The fully certified organic fruit is hand picked off two biodynamically managed terroirs, the upper terraces of Noa vineyard, on Waimakiriri soils of alluvial origin, the balance from Raupo Creek where soils are rich and clay based. Twenty different batches are pressed and separately handled to provide a range of options when determining the final wine. Most are treated to a wild indigenous yeast vinification, some parts are richly fermented in a selection of seasoned French oak barriques. After eight months, components are tasted and assembled into an exquisite, elegant style.

Light citrus/ straw in colour. Aromas of grapefruit and lime are underpinned by a chalky mineral complexity. In the vineyards, the family and their vignerons are flat out supervising the contract teams around Marlborough and Waipara. Vines are covered with nets to protect the fruit from local fauna. At full physiological ripeness, fruit is harvested in the cool of the night and transported to the winery in one tonne bins where it is gently pressed. Selecting only the free run and light pressings, juices are settled and cool fermented over the course of three weeks. After two months infusing on yeast lees, parcels are assembled, lightly fined and filtered for bottling. Alcohol 13.0%

A collation of parcels from good vineyards which can yield harvests of Sauvignon Blanc displaying generous fruit flavours, splendid varietal definition and refreshing acidity are assembled into a single wine of exciting complexity and refined structure. Fruit is crushed and cold settled into temperature controlled fermenters, inoculated to wild and cultured yeasts before a cool vinification aimed at retaining all the brisk, vital expressions of the vineyard. Upon completion, the finished wine is promptly bottled with minimal handling to capture the essence of Awatere Valley Sauvignon Blanc.

Throughout the growing season, Ta_Ku seek to isolate parcels of Pinot Gris that are just right for this style of wine. Fruit is harvested when full physiological ripeness is reached and all requisite varietal characters of nut, stonefruit and spice have been achieved. Following the crush and a cold soak, the must is inoculated to select yeasts before vinification in a mix of fermenters. Winemaking is gentle, to avoid unwanted colour extraction and to retain the fresh varietal expression of Pinot Gris. Upon completion, batches are racked and assembled before bottling into the final wine.

Soils were formed from the weathered gravels of an ancient river system, which originally reached from St Arnaud to the coast. These gravel threaded clays are renowned for producing wines of richness and texture. The first vines were planted on rich river loam beside the mouth of the Motueka River. Vibrant, fertile river flats with loamy, sandy soils, in conjunction with careful vineyard management ensure vigourous growth in the Motueka and Riwaka vineyards, while the heavier but no less fertile soils of the Moutere are coupled with incredibly hot temperatures. These climes produce mouthfilling wines with an array of aromas and flavours.
