A flagship Victoran effort, traditionally crafted from Shiraz grapes picked off the oldest and most superior blocks within the Mitchelton estate vineyard. The vines receive little water so they drive their gnarled roots deep down through the sandy soil layers in search of moisture. These veteran vines are naturally devigorated and unirrigated, meticulosuly managed by hand, ensuring precious yields of small, intensely flavoured berries which are reserved for the creation of this eminent edition of Victorian Shiraz.

Predominantly from the Old Faithful Crescent and D Blocks, a third of fruit is picked off an elite block at Heathcote, contributing structure and complexity. Grapes are treated to an extended skin contact for up to three weeks, extracting deep colour and soft tannins. A temperatuture controlled, submerged cap vinification in potters and small open fermenters is followed by transfer to a selection of new and seasoned French oak barrels from select cooperages, for completion of malolactic and eighteen months maturation. Parcels remain on lees and remained unracked to preserve freshness, individually barrel selected in blind tastings before determining the final assemblage.
 
Intense deep purple, violet hues. Rich aromas of brandied cherry, smoked charcuterie and festive pudding, a nose that continually shifts in and out of red currant/ mulberry reduction sauce, mocha, cocoa and kirsch. A finely boned wine which balances the power of fruit with a delicacy of structure. Rich, opulent fruit marries with cinnamon/ nutmeg/ aniseed spice, all framed by a structure of chocolatey textured tannins which partner the persistence of flavour perfectly.
Mitolo GAM Shiraz

From fruit grown to the Chinese Block on Lopresti vineyard in Willunga district at the southern end of McLaren Vale. Soils are heavy grey loam over sandstone intermixed with black Biscay clay, a hungry earth which naturally controls yield. The climate mirrors that of the Mediterranean, warm days and cool nights ensure even ripening and development of rich fruit flavours. GAM is opulent and robust, a Shiraz of great richness that's multilayered with complexity, it nevertheless retains a measure of finesse and the characteristic Mitolo softness.

The quality of Shiraz grown to Mitolo vineyards is the achievement of uncompromising standards in viticulture and the serendipitous confluence of growing conditions. A magnificent maritime climate yields 2â…“ tonnes of grapes per acre from vines aged an average of twenty years. Each parcel of Shiraz is fermented on skins for ten days at cool temperatures to preserve bright fruit characters without extracting hard or bitter tannins from seeds and skins. Upon completion the wines are gently pressed and filled to an extravagantly high proportion of new French and American oak hogsheads for eighteen months, before being considered for inclusion into the final assemblage. Alcohol 14.5%
 
Deep, vibrant crimson red colour. Lifted pure aromatics of darker berry fruits and spice, blackberries and plum, mocha and toasty vanilla oak. The palate is powerful and finely focused with great depth of fruit character, well framed by fine grain tannins and drawn toward a long finish supported by naturally balanced acidity. Decant, breathe and serve alongside good beef with red wine jus and roast root vegetable.
Mitolo Marsican Shiraz

An exclusive assemblage of the most elite parcels, picked off a tally of the finest rows Shiraz on the Chinese and Sandra's blocks at Aldinga and Willunga. Remarkable for its opulence, seamlessness, linearity and textural aplomb, Marsican is defined by the richness of ripe black fruits, olive tapenade savouryness and fragrance of freshly milled tradewind spice. A long cool ferment and gentle press, before being treated to the luxury of completely new French oak for eighteen months, followed by a rigorous cull to determine the most outstanding barrels for inclusion into Marsican Shiraz.

Savitar is the flagship Mitolo Shiraz, a tightly structured wine produced by maestro Ben Glaetzer in very limited qualities. Savitar features heady aromas and a powerful yet elegant multi dimensional palate. Shiraz is sourced from a single superb site, the elite Lopresti Vineyard's Chinese Block in Willunga, at the southern end of McLaren Vale.

Only the best quality fruit is ever considered by Mitolo, to be aged in the finest oak, for elegant wines of intense richness and complexity. Parcels of Shiraz from vines averaging over twenty years of age are grown on rocky, skeletal soils in the northeast part of the vineyard. Fruit is fermented on skins for fifteen days at 28C to 32C, softening the musts and releasing juices. A slightly longer period on skins ensures a tighter overall structure. Batches are pressed and treated to partial barrel ferment, followed by a natural malolactic before racking. Savitar is matured in a selection of completely new, medium to light toasted, American and Alliers/ Nevers French oak barriques for a term of eighteen months.
 
Opaque black in colour. The most brooding of all the Mitolo wines, aromas of camphor and cassis mixed with cracked pepper, truffles and earth. Layered textural mouthfeel, full bodied and rich whilst maintaining admirable precision. The palate is full bodied, meaty and complex. Well integrated oak and tannin provide elements of structure to the wine, it finishes with impressive length.
Mitolo Serpico Cabernet Sauvignon

One must have the courage to stand up for one's beliefs and not conform to mediocrity. Serpico was a famous New York cop who wasn't afraid to work against the system, he succeeded in exposing much of the injustice and inequity. Mitolo take Serpico's example to step outside the constraints of established style and redefine the accepted genre of Australian Cabernet. Serpico is made to the Amarone technique of drying grapes before fermenting, concentrating flavours, building great intensity and forming the silkiest tannins.

Cabernet Sauvignon is hand picked early at around 13° baume off the Chinese block at Lopresti Vineyard and placed onto 10kg racks. Bunches are left to dry for several weeks in the tradtional Amarone manner, the grapes lose a third of their weight in moisture, an old world technique which achieves fruit of extraordinary intensity and flavour. Fruit is then vinified on skins for a fortnight followed by three weeks maceration, softening the palate, as small, aggressive tannins are mellowed, leaving only larger, silky tannins. Components are matured ten months in a selection of seasoned and new French and American oak barriques before being considered for inclusion into the final assemblage.
 
Deep ruby red colour. Intense varietal perfumes of blackcurrant, tobacco leaf and dried herb over subtle whiffs of smoky, spicy oak. An intriguing palate of concentrated dark berry fruits framed by silky yet mouth coating tannin. The flavours are complex and well layered with blackberry, cigar box and balanced acidity in support toward the long, dry finish. A match with casseroled rabbit, sage leaf and mash.
Mollydooker Blue Eyed Boy Shiraz

A breathtaking 16% level of alcohol provides Blue Eyed Boy with a measure of mischief to ingratiate the most demanding and ribald bon vivant. A collation of parcels off a tally of elite sites at Coppermine Road, Long Gully Road and the Mollydooker estate vineyard. Barrel fermented and aged in a high proportion of new American oak. Viscous with luscious layers of berries and peppered plum, espresso and chocolate cream. Full bodied over a backbone of well defined tannins, as the wine fills the mouth and continues to evolve with every glass.
