Inspired by the great Crus of Bordeaux, the aim is to build complexity within a single vineyard wine, to allow the fruit to shine, as complemented by the finest oak, a Cabernet of profound structure, polish and finesse. The inclusion of small portions Merlot and Malbec, Petit Verdot and Cabernet Franc, are treated to a regimen of cutting edge and old world vinification techniques. Fraser Gallop's superlative Cabernet vines are the highly regarded Houghton clone, sourced off unirrigated blocks yielding fruit with a massive concentration of flavours.

Fruit is hand picked, destemmed with minimal crushing and chilled to 8C for three days cold soak in closed fermenters. The wine was pumped over daily using a turbopiguer, allowing better homogenisation and extraction without damaging the berries. One batch is pressed off skins early to complete fermentation in oak, another is pressed off just after fermentation, a further component is pressed off just after fermentation and treated to macro oxidation for five days, another is left on skins for thirty five days. Each technique contributes something unique. The wines are transferred to French oak for malolactic and racked twice over the next year and a half, topped up every four weeks before assemblage.
 
Deep crimson colour with rich hues. Fraser Gallop shows a remarkable complex array of aromas of black cherry, dark fruits, bitter chocolate, forest floor earthiness and pomegranate molasses richness. Layers and layers of flavour provide for a seamless palate. Tannins are quite fine and chalky, providing great structure for aging. A wine of richness and elegance.

A beautifully balanced Bordeaux meets Rhone style, an assemblage of McLaren Valeʼs best for a classically arranged cépage of fruit. An Aussie claret with a difference! Cabernet Franc provides aromatics, structure and tannin, Mourvedre contributes juicyness and Petit Verdot is the funk. The Phantom is a product of exacting care in the vineyard, a high percentage of Verdot enhances the complexity and ensures the wine will develop magnificently. Only the most expressive and standout parcels are included into The Phantom.

A stylish balance of Mourvedre, Petit Verdot and Cabernet Franc. In ripe years the Verdot is at its best, black and fragrant with sensational tannins. It was decided by the team at Gemtree that Phantom should always contain substantial percentages of each variety. Organic practises are essential for the vines, roaming sheep help to reduce the weeds and keep the grass mown around the place. Grapes are picked wholly on the basis of flavour each year, due to the wonderful growing conditions, natural acidity is retained and wines with tremendous structure are the result. Each component is open fermented and separately aged in French oak barrels for up to eighteen months.
 
Purple black hues. Rich and complex nose of violets with mint, currants and cassis, rose petals, dark olives and chocolate, roasted almonds and dried sausage. A multi layered generous concentration, oodles of flavour, a voluptuous middle palate, ripe elongated tannins which envelop the back end and create an ultimately seductive wine. Cabernet Franc contributes aromatics, Petit Verdot holds the wine together.

In exceptional years, parcels of Cabernet Franc and Sauvignon, Merlot and Petit Verdot are separately fermented. The best lots are assembled into a multiple trophy winer named Harry's Monster and treated to an extravagant maturation in the finest oak. Very strong in primary fruit, generosity and mouthfeel, its ripe seed tannins are simply singing in its youth, showing exceptional balance on a long lasting finish.

Grapes are hand picked, destemmed and crushed to small open fermenters. A mix of indigenous and cultured yeasts initiate several days of warm vinification to dryness. Ferments are well aerated, hand plunged and gravity rack returns for a fortnight. Upon completion, the cap is submerged for a two or three weeks to integrate and polymerize tannins. Batches are treated to an airbag press and racked off gross lees to a mix of seasoned and new French oak barriques for malolactic and eighten months maturation.
 
Deep crimson colour. A dark, brooding bouquet of black cherries and kalamata, violets and bramble. Full palate, densely layered with rich dark fruits and earthy, gamey complexity over a structure of sleek, polished oak and extensive tannins.

Grandin Brut 1.5L MAGNUM
In 1883, notary and wine lover Henri Grandin married Mademoiselle Pouillet de Limesle, whose family owned the cellars at La Bouvraie in the old royal glassworks of Louis XIV, situated underneath a splendid castle at Ingrandes sur Loire. In 1886, he launched the label that bears his name. Grandin remains to this day an elegant sparkling with an exceptional palate, fine bead and exquisite bouquet. An assemblage of fruit from the Loire, Bordeaux and Charentais, is treated to a natural secondary ferment in bottle for a year, within the darkness of the 17th century Grandin cellars.

Grapes are sourced from specialized vineyards in the Loire, Bordeaux and Charentais, pressed, inoculated and fermented into a dry still wine. To this base, a small quantity of drawing liquid, called Prise de mousse, is added to induce a secondary vinification. The fermenting wine is bottled and corked, encouraged by the action of waking yeasts. A second fermentation ensues under the caves of H. Grandin, hidden from light and far away from the warmth of Valley Loire. It is this ancillary ferment which fills the wine with effervescence. After a year in bottle, ageing on sediment lees, the characteristic subtlety and finesse evolves into the character and style that's known around the world as Grandin.

There are only two hectares of Merlot at Haan but they have yielded a conspicuous tally of the nation's most memorable vintages in grand Barossa Merlot. The original property along Siegersdorf Road was acquired 1853 by George Friedrich Schmidt for the cost of a pound an acre. The excellence of the harvest from this princely parcel, known to neighbouring Barossans as Hanenhof, has established a celebrity for Merlot which belies its tiny size. An edifying indigo whorl of sweet and savoury fruits, supported by cedar, while seasoned by a soupcon of sage and spearmint spice.
