The exclusively estate grown, hand picked fruit is crushed and pressed without spending any time on skins. A small component is transferred to French oak for a course of rich barrel ferments. The majority is treated to controlled fermenters and vinified at low temperatures to a mix of wild and cultured yeasts. Upon completion, batches are held on sedimentery lees for two months to build fine textures and enhance palate weight.
