There are very few vineyards which take sparkling wine so seriously as to plant Pinot Meunier, the third grape variety in the holy trinity of the noble Methode Champenoise. Fruit is selectively whole bunch pressed for creamyness and complexity, mollified by malolactic, stirred for palate richness and filled to sediments bottle for three full years yeast lees maturation. Brimming with brioche, apricots and apple flan, its largess of indulgent fruit charactors and beguling perfumes, undulate and evolve along a long, fine bead of crunchy stonefruit flavours, creme fondant and crisp minerality.

Grown to the balmy coastal climes of our great southern land, burnished by the extended northern sunshine and invigorated by the sobering winds off balmy Bass Strait. The moreishly rich grapefruit style, vinified from the exclusively free run pressings for pure pristine opulence, barrel fermented in lovely French oak and treated to the extravagance of lees stirring malolactic. Brilliantly proportioned of pineapple and pith, sherbet and citrus, its magnificent length of lime curd sweetness and oak influenced mineral, resolving on an awesome, seaspray oyster shell finish.

From a picturesque planting of Pinot Noir at Lower Barrington, overlooking Don Valley towards mighty Bass Strait, within the maritime crotch of Tasmania's north. At 276 metres above the sea, vines enjoy a perfectly mild growing season, the longest days of sunshine on the apple isle, followed by a cool maritime autumn which infuses grapes with a sensational level of velvetine richness. Expressing winsome violets and vanilla, cherries and chai, giving way to earthy underbrush, elegantly structured, its brightly lit fruit and gentle tannins, seasoned by dustings of savoury spice.

A bravely accoutred style, from Barringwood's favourite plantings of Pinot Noir, dressed in bright cherry baubles and raspberry robes, framed by curls of cinnamon sasafras oak, underpinned by a bustle of soft taffeta tannins. It's all little vineyard fruit, just a small hectarage of fancy clone Pinot, passionately nurtured by locals born and bred, made to an old fashioned regimen of tranquil winemaking. A measure of whole bunch clusters and extended term in fine French oak, contribute character and complexity to a prepossessing palate of persimmon, plumcot and peacock tails.

Rose petals, lychee and turkish delights, pears to the palate, lanolin, calico and a supple squeeze of lemon spice, this is the Schonburger which claimed Winestate's Alternative White Varietal of Year, no mean feat for a tiny Tasmanian. The allure and charm of such a precocious varietal is formed in the vineyard, an abundance of daily sunshine within a cooler clime, develops articulate fruit esters while allowing the extra time to bloom into complete ripeness. Macerations and whole bunch vinifications, infuse the wine with luscious fruit flavours, crisp textures and provocative aromatics.

After many years developing the finest vineyards across the length and breadth of the apple isle's premiere viticultural precincts, Bay Of Fires can collate parcels from the choicest sites, from which to assemble a spectacular construct of Tasmanian Pinot Noir.

The strength behind the Bay Of Fires label lies in the excellence of its viticulture, great vineyards planted to the pick of Tasmania's finest terroirs. Moderate yields and cool growing conditions result in wines with outstanding varietal intensity, elevated fruit spice and mineral complexity. Priority is given to assembling a rich cepage of clones grown to treasured sites along Tasmania's east coast, Coal River and Derwent Valley. Whole bunch pressing and a separate handling of each parcel right through to completion of ferments builds a wine of great complexity. Time spent in a high proportion of new French barrels infuses the wine with a judicous integration of oak.
 
Brilliant deep purple. Complex aromas of sweet ripe red berry fruits feature with star anise, cinnamon and floral spice. Elegant yet supple palate, cherries, rhubarb and spice, a length of remarkable power and intensity throughout, all framed by ripe, flattering tannins, finishing on a flourish of graceful marascino fruits and fragrant spice notes.
