Inspired by the great Crus of Bordeaux, the aim is to build complexity within a single vineyard wine, to allow the fruit to shine, as complemented by the finest oak, a Cabernet of profound structure, polish and finesse. The inclusion of small portions Merlot and Malbec, Petit Verdot and Cabernet Franc, are treated to a regimen of cutting edge and old world vinification techniques. Fraser Gallop's superlative Cabernet vines are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavours.

The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.

Deep crimson colour with rich hues. Fraser Gallop shows a remarkable complex array of aromas of black cherry, dark fruits, bitter chocolate, forest floor earthiness and pomegranate molasses richness. Layers and layers of flavour provide for a seamless palate. Tannins are quite fine and chalky, providing great structure for aging. A wine of richness and elegance.

Freycinet Vineyard lies on a namesake peninsula in northeast Tasmania. Situated on the 42nd latitude, the property enjoys a unique microclimate. The long growing season extends into May, combining much sunshine and warm days, winter rains with no frosts, ideal for the production of excellent quality cool climate fruit. The vineyard sits a hundred metres above sea level, at a distance of twenty kilometres from the coast, the climes here are very maritime. At harvest the grapes are bursting with flavour.

A rigorous selection of the most spectacular lots are assembled into Merrill Reserve Shiraz, bottle aged under the Mount Hurtle cellars for further development.

Dark red with ruby hues. Complex nose, raspberries and creamyness, pepper and spice, liquorice and plum. The palate displays fresh fruits and a silky texture over very fine tannins. Toasted smoky oak, balanced acid and concentrated fruit flavours provide great structure. One of the nation's most eminent Shiraz wines, all elements in astonishingly fine balance.

The best lots are assembled into a multiple trophy winer named Harry's Monster and treated to an extravagant maturation in the finest oak. Very strong in primary fruit, generosity and mouthfeel, its ripe seed tannins are simply singing in its youth, showing exceptional balance on a long lasting finish.

Ferments are well aerated, hand plunged and gravity rack returns for a fortnight. Upon completion, the cap is submerged for a two or three weeks to integrate and polymerize tannins. Batches are treated to an airbag press and racked off gross lees to a mix of seasoned and new French oak barriques for malolactic and eighten months maturation.

Sexton Vineyard is wonderfully intricate, exuding notes of wild blackberry, dried mushroom, mulberry bush and braised plum, cinnamon stick and sour cherry. The coolest slopes of Sexton are planted to five Pinot Noir clones, managed according to biodynamic principles, providing several threads of expression to weave into the final wine. Sexton's fruit focus and fine tannins are enhanced by a judicious treatment of Burgundy styled oak.

A third of the fruit is worked as whole bunches in small open fermenters, the remainder destemmed but uncrushed and added on top. Three days of soak without any cap work is followed by a fortnight of wild indigenous yeast ferments, light plunges, drain and returns. Batches are treated to an airbag press and racked off gross lees to a mix of new and seasoned Fench oak barriques for malolactic and a year's maturation.

Bright scarlet purple colour. Lovely rustic charry notes, cinnamon, cloves, dark chocolates and ginger. Poached cherry, olive, cinnamon and treacle, orange peels and vanilla bean. Pretty and supple. An eager, youthful Pinot Noir with engaging complexity and good support from fine French oak and firm tannins. To accompany pink veal cutlets or a melt in the mouth, roast suckling pig.
