chocolate, allsorts and carob. Full bodied, berry filled palate layered with black bramble characters, drenched with cherry liqueur and compote reduction, its ripe substantive tannins and elegant oak frame a carriage of warming plum suet fruit flavours, before a long, sweetly everlasting finish.

Albert is the namesake of Teusner's grandfather, commemorated for his tireless hard work and commitment. Albert is sourced from two small blocks of low yielding unirrigated vines, aged between fifty and a hundred years, one precious site in the Barossa's north at Ebenezer and the other, near the valley's southern most parts at Williamstown. Pure and expressive, displaying the power, elegance and generosity of splendid old vines Shiraz, Albert is a joy to drink now and will continue to evolve magical Barossa richness.

$5799each $695DOZEN EACH DOZEN Grapes are crushed into open fermenters and treated to a regimen of twice daily pumpovers before heading to a selection of new and seasoned French oak barrels for eighteen months maturation. Treated to a painstaking vinification technique, portions of the active juices are taken off daily to ferment in new French oak barrels which are used to mature the finished wine. After twelve hours, juices are returned to the ferment and replaced by a fresh batch, allowing better integration of new oak into the wine. Upon completion, barrels are classified and the final wine is determined, components are assembled and returned to barrel for a further term of integration before bottling without fining or filtration.

A very deep colour reflects the intensity of wine. Concentrated, opulent aromas of blackberry, satsuma plum, black cherry and cassis burst from the glass. Soft, supple and velvety tannins in support of dark chocolate, licorice and polished leather. Intense but showing great tension between the ripe fruit, melt in the mouth tannins and bright acidity, Albert finishes with great length and aplomb.

The initial release of Riebke Ebenezer was conceived during an economic decline in Barossa Valley. The Riebke family were being paid very little for their Shiraz and asked Teusner if he was on the market for quality fruit. Teusner agreed to produce a wine but made no promises, as they hadn't even seen the harvest. The epiphany occurred as soon as fermentations began and the winemakers knew that they had come across something very special indeed. A tip of the hat to the Riebke brothers, whose vineyards play the essential role in the wines of Teusner.

Kym Teusner became inspired by the grand old vineyards of the Barossa Valley after taking charge of a venture to salvage ancient sites which had been planted to vines by his grandfather. The old and distinguished Riebke vineyards are located in the northern settlements of Ebenezer, Moppa and Kalimna, but Leon, Steve and Nick Riebke consistently produce some of the finest Shiraz to be found anywhere in the Barossa. After tending their vines for five generations, Riebke have a pretty good handle on their piece of dirt. Post fermentation the individual components are treated to a year's maturation in a selection of prior use French and American oak hogsheads.

Deeply coloured. Sweetly scented with lifted aromas of satsuma plum, black berries and cherry with some blueberry lift. Hints of liquorice, asian spice, kirsch and cola, sarsparilla and enticing violet. The palate is densely packed and bursting with dark fruits, kirsch and plum, liquorice, jasmine and a dose of Barossa earth. The concentrated, opulent fruit finishes long, dry and savoury over ripe, chalky tannins.

Treated to a meticulous old world vinification techniques, Highland Fling is arrested mid way through fermentation with a fortification of Torbreck brandy, lifting the intensity of palate and infusing evocative perfumes.

Grapes are all destemmed into small fermenters for several days of cold soak and inoculation to wild, indigenous and ambient yeasts. After a course of vinification, pumpover and plunges, ferments are brought to a halt by the addition of a well aged, oak barrel brandy, which preserves palate sweetness and retains a higher measure of alcohol. Batches are gently basket pressed directly into seasoned French oak barriques for a term of eighteen months maturation, to be bottled without fining or filtration.

Exceptional Langtons Classification. RunRig was a system that the highland clans employed to distribute property and holdings. It appropriately defines the Torbreck flagship, crafted from small yields of the most precious hand sorted Shiraz, picked off a canon of very old, dry grown vineyards. The emphasis is never on any one proprietor or farm, but rather the communal elements of the whole. RunRig is a wine which exhibits so much power and latent richness, that it is compared with the epicly structured and perfumed first growths of Cote Rôtie.

Fortunately, the Old Vine RunRig blocks thrive in these conditions and the quality of fruit is truly remarkable. Shiraz from Lyndoch and Greenock, Seppeltsfield and Moppa, Ebenezer and Rowland Flat, are gently de stemmed into open top wooden and concrete vats for a week of ferment on skins. After basket pressing, batches are filled to a selection of seasoned and new, French oak barriques for completion of malolactic and thirty months maturation, treated to a single racking for clarification, assembled with Viognier and bottled without fining or filtration.

Dense, saturated, inky colour. Delightful aromatics, layers of raspberry and graphite, melted tar and smoke soar from the glass, apricots and creme de cassis cloaking subtle hints of cherry and black olive. A dark, rich and concentrated palate flows from black fruits into brooding anise and dark chocolate, all bound by tight, grainy tannins.
