Scotsdale was acquired by Howard Park as a pastoral property, specifically chosen and planted to make a single vineyard wine. Shiraz is harvested according to flavour with little regard for analytical data. Fruit is vinified in open top fermenters and gently hand plunged, integral to tannin development and flavour extraction, gently basket pressed to French oak barriques for completion of ferment, followed by extended maturation. Scotsdale 2000 was crowned by trophy at the Divine State of Origin, vintage 2004 claimed gold at the prestigious Great Australian Shiraz Challenge.

The Hugo family property was a mixed farming enterprise, dairy and sheep stud, almonds and tomato, not to mention a paddock or two of grapevine for personal consumption. The first commercial vintage of Shiraz was in 1979 but a Reserve quality Shiraz was not considered for another twenty years. Limited yields from the oldest blocks are treated to an extravagant fermentation in completely new French and American oak barriques, after an inspection and barrel cull, the very finest lots are assembled into the McLaren Flat flagship Hugo Reserve Shiraz.

Intense purple ruby hues. Clean, rich aromas of plum, dates and spice, supported by toasty vanilla oak. Concentrated dark berry fruit characters, currants and blackberry, seasoned by spice, cinnamon and black pepper, chocolates and regional spearmint. Selection of site was essential to the success of the Hugo property. The climate, soils and proximity of McLaren Flat to the coast are contributing factors in maintaining the quality each and every year. Colin Hugo established Shiraz vines on the family farm during the 1950s, John Hugo followed in his father's footsteps, assuming responsibility as steward of the vineyard throughout the 1970s, ultimately taking the initiative to retain the best grapes for his own estate label. The finest parcels of Hugo Shiraz are treated to an extended term of maturation in a selection of finely coopered American oak barrels.

The auspicious Shiraz vines at Hutton Vale can be proud of the most distinguished lineage, tracing their forebears through the illustrious Mt Edelstone property, back to the original James Busby clones, sired by Yalumba's Samuel Smith in the 1850s. Choice parcels of Shiraz are sourced from premium McLaren Vale sites, including the Ingoldby family property at McLaren Flat. Fruit is earmarked on the basis of intense flavour and fine tannins. Parcels are vinified separately in a mix of fermenters and pressed off skins upon completion. Some components are matured in seasoned oak barrels to derive complexity, the balance remain unoaked to return vital fruit characters and preserve freshness. Prior to assemblage, each component is assessed to strike the perfect balance of lifted fruit and gentle tannins, supple oak and fine complexity.

When Johann Gramp planted his vines along the banks of Jacob's Creek in 1847, he was less preoccupied with the making of history but more concerned with the selection of rootstock and fruit, his choice was Shiraz. Jacobs Creek still retain access to some of the oldest vines in Australia and can call on harvests of the finest Barossa Shiraz every year. Previous vintages have claimed conspicuous international awards, including gold Concours Mondiale de Bruxelles and Selections Mondiales de Vins Canada, gold Tasters Guild & International Wine USA.

Following the harvest, bunches are gently crushed and destemmed into a range of static fermenters for inoculation with a chosen strain of neutral yeast. During a fortnight's vinification on skins, temperatures are maintained between 18C and 28C to ensure adequate colour, tannin and flavour extraction. Key components are drained and pressed into a range of new and seasoned French and American oak barrels for the completion of ferments and maturation.

Deep red with bright crimson hue. Richly perfumed and aromatic with intense dark berry fruit scents, hints of black pepper spice and sweet vanillin oak. A rich core of ripe black fruit flavours, layered subtly with black pepper and restrained, stylish oak, supported by softly textured fruit tannins and finishing on a long, savoury finish. Excellent drinking now and will continue to improve, an ideal accompaniment to braised lamb shanks, eye fillet and hard cheeses.
