One of Victoria's stellar performers puts their stamp on Australian Shiraz. The windswept maritime aspects of Bellarine Peninsula punish vines into extracting the maximum amount of cool climate spice while developing the ripest, luscious berry flavours. The Scotchman displays an engaging intensity of Shiraz fruit characters, pliant tannins and crisp acidity in support of liquorice and plum notes, along with vibrant Bellarine expressions of freshly milled spice, minerality and brine.

$3799each $455DOZEN EACH DOZEN The Bellarine Peninsula's role in the development of the Australian wine industry began in 1842, when vines were planted in the surrounding Barrabool Hills. Grown and managed mainly by Swiss immigrants, these vineyards yielded wines which were sold through regular auctions in the city of Geelong. Established in 1982, Scotchmans Hill has become a producer of some of Australia's most complex, elegant and consistent wines. Shiraz vines, clone PT23 are trained to vertical shoot positioning. Fruit is fermented in small open top pots, hand plunged and left on skins for three weeks, followed by a year's maturation in a selection of new to four year old French Troncais oak barriques.

Deep vibrant purple. A complex and rich nose of dark fruit, plums and black cherry, complemented by spice, earth and clove, over a charry oak background. Fully flavoured cool climate, sweet and savoury palate, dark fruits make way to red plum and cherry, spices and briar are supported by firm acid and fine grained tannins. Scotchmans finishes balanced, structured and long, a Shiraz of intensity and charm.

Hamish Seabrook comes from a long line of wine merchants, most notably W.J Seabrook & Son. He has made the most of his family's contacts in the industry to isolate and secure parcels of the finest Pyrenees Shiraz, all grown to great vineyards, closely husbanded by the most devoted local vignerons. Crafted to an old fashioned claret style, driven by a hansom carriage of refined, ebony oak tannins, brimming with the moreish decadence of spiced cherry ripeness and chocolate plum richness.

Hand picked grapes off the estate Home Block on the eastern ridge of Barossa Valley, the frugal vines yield a meagre harvest of small berries exhibiting the most amazing concentration. Bunches are destemmed to fermenters and cold soaked for the magic of wild yeasts, several days of cool vinification are treated to hand plunges and rack returns until completely sugar dry. A good old fashioned basket press and ten weeks of malolactic are followed by twenty four months of age. Succulent tannins and enormous length, Barossa Shiraz that speaks of its provenance, of season and of place.

Serafino Maglieri came to McLaren Vale in 1968 and devoted his life to wine. From picking to pruning to cellarhand, he worked his way up to plant his own vines and build his first winery. He was twice crowned McLaren Vale Bushing King and claimed Trophy for Best Shiraz at the 1997 Great Australian Wine Challenge. He gained international renown after winning Trophy for Best Shiraz and Red Wine of the Year at the prestigious London International.

Vines are trained to a single cordon with a foliage wire controlling the canopy so light can penetrate to evenly ripen the fruit. Hand picked parcels of Terremoto vineyard Syrah are destemmed, leaving a high proportion of whole berries in the must, cold soaked for two days and inoculated with dried yeast culture. Batches are vinified in five tonnes open top fermenters for a week, pumped over twice daily, macerated on skins for a further ten days before pressing to a selection new and one year old oak French and American 300L oak hogsheads.

Black purple colour. Mulberries and chocolate bouquet, spices and satsuma plum, vibrant rich dark fruit intertwined with French and American oak characters of chocolate and spice harmonise with fine subtle tannins. The generosity of fruit character and the seamless integration of oak and tannin ensures the finish is fine, elegant and long.

Sevenhill conjures up visions of Clare Valley idyll, serene pastoral vistas and ancient cellars full of patiently maturing Shiraz wines. One of our nation's great viticultural endowments, Sevenhill were the first ever cellars to be established in Valley Clare. Winemaking is still carried out under the direction of the Jesuitical Manresa Society, sacramental altar wine still accounts for a third of the estate's production. Inigo is an intense yet balanced Shiraz with the requisite character and charm to articulate the grace of vines up to 140 years of age.

There are several open top fermenting vats at Sevenhill, made from large slate slabs around a century ago, mined from the nearby town of Mintaro, they are irreplaceable. The size of these old world vats is perfect for Shiraz, a large surface area of wine in contact with the fermenting skins gives the best extraction of colour and flavour, while permitting the heat of ferments to escape. Each batch is plunged by hand and manually basket pressed, followed by maturation in a selection of seasoned and new French and American oak barrels. Alcohol 15.2%

Dense, purple black colour. An aromatically spiced, pepper and pencil oak nose, elegant perfumes of cedar, menthol and mint. The palate shows a generous expression of fleshy, ripe plum fruit flavours, dark cherry and cassis. Full bodied, the finish resolves on a length of firm, soft tannins, seasoned by delicate fragrant, spicy notes.
