The family Hentschke have been Barossa farming since 1842, they know from good soils and settle on nothing but the finest land. Keith Hentschke chose a special site along Greenock Creek, at the intersection of Gerald Roberts and Jenke Roads, in the ancient winegrowing hamlet of Seppeltsfield to plant vines in the early 1990s. They now yield vintages of the most amazing concentration, saturated with the essence of grand Barossa Shiraz, a remarkable intensity of chewy bramble berry flavours, heady jube perfumes and soft, savoury chamois tannins.

The fortuitous soils at Hentley Farm are predominately red clay loam over shattered limestone, salt and pepper siltstone over a layer of bluestones at greater depth. All vines are dry grown on their own roots, with an emphasis on keeping the vine and earth in a natural state of balance with minimal interference. Shiraz is crushed and destemmed, pumped over two or three times daily for optimal extraction. Batches may spend up to several weeks vinification on skins before pressing and settling. Ferments and malolactic are completed in a selection of seasoned amd new French oak barrels, followed by ten months maturation and the final assemblage, unfiltered and unfined. Alcohol 14.8%
 
Deep dark scarlet red. Lifted nose of black currants and dark cherry, raspberry notes, satsuma plum and black olive. The palate is layered with Barossa richness over a length of soft succulent tannins, supported by dark fruits and balanced acidity. Lingering cherry and licorice add complexity, the balance of fruit intensity and oak through the back deliver a Shiraz of remarkable length.

Hewitson Mad Hatter Shiraz

From an elite site between Seaview Ridge and Blewitt Springs in the McLaren Vale, cropping at a bit over two tonnes an acre. As a single vineyard wine, a limited quantity of Mad Hatter is made each year. Mad Hatter is not a reference to Alice in wonderland, rather it is the nickname Dean Hewitson's closest friends have called him for many years. And why mad? Anyone who has spent more than five minutes with Hewitson will surely be able to explain.

Dean Hewitson was shut away in a tasting room with Len Evans, evaluating what Evans considered to be the nation's finest. Evans spoke of broader concepts like breeding, structure, power and the background story which gave wines context. This changed the way Dean Hewitson thought about wine and is at the heart of everything he does today. A huge amount of work goes into Mad Hatter Shiraz, finding the right oak to support the fruit. Extensive barrel samplings are made every six months to determine the ideal balance and cooperages. After three weeks fermentation on skins, Mad Hatter is matured twenty months on lees in a selection of completely new French oak, achieving remarkable integration and complexity.
 
Rich, intense appearance with a deep, inky, purple colour. Hedonistic aromas of licorice, creme de cassis, blackberries, flowers, minerals and spice strike the nose. These aromas are followed by an even more powerful, concentrated mid-palate with superb flavours of chocolate, blackberry and mocha coupled with fine ripe tannins. The finish is long and multi dimensional. Approachable now and will cellar well.

A very good friend challenged Dean Hewitson to construct the traditional, full bodied Barossa Shiraz, to be drunk young at lunch or at dinner, without straying from the fundamental Hewitson philosophies of French oak, fine grained tannins, perfect balance and profound expression of fruit. The Hewitson loves a challenge and rose to the moment with a delicious, forward drinking old vines Barossa Shiraz, dressed in the finest French oak. Most definitely full bodied, yet has great balance and poise with it's signature drinkability factor.

From well situated vineyards on red soils over limestone, the classic Terra rossa, providing the fruit for Ned & Henrys. The sites are traditionally grown and low cropped, they produce the requisite flavours and tannins for this style of wine. After a course of traditional vinification, Ned and Henry are pressed into quality French oak barriques for the completion of primary ferments and a term of malolactic. The wine matures in these barrels for a year or more before racking. While the base wine has always been Shiraz, each year a small proportion of Mourvedre is included, which accentuates the palate and delivers the complexity which is Ned & Henry.
 
Deep red with a purple hues. Distinctively Barossa nose, black and red, ripe fruits and a dried herb spice influence of Mourvedre. Seamless class of perfectly ripe fruit and French oak is a stand out. The palate structure delivers fully, flavours of red fruits, dark cherry and dark earth characters are intense and concentrated yet soft and supple. The tannins are gentle yet persistent.

Houghton Crofters Shiraz
Frankland River
Frankland River yields remarkable vintages of Shiraz, Houghton were at the very genesis of the region for viticulture, they retain the finest vineyards. A collation of the best parcels from choice sites have been assembled by the Crofters team, treated to vinification in traditional open top vessels, gently pressed to a selection of French oak for completion of ferments and a year of age. Its profound structure and piquantly spiced black currant fruit richness, makes a perfect match with game recipes, well seasoned lamb or freshly ground curry recipes.

Brilliant deep red colour, vibrant purple hues. Intense aromatics of cherries and blueberry, underlying pepper and anise, perfumed by French vanilla oak. The palate is bright and fresh, richly layered with mulberries and blue fruits, seasoned by a twist of aromatic, cool climate spice. Fine tannins and exceptional length, Crofter resolves powerfully on a finish of intense licorice bramble complexity.

Three British Army officers, in their capacity as agents of the East India Company, established one of Western Australia's first agricultural enterprises in 1836. Named after Captain Richmond Houghton, it was not until Thomas Yule's stewardship that vines were planted and the first vintage of Houghton wine flowed in 1859. Thomas Yule now sources fruit from the eminent Justin Vineyard in Frankland River, a dark ruby Shiraz of lifted liquorice and intense brambleberry, seasoned by piquant pepper notes and supported by a length of exceptionally fine tannins.

Grapes are all hand harvested and hand sorted, crushed into traditional small open top fermenters and treated to three days of cold soak. Batches are vinified to wild indigenous yeasts, upon completion to dryness, ferments are pressed and filled into a selection of Burgundy coopered French oak barriques for secondary malolactic and fourteen months maturation before assemblage. The inclusion of Malbec rounds out the palate and introduces wonderful complexity.
 
Dark ruby red. Bright, lifted blueberry and raspberry fruits, hints of black pepper and liquorice with nuances of spicy vanillin oak rounding off the bouquet. The palate is medium to full bodied, filled with an intensity of lozenge fruit flavours. A firm tannin structure with a soft acid balance frame a richly proportioned Shiraz, a long, sustained finish.

Leston Vineyard was Howard Park's first Margaret River property, established 1996 to a bucolic sheep farm which bords Wilyabrup Creek. This is the heart of Margaret River viticulture, a place of salubrious sandy soils and temperate, maritime climes. Hand picked Shiraz from Blocks 4 and 17 are treated to completion of ferments and eighteen months maturation in a high proportion of new French oak puncheons, hogsheads and barriques. An opulent style, seasoned by ginger, anise and tradewind spice, dressed in a lycra of chewy, liquorice tannins.
