The pictuesque Plunkett Fowles vineyards occupy choice sites throughout the rolling plateaux at the heights of the Strathbogie Ranges. The quality of Pinot Noir and Chardonnay grown here are clearly within the Ivy League of the finest Victorian fruit. An assemblage of roughly equaly proportions Chardonnay and Pinot Noir. The white grapes share their origin equally between a variety of blocks within the Plunkett Fowles Upton Run and Whitegate Vineyards. The black grapes are drawn exclusively from the Trevor's Block at Whitegate.

$2699each $323DOZEN EACH DOZEN Grapes are picked early and harvested throughout the cool of the night to ensure fruit temperature are low , thereby preserving primary fruit characters. The Pinot Noir grapes were whole bunch pressed, a process which minimises phenollic extraction and bitterness, leading to a more delicate wine. Batches are inoculated to culture EC1118, a strong competitive yeast which possesses the ability to ferment at low temperatures, create good flocculation and has excellent alcohol tolerance. Vinified in tank at 15ËšC to preserve primary fruit flavours, fermented to dryness, the wine was kept on its lees to add complexity. Stone Dwellers was held on secondary fermentation lees for a short period prior to bottling.

Lively appearance, creamy and long lasting with a continual fine bread. Bouquet shows bright citrus aromas with peach notes and some yeasty complexity. It has off-dry residual sugar, balanced alcohol, soft balanced tannins and refreshing acid. To accompany hors d'oeuvre, a pungent camembert or smoked mussels.

Straw gold with green tinges, fine mousse and persistent bead. A clean, refined bouquet of fresh, floral, melon characters, balanced by zesty lemon. Very bright and inviting with red berry aromas. The palate is vivacious with an impressive array of crisp apple, melon and citrus flavours complemented by a creamy mid palate. T Series is the ideal sparkling to enjoy at any time, chilled with seafood, freshly shucked oysters and antipasto.

There are few marques, better placed than Taltarni to create the ultimate indulgence in sparkling burgundy. Shiraz is crushed into small open top fermenters for a week of vinification, hand plunged, regularly pumped over and gently pressed into French oak barriques for a term of age. Its fragrant blackcurrant mousse precedes an edifying spice and chocolate palate, muscular Pyrenees tannins and a sheath of dusky oak balance the indulgent sweetness of fruit. A moreish purple wine to match with fruit dressed poultry, cherry duckling or the traditional festive pud.

Since inaugural release in 1978, each bottle of Taltarni Brut has been fermented and matured on yeast lees according to Methode traditionelle. The original sixty acres of vines were planted by David Hohnen, who later went on to found Cape Mentelle. John Goelet selected Taltarni Vineyards after a worldwide search of the finest winegrowing regions. The chosen site, with its red clay, quartz and sandy loam soils and cool continental climate is idyllic for the production of premium quality sparkling wines. The aim within the vineyard is to increase fruit concentration and flavour intensity whilst retaining superb length and balance of natural acidity. Taltarni is fermented in its own bottle and matured on yeast lees, achieving a final complex and sophisticated sparkling wine style.

Tache is a French word meaning stained, the rare method used by Taltarni to fashion their sparkling Rose. The moniker Brut Tache can also be read as a metaphor for hard yakka, a reference to the effort required to grow quality grapes and make good wine. Taltarni assemble their finest fruit, picked off vineyards dedicated to yielding grapes exclusively for superior sparkling wines. Cuvée Rosé's pretty pink hue and elegant complexity are achieved by adding a dash of red liqueur to the tirage wine at disgorgement.
