Peter and Michael Scholz's Australian story began in 1845 when forty year old Johann Gottfried joined his neighbours to flee the religious persecution of his Silesian homeland, emigrating to a fertile valley on the other side of the world. Planted in 1936, Willows Vineyard is located on the banks of Para River near the village of Light Pass, a site enivigorated by cooling gully breezes during vintage, providing slow ripening and a clearer expression of spicey berry flavours in the Shiraz. Treated to a regimen of taditional winemaking techniques, the powerful fruit has been tamed by two years maturation in American oak hogsheads, bringing structure to the palate and endowing the wine with soft, ripe tannins.
 
Dense, vibrant colour. Very ripe, sweet fruit, reminiscent of plum, blackberry and pepper bouquet. A beautiful rich red, the heady scents slide into the pure mint and blackcurrant palate, joined by the extra dimension of light sweet eucalypt. Generous, ripe and mouth filling, showing gorgeous berry and cinnamon spice flavours, along with oak derived mocha overtones and harmonies over soft yet well defined tannins.

From time to time, Wirra Wirra produces wines from very small parcels of extremely intense, high quality fruit. Chook Block is a unique wine which is only assembled in the most outstanding vintages, pointedly one year in four. It is not made to a particular style, winemaking is purely, in a custodial sense, attempting to reflect the remarkable quality of Chook Block Vineyard Shiraz in exceptional years. Bunches are all picked by hand and treated to the highest scrutiny, removing any fruit that is not of the highest order before inclusion.

Chook Block was planted in 1960 on Nocowie Vineyard immediately behind the Wirra Wirra wineworks. The terroir is fortuitous and unique, sandy topsoils over subsurface sandy loam with red brown impervious clay and patches of limestone. Fruit is cold soaked for five days to extract maximum colour without excess alcohol. Ferments are hand plunged and tasted twice daily. At the required level of dryness and extraction, juices are basket pressed until the first sign of tannin hardness. Batches are transferred to a high proportion of new French oak barrriques for completion of malolactic. Barrels are rack and returned every four months throughout twenty one months of maturation.
 
Dense plum hue with garnet rim. Fresh boysenberries, blackberries and plum, interlaced with sweet cedar, bitter chocolates and licorice, tar and earthy notes. The palate is mouth filling with rich satsuma plums and blackberry fruits, dark chocolate and aniseed. Rich and brooding, balanced by mouth watering savoury tannins and fine cedary oak.

Wirra Wirra RSW Shiraz

RSW is an acronym for Robert Strangways Wigley. He learned his craft during a tenure at Bankside under the tutelage of Thomas Hardy, who claimed to have never known anyone that worked harder than Wigley. RSW's wild pranks as a young man made him somewhat of an embarrassment to his family. In 1893 he was pointedly sent to rusticate in McLaren Vale where he undertook the planting of vines in 1894. By the turn of the century he was proprietor of the most eminent winemaking operation in the district, with a hundred acres under vine.

RSW is not made to a uniform style year after year, thereby crafted to reflect the very best wine Wirra Wirra can deliver. Parcels are picked from vineyards at Blewitt Springs, McLaren Vale and McLaren Flat in small batches and cold soaked for three days to extract maximum colour without the presence of alcohol. Each ferment is assessed twice daily to determine the cap management program, before basket pressing at the first sign of tannin hardness. Batches are transferred to an individual barrel selection, depending on vineyard block, before completing malolactic, rack and returned every four months. Matured nineteen months in a mix of seasoned and new French oak puncheons and barriques.
 
Deep plum colour with crimson rim. Bright plums, blueberries and raspberry fruits fill the nose, aniseed, leather and dark bitter chocolate add further complexity. The palate displays vibrant rich plum and raspberry fruits infused with bitter chocolate and aniseed that fill the mouth. The dense core of fruit is balanced by fine cedary oak and textural tannins providing a wine of superb line and splendid length, wonderful power, balance and style.

Woodhenge is about big ideas, in the manner of cyclopean fences built by Australia's early settlers. A wine of great elemental sculpture, the assemblage of individual vineyard and sub-regional characteristics is the key to success of the style. Woodhenge has previously claimed Decanter World Wine Regional Trophy and Gold Visyboard Great Australian Shiraz Challenge. Bold and tightly knit, incorporating ripe berry fruit and integrated oak balanced by velvety tannins, Woodhenge Shiraz, like it's namesake edifice, is solidly structured and imposing.

A legacy well worth toasting, named after the massive post and rail fence that now greets visitors to the Wirra Wirra wineworks. Shiraz from estate vineyards and good McLaren Vale growers is gently crushed, destemmed into open top and static fermenters, tasted twice daily to determine optimum number of daily plunges and pumpovers for extraction. Once pressed, parcels are moved to oak for completion of ferments, rack and returned every four months. The wine was assembled at fifteen months of age and returned to oak for two months before an egg white fining. Matured a total of seventeen months in a high proportion of new French and American oak barriques and hogsheads.
 
Deep red, bright edges. Fragrant bouquet of ripe plum, rich raspberries, polished leather with bitter chocolate and sweet cedar. The palate is rich and fleshy with layers of Satsuma plum and raspberries interwoven with nutmeg and aniseed spice. The bold yet soft fruits are balanced with fine sandy tannins resulting in a wine with structural power, great length and style. To accompany Scotch fillet steak with dill gherkins and fresh cut kipflers.

Named after a set of medieval leg pillories which remain preserved as a museum piece in Oxfordshire. The team at Woodstock consider themselves lucky to be caring for some of the oldest McLaren Vale vines. Fruit for inclusion into The Stocks is sourced from thirty one rows of ancient McLaren Vale vines, planted circa 1900 on a sandy north slope at the Woodstock property, only the most exceptional barrels of aged Shiraz are selected. The palate is plush with an intensity and complexity of flavour that will continue to evolve and mellow in the glass.

Vines are all closely inspected throughout veraison, exposed bunches are removed to prevent sunburn and canopies reduced to ensure perfect ripening. The vineyard is dry grown and yields are deliberately kept low, achieving harvests of true intensity and concentration of flavour. Shiraz is picked throughout the cool of night to preserve character and complexity. Grapes are crushed and cold soaked for a day in small open fermenters, inoculated, vinified over the course of a week and hand plunged twice daily. Batches are transferred to a mix of French and American oak barrels for completion of ferments and a term of maturation. Only the finest are selected for inclusion into The Stocks. Alcohol 15.5%
 
Deep and dark, indigo hues. Traces of cigar box, choc mint, meaty and earthy tones on the bouquet. The palate is plush and complex, loaded with a myriad of dark berries and spice. Good intensity of flavour and savoury tannins in balance, ripe, sweet fruit, a complex chocolate berry heart, lovely structure, good middle palate richness which lingers. A Shiraz of splendid fruit concentration, yet a touch elegant, Woodstock recommend thirty minutes breathing followed by decanting.
Wynns Black Label Shiraz

Shiraz is an important part of Coonawarra tradition, indeed the oldest vines ever established, circa 1890 were Shiraz. Wynns Johnsons Shiraz was planted in 1925 and can best be remembered for producing the timeless and enduring vintages of Wynns Coonawarra Hermitage. Wynns planted Shiraz to prime sites throughout the 1990s, the quality of fruit from these choice vineyards has improved from year to year, they are now fully mature and yield harvests of the finest Coonawarra Shiraz.

Coonawarra Shiraz at its best can be described as medium bodied, layered with red fruit characters, underpinned by tightly focused tannins and moderate alcohol. Black Label is crafted from the pick of the Wynns crop, a superb example of Coonawarra’s cool climate style. Setting the precise time of vntage to a schedule determined by complete ripeness of each individual parcel, translates into richer, even more concentrated Shiraz wines. Following harvest and the crush, fruit is cold settled for optimal extractions and partially vinified before transfer into a selection of new and prior use French oak hogsheads and barriques for completion of ferments and extended maturation.
 
Deep ruby red colour. Dense, dark nose with spices and pepper, mulberries and distinctive florals interwoven with rich oak notes. Black Label is rich and complex, full to medium bodied with flavours of red berries, chocolates and spice. Dense and layered fruits are underpinned by tightly focused tannins on the finish. The spice and florals persist, a unique Coonawarra wine and an excellent cool climate Shiraz of great density, palate weight and charm.

Launched in 1952 as Coonawarra Estate Claret, Wynns have long maintained the reputation as producer of Coonawarra's most essential Shiraz. It's patent aromas are reminiscent of ground black pepper, mulberry and raspberry, through to blackberry at the riper end of spectrum. Oak is used to mature and increase the wine's complexity, without dominating its distinctive cool climate Coonawarra Shiraz character. A reliable, graceful medium bodied wine with a clean crisp finish, fashioned to the inspiring traditions of the original Wynns Hermitage.

From fully mature Shiraz vines grown to rich Terra Rosa soils. Coonawarra enjoys a microclimate which provides a great opportunity to make wines of classic varietal character and longevity. The origins of Wynns go back to the late 1800s when Scotsman John Riddoch built the historic triple gabled winery, a building which today graces the Wynns label. In 1951 Samuel Wynn, who emigrated from Poland in 1913, with his son David, bought Riddoch's old property. The devotion and persistence of the Wynn dynasty in delivering benchmark Coonawarra Shiraz persists to this day. The finished wine is aged for a year in a combination of new and prior use French and American oak barrels.
 
Bright vibrant colour with vivid purple hues. Packed with mulberries, rhubarb and red cherry, overlaid by pepper and floral notes. As the aromas open up, a savoury, dark olive flavour carries through to complexing nuances of subtle toast, nutmeg and cinnamon spice. A fresh, vibrant and fruit filled palate, a structure supported by delicate oak and gentle but well defined tannins. Red fruits mesh with lingering spice notes to create a delicious and balanced Coonawarra Shiraz.
