The Adelaide Hills hamlet of Paracombe, settled circa 1840 and now booming with a population of 365, was named after the headwaters of Little Para River. Initially a successful sheep station, the site of Paracombe Vineyard was destroyed by Ash Wednesday's Fire before being established to vine. Hand picked grapes from the Drogemuller property in Adelaide Hill, are vinfied alongside choice parcels harvested by neighbouring, specialist local family growers. Fashioned predominately around a backbone of six different clones Cabernet Sauvignon, the assembled Reuben is matured eighteen months in a selection of seasoned and new French oak hogsheads and barriques.
 
Intense colour, deep ruby tones, bright robes in the glass. Lifted aromas of poached rhubarb and plum, delicate hints of oak, leatherwood and licorice spice. The palate is generous, finely structured with rich, sweet fruit driven flavours, fresh raspberries and loganberry, interspersed by savoury, spicy notes.

Paracombe vineyard is nestled on a plateau 425 metres above sea level. Soil is lean with ironstone, buckshot gravel and quartz, an interesting remnant from an ancient riverbed. These characters along with minimal irrigation contribute a strong influence in wine style and flavour. Vines on the Paracombe estate are meticulously cared for, taking advantage of the morning sun for optimum fruit ripening, most are planted facing east. Fruit is harvested over four separate picks, predominately from the Drogemuller's Paracombe vineyard and specialist Adelaide Hills growers. Special aromatic yeasts achieve a wine of good flavour, balance and definition, with excellent natural acidity.

The relationship between Penfolds and the cool climate, higher altitudes of the Adelaide Hills goes back to the company's origins. Dr Penfold established his winemaking venture at Mackgill in 1844 to make Grenache wines which he would prescribe to patients. Exclusively hand picked grapes, with the inclusion of some whole bunches for complexity, are cold soaked and crushed before the free run juices, to the exception of any pressings, are naturally fermented followed by a single racking off gross lees. The finished wine is matured eight months in a combination of new and seasoned French oak barriques, before bottling, filtered but unfined.
 
Dark cherry red. Cherries and dark bramble fruits abound with attractive forest notes and lingering warm spice Subtle charry oak adds additional complexity in a discreet manner, leaving the bright fruit nuances to remain at centre stage. Strawberry and red berry fruits coat the mouth on a bed of soft tannins. A long and persistent finish that lingers and lingers, the wine's silky texture leaves the palate yearning for more. The modern style of Australian Chardonnay, drawing on Penfolds extensive vineyard resources, Max's guarantees the drinker a thoroughly enjoyable taste of Adelaide Hills Chardonnay at its very finest. Exacting standards of viticultural management throughout the growing season ensures the winemaking team receive a quality of fruit that's worthy of the Penfold label. Pale straw hues. Inimitably Adelaide Hills, white stone fruits, nectarine and peach, figs and lithe spice, the clove aromatics of French oak barrique. Stone fruits persist on the palate, pistachio nougat creaminess, from extended time on yeast lees, cedaryness and almond oak tannins, long, lingering acidity, an enticing phenolic grip in support of the overall structure of palate.

Pertaringa Scarecrow Sauvignon Blanc

Sauvignon Blanc is the first grape variety of vintage to ripen. Local fauna have a naturally sweet tooth and find the juicy, sugar filled berries irresistible. Scarecrows are an old solution to a timeless problem but the delinquent criiters have never learned to distinguish the artfully stuffed rags from the real thing. Those grapes which survive the pilferage are crafted by the Pertaringa team into an engagingly aromatic wine with clean, crisp palate, the ideal choice for service alongside moreton bay bug tails dressed in paprika butter.

These splendid sites are closely planted and fastidiously managed through strict regimens of shoot and fruit thinning, to achieve the most meagre yields of peerless quality Chardonnay.

Grapes are all hand picked, a portion are whole bunch pressed, the balance are gently destemmed, chilled and crushed. Following several days days of cold settling, most of the partially clarified juices are filled to a high proportion of new Dargaud et Jaegle French Vosges oak barriques and hogsheads for vinification. Upon completion to sugar dryness, barrels are racked and inoculated through Petaluma's own native bacteria. The unique bugs present at malolactic impart a lovely creaminess and contribute textural mouthfeel. Batches are treated to regular lees stirring battonage over the course of several months, before being racked and rested for the final assemblage.
 
Bright, light straw colour. Abundant white peach and nectarine aromas, gentle toasty smoke. A creamy textured palate, refreshing acidity contributes zing to support the distinctive, nutty sweet fruit characters, leading to a dry finish without hardness. A very textured wine with lovely lingering acidity in a drink now style which will evolve beautifully, one of nature's wonders from Piccadilly Valley.
Pike Joyce Beurre Bosc Pinot Gris

The hamlet of Lenswood in Adelaide Hills produces wines of outstanding quality and distinctive character. Two eminent and long established winegrowing families have come together to nurture a distinguished vineyard amongst the undulating aspects. Pike & Joyce construct a brightly lit Pinot Gris without the oiliness or fatness that's sometime associated with the variety, drinking beautifully upon release.

The Pike & Joyce vineyards are amongst the highest in Adelaide Hills at five hundred metres above sea level, giving the wines excellent natural acidity. The steep sloping terrain reduces the risk of frost. Vines are all hand pruned and handpicked, the fruit is chilled overnight in the Joyce cool rooms, before being transported to Pike's Clare Valley winery for vinification. Traditional old world techniques and modern Australian winemaking are incorporated to produce a style which reflects the variety and region. The fruit is lightly crushed and destemmed prior to pressing and fermentation. A brisk bottling upon completion captures and preserves the lovely Pinot Gris fruit character and Adelaide Hills charm.
 
Medium to pale green hue. Subtle notes of yellow peach and nectarine, nashi pear and nutmeg along with a little of the river stone minerality for of Adelaide Hills Pinot Gris. Medium bodied palate showing the flavours of stone fruits over a gentle creaminess which contributes texture and length. Well balanced acidity maneuvers the wine away from finishing heavy or cloying.

Another exquisite effort from the marvelous Pike & Joyce property at Lenswood. Not the in your face style of overtly fruity Sauvignon Blanc, Pike and Joyce shows freshness and concentration, but also restraint, subtlety and poise. Unequivocally advancing the case that there are alternatives to Sauvignon Blanc which differ delightfully to the syrupy styles from across the ditch. A perfect match to seared fresh shellfish drizzled with herb butter sauce.

The Pike & Joyce owned and operated Lenswood Vineyard in Adelaide Hills produces wines of outstanding quality and distinctive character. One of the highest in the region at approximately 500 to 550 metres above sea level, the site contributes excellent natural acidity to the wines. Planted in the late 1990s, Lenswood represents a true cool climate vineyard, the steep sloping terrain reduces the risk of frost. Soils are gravelly, clay loams that drain extremely well. Grapes are hand harvested, lightly crushed and destemmed. Pure yeast cultures are added for delicacy. The winemaking team are quite happy to watch over the ferments during their formative stage and intervene only as necessary.
 
Brilliant, pale green / straw hue. Clean, fresh aromas of passionfruit, snowpea and a little citrus, backed up by notes of nettles and mineral. Quite complex. Fresh and zingy acidity on the palate keeps the wine bright and balanced finishing with a vibrant tropical /nettle flourish. Quite richly flavoured, but still has style, poise and a pleasantly dry, textural finish.
