From parcels of Chambourcin grapes, hand picked off a block of vine that's surrounded by a growth of peppermint gum trees. Traditionally, Peppermint Paddock has always been difficult to cultivate and vines have struggled. Unfazed by the challenging microclime, Chambourcin has thrived. A unique hybrid grape that's known for its robustness, the Chambourcin vines of Peppermint Paddock are often left unirrigated, quite happy to perform on their own, dry grown rootstock. An astonishing amount of flavour, exquisitely balanced, a truly mesmerising effervescent red wine.

Looking out from d’Arry’s Verandah Restaurant, Peppermint Paddock slopes south down the hillside. Chester d'Arenberg thought that Chambourcin, would work well on the lean soils and replanted the site in 1989. Each batch of fruit is gently crushed to retain as many whole berries as possible. The musts are transferred to open fermenters where the skins are permanently submerged. Batches are vinified for up to a fortnight without any plunging or pumpovers. Ferments are treated to a session of foot treading and basket pressed. A portion of vintage fortified Shiraz is included in the final assemblage to add richness, to infuse the palate with plum chocolate complexity and contribute a measure of pepper spice.
 
Deep vibrant crimson purple mousse, a fine persistent bead. Freshly crushed grape nose, lifted aromas are dominated by a full range of summer pudding notes, sarsaparilla, blackcurrant leaf and boysenberry jam. Refreshing medium bodied palate, juicy raspberry and mulberry flavours. A wine of extraordinary length, rich sweet flavours and gorgeous, chewy tannins.

All vineyard staff at Fox Creek take pride at growing the best wine grapes in McLaren Vale. Whilst crafting the ultimate wine is the goal, sustainable viticulture is a priority. The areas around the vineyards are planted to native trees which provide habitat, food and shelter for native fauna. The focus is to be environmentally friendly and only use sustainable practices. Like all temptresses, Vixen is timeless, an assemblage of various vintages. Vixen is a complex yet sophisticated synergy of younger and aged material, a finely balanced, well focused Cuvée with pleasant mouthfeel and tamed tannins.

Grampians Estate has quickly established an iconic reputation for its cool climate peppery Shiraz. The small eight acre site is located south of the Great Dividing Range alongside Grampians National Park. The vineyard is planted to granite soils over sandstone, vines are cane pruned and grapes are hand picked with help from the local Moyston Willaura Football Netball Club. Rutherford is an exclusively estate grown and bottled wine vinified from hand sorted Shiraz grapes and treated to the full regimen of Methode traditionelle, followed by twelve months maturation in a selection of well seasoned French oak barrels, before a further two years resting in bottle on sedimentery lees.
 
Dark ruby colour, persistent purple mousse. Red and black berry bouquets with an overlay of white pepper. A full and flavoursome, mouth filling palate, medium bodied and elegent, exhibiting soft mouth feel with peppery spice undertones. Merlot lends itself ideally to wines of this style, intense fruit flavours and soft structure carry through to the finished wine following its secondary fermentation. Grapes are sourced from the Wilgha vineyard, a site which continually produces fruit with highly perfumed qualities, excellent structure and generous, fully ripe tannins. Fruit is picked at ripe Baumes, crushed and vinified on skins for six days in Potter fermenters. This base wine is then matured in a mixture of French and American oaks of varying ages for eighteen months. Secondary fermentation is induced by the addition of yeast and sugar, infusing a fine persistent bead, integrated toasty qualities and generous mouthfeel.
 
Vibrant purple with crimson hues. Clean and fresh aromas of violet, plums and blackberry are enhanced by dark chocolate notes. A wine of elegance and instant appeal, generously fruity with a predominance of plums, blueberry and raspberry flavours. Katnook have been dabbling with sparkling red wine for some time. The philosophy is to make a style that has broad ranging appeal, to be enjoyed anytime, with anyone, a fresh, aperitif style that's the new cleansing ale. A selection of mostly old barrels Founder's Block Shiraz, with a small addition of current vintage for freshness. True to the methode traditionale process for this fully Aussie genre, candidate stocks of Shiraz are treated to a term of riddling and age on sedimentery lees, followed by disgorgement and liqueur doseage for reseal. A component is treated to a year's maturation in a combination of seasoned and new French and American oak barrels.
 
Dark plum, purple hues, vigorous mousse. Ripe raspberry and plum fruit aromas, liquorice and sweet spice, chocolate oak and toastyness add complexity. A rich and generous palate structure laden with raspberry and plum, enhanced by the mousse. Sweet spices and subtle toasty oak are rounded with soft tannins, all harmonising on a persistence of lingering fruit.

Eventually disgorged to true Methode traditionnelle, Majella is served with the ultimate indulgence, an inclusion of Reserve Vintage Coonawarra Port and dosage liqueur, crowned and resealed.

Majella originally established their Shiraz vineyards in the late 1960s after an understanding that the Hardy's Wine Company would source their production. By the 1980s, Majella were looking for other clients and their fruit wound up in some of the most memorable vintages of Wynns Coonawarra. The quality of Majella's harvest was always paramount but it was not until the 1990s that the pick of the Shiraz crop was set aside for a superior small batch sparkling. Bottle fermented for two or more years on sedimentery lees, followed by the traditional disgorgement, liqueur d’expédition and dosage of rare vintage Port.
 
Midnight purple hues, effervescence and persitence of elegant bead. Spiced liquorice nose, brambles and bright currants, suet and caraway, carob and cherry ripe. A powerful palate of intensely mouthfilling flavours, layers of fruit are supported by its luxurious creamyness, the savouryness of leather, smokey bacon, olive and espresso. Majella brings out the best in all good food, savoury or sweet, it drinks blissfully just on its own.
