A compilation of elite estate parcels up to eighty years of age, picked off superior sites at Nuriootpa and Greenock, treated to old fashioned open ferments and fifteen months of age on gross lees in the luxury of new 300 litres French oak puncheons. Shiraz of exuberace, evolving in the glass as it breathes, articulating meaty savouryness juicy black jube fruits.

Euroa Creeks is a hand crafted single vineyard Shiraz, only sixty cases of the inaugural vintage were available in Australia. The eight acres of vine are nourished by a number of creeks that have traditionally brought just enough water to make the land arable. In recent years the area has been drier than usual, vines have truly struggled and tonnages are at their lowest, but the grapes have been packed with flavour. Vintage 2006 was an almost perfect growing season and 110 cases of Reserve were produced. Vintage 2007 was totally wiped out by frost.

Exclusively Goulburn Shiraz, grown by Jo and Andrew Gall, vinified by David Lloyd, owner operator of Mornington's Eldridge Estate. Lloyd was keen to see what happens when a cool climate winemaker delves into warm climate Shiraz. Located a little east of the township of Euroa, the vineyard produces intensely flavoured grapes which are hand picked and crushed in the field over the course of several days. The batches of juices and skins are then brought back to the winery at Red Hill for fermentation, pressing, ageing and bottling. Treated to an extended maturation, Euroa Creek wines are aged in a selection of American and French oak barrels, a high proportion of which are always new.
 
Dark brooding red colour, plum and dark berry hues. An intensely flavoured and perfumed Shiraz in the Rhone style, rich red berry nose with a little cinnamon, vanillan and spice, flavours of plum which follow through to the palate. Euroa Creeks is always rich and powerful, endowed with the classic blackberry Shiraz characters, firm tanins and great length. Vintage 2006 claimed Gold Medal at the 2008 Great Australian Shiraz Challenge.

Shiraz is picked between midnight and early morning to ensure it reaches the winery as cold as possible. Grapes are gently destemmed and transferred to fermenters for three or four days cold soak. Batches are vinified at moderate temperatures for several days, treated to seed removal and thoroughly aerated every eight hours. Upon completion, each parcel is separately pressed and racked off yeast lees. Components are matured in a combination of seasoned French and American oak barrels to integrate tannins and fruit while introducing complexity.

Shiraz is selected from vines grown to the central and northern part of Margaret River, parcels which have shown remarkable balance year after year, consistently yielding loose, intensely flavoured bunches with small berry size, critical to the Evans & Tate style. The superlative ripening conditions allow flavour and tannin development to catch up with sugar ripeness, producing an intensely coloured wine with ripe, concentrated flavours and fine, soft tannins. Evans & Tate have spared no expense and have pulled all the stops to deliver a world class Shiraz.

All grapes are hand picked throughout the cool of early morning, a choice parcel is included as whole bunches. The musts are transferred to a small fermenter and cold soaked at 5C for several days, followed by ten days of ferment at 22C to 24C. Juices are rack and returned over the cap for the gentle extraction of colour and tannin. Upon completion, batches are gently pressed and pressings returned to the free runs, adding structure and style to the finished wine. Components are matured a year or more in a combination of seasoned and new French oak puncheons, hogsheads and barriques. Every batch represents an individual vineyard block and is kept separate until final assemblage.
 
Dense purple black. Bright mulberry and plum fruit aromas, lifted notes of spice and black pepper with a delicate layer of cedar and toast from barrel maturation. Mulberry, blood plum and pepper flavours seamlessly integrate with refined oak characters of cedar, toast and spice. Rich on the tongue with impressive overall integration and fruit intensity. The Margaret River of choice, to mate with seared rib and red wine jus.

Fashioned from the fruit of some distinguished old Shiraz vines, what a remarkable Rosé they do make. Picked early at harvest time to retain vitality of fruit and crisp, adolescent tannins. Grapes are pressed off skins during a judicious term of cold soak to infuse the comely blush hues, before being fermented to dry. An adults only style of Rosé, dressed in lipstick hues and adorned by the piquant pink precociousness of strawberries, monte carlo and turkish delight. Fermoy Estate is situated on Metricup Road at the very heart of Willyabrup, one of the new world's great viticultural precincts. Despite a history of little more than a decade, Fermoy's wines have won an acclaim which belies the estate's modernity. An intensely aromatic and profoundly structured Shiraz wine with captivating berry fruit essences and pliant, peppery tannins, to accompany the finest faire and most succulent meats.

Fermoy takes its name from the eponymous town in County Cork, which was founded by a forebear of the original owners. Vines are trained to vertical shoot position trellis system with extensive canopy management techniques, employed throughout the growing season, allowing harvest of the best possible fruit in the cool of the night to maintain maximum varietal expression. On arrival to the winery the fruit is crushed into ten tonnes static fermenters. Upon completion, batches are pressed to a combination of French and American oak barriques and hogsheads for a year or more before fining and filtration.
 
Crimson red. Aromas of white pepper and spice over a presence of cherry ripe fruit. The palate offers great textural mouthfeel with aniseed and blackberry flavours supported by well integrated, fine chalky tannins. A lingering aftertaste as the afterglow continues, the complex finish conjures up hints of freshly pitted berries, aromatic leaf and dusty, cocoa spice.
