Hollick Ravenswood Cabernet Sauvignon

Ravenswood Lane is the link between the Hollick Coonawarra Vineyards, namely the Neilson's Block. First vintaged in 1988, Ravenswood is only released when the wine satisfies the very exacting quality parameters set by the Hollick team. The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood, typically the fruit comes from the oldest vines growing in very shallow Terra rossa soil. Released in extremely limited quantities, it stands as an icon Coonawarra Cabernet Sauvignon of great significance.

The twelve hectare Neilson's Block was one of the original John Riddoch selections, in true Coonawarra fashion it was exploited as a dairy farm until the planting of rootstock in 1975. Extensive canopy renovation has envigorated the vines and revitalised the quality of harvest. Consistently producing some of Coonawarra's best Cabernet, the cream of crop is earmarked for Ravenswood. Once in the winery the utmost care is taken to preserve the unique and exquisite fruit characters which are its raison d'être. The fruit begins vinification in fermenters before being filled to completely new Tarandsaud & Seguin Moreau French oak barriques for completion and eighteen months maturation.
 
Dense crimson with purple hues at the rim. Lifted, penetrating aromas of blackcurrant and plums, cassis and black olive. A wine of genuine class with intense flavours of dark berry fruits and hints of dried herbs, menthol and chocolate oak, over integrated and soft, fine grained tannins that ensure the wine is approachable in its youth, the track suggests it cellars exceptionally well. Complex and concentrated, best enjoyed with fine gourmandise.

It was Charles William Ferguson who established Houghton as a national brand and lead the way for Jack Mann to advance West Australian viticulture into a leading global winegrowing region. The most exquisite parcels of Frankland River Cabernet Sauvignon are vinified in traditional open top fermenters and filled to a high proportion of new Bordeaux coopered French oak barriques for sixteen months. The inclusion of a large component Malbec makes CW Ferguson a sensationally well rounded Cabernet style, wrapped in a muslin of seamless, velvet tannins.

Born at Guildford, very near the Houghton Swan Valley wineworks, Dr John Gladstones was an internationally acclaimed scientist who identified the Margaret River in 1965 as being world class for planting vines and growing grapes. Dr Gladstones also played a role in the development of the Frankland River region, Pemberton and Manjimup. A prolific gold medal winner which honours his contribution to West Australian viticulture, this glorious wine offers a profound structure and generous palate, epitomising the peerlesss quality of Margaret River Cabernet Sauvignon at its finest.

Dr Gladstones was a long time friend of the late Jack Mann, pioneer of the West Australian wine industry and mentor of Houghton wines. Cabernet Sauvignon is sourced from the Batley vineyard in the Wilyabrup sub region of Margaret River. The red granite gravel loam soils, maritime climate and twenty year old vines contribute to producing wines with richness, structure and intensity. Fruit is hand picked, crushed and vinified in small 2T and 5T open fermenters, hand plunged then pressed to tank, settled and racked directly to a selection of new and one year old Bordeaux coopered French oak barriques. Gladstones is minimally handled throughout its life in oak, until assemblage, sixteen months after vintage.
 
Intense deep purple red with vibrant scarlet hues. High intensity and attractive aromatics of berry fruits, cassis and cigar box. Underlying aromas of star anise and charry oak spice provide wonderful complexity. The dense and structural palate is balanced by fine, firm tannins. Will impress as a youth and evolve over many years.

He immersed himself in the single pursuit of producing the most stately wines while at Houghton throughout a half century of memorable vintages. Cuvee Jack Mann is Houghton's finest wine and Western Australia's most iconic Cabernet. Small amounts of peerless quality grapes, an original Houghton clone developed by Jack Mann himself, are hand picked from the very heart of a distinguished vineyard and individually considered for inclusion.

Fruit is sourced from the distinguished Justin Vineyard in the Frankland River region. Soils are largely degraded granite gravels, some of the oldest in the world. Even within the single vineyard, particular blocks of vine, more than thirty five years of age, known as patches 12 and 13, are set aside exclusively for Jack Mann. Grapes are hand harvested, hand sorted, crushed and vinified in small open top fermenters. Caps are plunged by hand before gently pressing the wine into new and one year old French oak barrels from choice Bordeaux cooperages for eighteen months maturation, before assemblage, fining and bottling without filtration. Only a few hundred cases are ever made.
 
Dense, deep purple red, scarlet hue. Intense aromatics of blackberry, cassis and dark berry fruits, black olive and hints of mint with dark chocolate and fine cedary French oak. The palate is full flavoured, rich, complex and intense. Concentrated, classic varietal fruit characters, plush and sweet, supported by fine tannin structure and integrated French oak, great acid definition and depth of flavour characterize this exceptional wine.
Houghton Thomas Yule Shiraz

Three British Army officers, in their capacity as agents of the East India Company, established one of Western Australia's first agricultural enterprises in 1836. Named after Captain Richmond Houghton, it was not until Thomas Yule's stewardship that vines were planted and the first vintage of Houghton wine flowed in 1859. Thomas Yule now sources fruit from the eminent Justin Vineyard in Frankland River, a dark ruby Shiraz of lifted liquorice and intense brambleberry, seasoned by piquant pepper notes and supported by a length of exceptionally fine tannins.

Grapes are all hand harvested and hand sorted, crushed into traditional small open top fermenters and treated to three days of cold soak. Batches are vinified to wild indigenous yeasts, upon completion to dryness, ferments are pressed and filled into a selection of Burgundy coopered French oak barriques for secondary malolactic and fourteen months maturation before assemblage. The inclusion of Malbec rounds out the palate and introduces wonderful complexity.
 
Dark ruby red. Bright, lifted blueberry and raspberry fruits, hints of black pepper and liquorice with nuances of spicy vanillin oak rounding off the bouquet. The palate is medium to full bodied, filled with an intensity of lozenge fruit flavours. A firm tannin structure with a soft acid balance frame a richly proportioned Shiraz, a long, sustained finish.

Outstanding Langtons Classification. Abercrombie is the flagship Cabernet Sauvignon of Howard Park, noted for its outstanding structure, elegance and complexity. Abercrombie combines the austere dusty earth and blackcurrant aromas from Mount Barker, with the classic rich fruit and chocolate palette of Margaret River. Together they produce an elegantly balanced Cabernet wine with ripe, mature tannins backed up by quality French oak. Produced from the top 1% of fruit and only ever made in years when grapes of extraordinarily high quality are harvested.

Abercrombie has claimed Grande Medialle d'Or at Concours Mondial de Bruxelles. Over the years it has been internationally feted with multiple awards including Best in Class International Wine & Spirits Competition and two Blue Gold Medals at the Sydney International. Since inaugural release, the best parcels from a selection of the oldest vineyards in Margaret River, the cooler ripening climes of Mount Barker and Porongurup sub-region of Great Southern, have been set aside for Abercrombie. All fruit is hand picked, sorted and vinified in a mix of small static fermenters and open vats. The wines are hand plunged and pumped over as required to balance the extraction of colour, tannin and flavour development.
 
Opaque red with a purple rim. The nose is filled with blackberry, cedar, tomato leaf, dusty bitumen road and chocolate representing each distinctive component of the harmonious blend. The palate starts with a rush of plush red berry fruit and reaches its zenith with damp earth and forest floor complexity balanced by ultrafine powdery and layered tannins. The finish displays long fruit and structural elements balanced by supporting mocha oak.

The Hugo family property was a mixed farming enterprise, dairy and sheep stud, almonds and tomato, not to mention a paddock or two of grapevine for personal consumption. The first commercial vintage of Shiraz was in 1979 but a Reserve quality Shiraz was not considered for another twenty years. Limited yields from the oldest blocks are treated to an extravagant fermentation in completely new French and American oak barriques, after an inspection and barrel cull, the very finest lots are assembled into the McLaren Flat flagship Hugo Reserve Shiraz.

Concentrated dark berry fruit characters, currants and blackberry, seasoned by spice, cinnamon and black pepper, chocolates and regional spearmint. Discernibly dry grown, a classic complex, velvety mouthfeel with well integrated tannins before an intense, aromatically spiced bramble finish. A match to red wine brisket and melted cheddar pie.
