A slightly effervescent wine, defined as Cremant, dominated by Pinot Noir, the balance of Chardonnay, Gamay and Aligote, sourced from grand old vineyards in La Bourgogne. Perle de Vigne Grand Reserve Brut is a superb representation of all that's noble and sophisticated about the House of Louis Bouillot, established 1877.

Pinot Noir, Chardonnay, Gamay and Aligote grapes are vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, vinification, bottling and a course of riddling, followed by disgorgement and liqueur doseage. Perle de Vigne Grand Reserve Brut is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees.

Blanc de Blancs is a petulant wine from white grapes, almost exclusively Chardonnay with a minor component of Aligote from Maconnais, Yonne and Châtillonais, vinified to true Methode Traditionelle. Parcels are treated to a pneumatic press, which crushes the fruit before undergoing fermentation in tanks followed by bottling. Louis Bouillot Blanc De Blancs is naturally fermented and matured twenty four months in its own bottle, achieving maximum aromatic qualities and finesse imparted by time spent on sedimentery yeast lees. Alcohol 12.0%

Bright straw yellow colour with tinges of green. Its herbaceous nose and soft citrus notes mingle with the fragrance of fresh, dewey grass and scents of freshly opened nuts. Exhibiting the structure of Mâconnais alongside the vivacity and freshness of Yonne, the mouth is crisp with mouthfilling acidity, beautifully expressed like the character of a pink grapefruit.

There are few places in the world, so predisposed to yielding vintages of the regal Champagne styles, as the chalky Downs of England's southeast. The noble House of Pommery send their eminent chef de cave on frequent forays across the Channel, to isolate the finest parcels of Chardonnay, Pinot Noir and Meunier, picked off the most exquisite sites at Sussex and Hattingley Valley, Hampshire and Essex. A luxurious bead of butter biscuits, almond and honey notes, citrus and red apple to the tongue, its creamy palate of lemon, meringues and tangy citrus peel, resolving on a splendid saline finish.

The pick of Coonawarra Shiraz, treated to an extravagantly extended fermentation, for maximal uptake of dense, chocolatey purple fruit flavours, rakish colour and wickedly decadent chewy licorice textures, two years and more on gross sedimentery lees to infuse the wine with wanton richness, while taming and integrating the prodigal tannins. Eventually disgorged to true Methode traditionnelle, Majella is served with the ultimate indulgence, an inclusion of Reserve Vintage Coonawarra Port and dosage liqueur, crowned and resealed.

$3899each $467DOZEN EACH DOZEN Majella originally established their Shiraz vineyards in the late 1960s after an understanding that the Hardy's Wine Company would source their production. By the 1980s, Majella were looking for other clients and their fruit wound up in some of the most memorable vintages of Wynns Coonawarra. The quality of Majella's harvest was always paramount but it was not until the 1990s that the pick of the Shiraz crop was set aside for a superior small batch sparkling. Bottle fermented for two or more years on sedimentery lees, followed by the traditional disgorgement, liqueur d’expédition and dosage of rare vintage Port.

Midnight purple hues, effervescence and persitence of elegant bead. Spiced liquorice nose, brambles and bright currants, suet and caraway, carob and cherry ripe. A powerful palate of intensely mouthfilling flavours, layers of fruit are supported by its luxurious creamyness, the savouryness of leather, smokey bacon, olive and espresso. Majella brings out the best in all good food, savoury or sweet, it drinks blissfully just on its own.

The sparkling wines of Valley Loire are known for their vitality, freshness and affable drinkability. Within the picturesque and undulating, chateau lined terroirs of the greater Loire, lies the Appellation d'origine contrôlée of Vouvray, a region which yields a quality of sparkling that's rather unique, more generous and appealing, with an engaging complexity of flavour and delicate mousse. Marc Brédif was established 1893, one of the oldest maison in the commune, it remains the largest, a pioneer of the gently pétillant style of Vouvray sparkling.

$3399each $407DOZEN EACH DOZEN Parcels of Chenin Blanc are normally harvested around October, off fully mature vines, twenty or more years of age, planted north to south on the clay limestone hillsides of Vouvray and Vernou sur Brenne. Bunches are selectively hand picked and sorted into crates, keeping only the healthiest grapes for vinification. Fruit is treated to a pneumatic press, the finest runs are retained and cold settled for a day or two. Juices are vinified for a month at a controlled 16C, to preserve fruit character while enhancing complexity. A component of reserve wines are included in the assemblage, bottled for two and a half years under cellar at 12C, followed by degorgement and liqueur dosage.

Straw gold hue, a supple effervesence. Stonefruits and honeyed citrus notes, light jasmine and apple notes. Creamy palate offering good weight of fruit, a clean, revitalizing sparkling showing developed fig characters behind fresh cut citrus, pear and apple flavours. An exquisite aperitif style and splendid food wine, to match with seafoods, avocado recipes or canapes.
