Completely dry grown and deliberately low cropped, the vines at Crawford River are stimulated by the chilly surrounds, to slowly ripen parched little berries with a concentration of flavour and the most elegant tannins. Cabernet Sauvignon is the primary black grape, meagre harvests of intensely flavoured fruit, layered with perfumed boysenberry and cassis richness. The holy trinity of Merlot, Cabernet Sauvignon and Franc, framed by a measure of refined French oak, its velvetine plum and bramble nature makes Crawford River the perfect match to osso bucco or pink lamb.

Parcels of Cabernet Sauvignon, Merlot and Franc, are all hand picked and destemmed. Fruit is crushed and the musts are left to macerate for a spontaneous vinification through the action of wild, indigenous yeasts. Ferments are treated to regular hand plunges for optimal extractions. One component is sent for an extended term of maceration, another is richly barrel fermented for richness, mouthfeel and complexity. Upon completion, batches are gently pressed into a selection of seasoned and new French oak barriques for a course of natural malolactic in the following spring and twelve months maturation, followed by a coarse filtration prior to bottling.
 
Deep garnet colour. Luscious wafts of boysenberries, baking spice and blood plum introduce a lively, fruit driven wine. A balanced, mouthfilling palate is brought into focus with bright, refreshing acidity and a taut edge of mineral refinement. Feminine, subtle oak in support, complementing the fruit and enhancing the gentle spice. Excellent persistence to the finish.

The Cullen success story revolves around the quality of wine made from biodynamically grown grapes, sourced exclusively from the Cullen and Mangan Vineyards. Western Australia's wine industry acknowledged estate matriarch Diana Cullen by naming an award in her honour. A decidely Bordeaux mix of varietals, Cabernet Sauvignon and Petit Verdot, Merlot and Malbec, fashioned into a comely pink style of fresh, juicy characters, strawberries, currant and plum. Redolent and ripe and with vibrant varietal complexities, an ingratiatingly savoury, adults only, piquantly drying finish.

Grapes for Diana Madeline are grown to the most fastidious biodynamic farming principles, crucial for optimising quality of fruit and intensity of flavour while infusing the wine with velvety structure and ultra high quality tannins. The vines were originally planted to granitic soils in the central Willyabrup subregionb by Di Cullen in 1971, the meagre yields of two tons per acre sublimate into harvests of the most concentrated fruit. Grapes are picked at baumes ranging from 12Ëš to 13.8Ëš, gently handled and sorted with great care. Varietal components are inoculated to natural yeasts and separately vinified. The finished wine was matured fourteen months in a selection of the highest quality French oak barriques.
 
Very concentrated deep red colour. Already very complex, clean and rich blackcurrant aromas with a touch of blackberry and vanillin oak. The complex amalgam of liquorice, fennel and multi fruit flavours, including plums and mulberry, red currants and blueberry, are backed by just the right amount of clean oak. Long and persistent. The extraordinary depth of flavour reflects the outstanding quality of vintage 2007. Complete, elegant and refined, a wine of exceptional length, an outstanding Cabernet.

Langton's Exceptional Classification. Diana Madeline is one of Australia's great icon wines, crafted from fruit grown to one of Margaret River's earliest sites. The vines, planted in 1971, provide a scant two tons per acre, yielding grapes of amazing concentration. Cullen have returned to the old world practice of basket pressing. To their delight, they have found that this leads to the extraction of only the finest tannins. A stately construct in statuesque Bordeaux styling, deeply coloured, the extraordinary depth of flavour reflects an outstanding quality of fruit.

In accordance with biodynamic principles, all fruit is hand harvested from vines up to forty years of age. A patented Mistral® apparatus removes the leaf material and infertile berries from the vineyard, providing cleaner bunches. A luxurious cepage of Cabernet Sauvignon and Franc, Malbec, Merlot and Petit Verdot, the grapes are carefully sorted before fermentation to indigenous yeasts and malolactic bacteria. No acid or cultured yeasts are added, achieving a wine with a sense of place through a completely natural process. Components are separately vinified before being treated to nineteen months maturation in a selection of new and seasoned French oak barriques.
 
Delicate crimson, garnet ruby hue. Plum, mulberry and blackcurrant aromas cascade out of the glass accompanied by elevated notes of violet and rose. Savoury ironstone and tobacco complete the classic aroma profile of Diana Madeline. Fine grained tannins with uplifting and sustained fruit notes. Red fruit and plum flavours connect with the ironstone minerality, providing backbone and structure. Medium bodied, elegant, the depth and length are profound, proverbial fist in a velvet glove.

The Garagists are bespoke Bordeaux winemakers who work in their garage, outside of the Appellation Controlee system. Grapes are vinified in the shed or garage of boutique winemakers dedicated to making small volume wines of the highest quality. These limited editions are unclassified by the governing wine authorities, yet are often the most sought after, highly priced collectibles in the world. d'Arenberg make their wines in the very same small batch manner, processing fruit by hand in an old galvanised garage shed winery. The complex Bordeaux cepage of Cabernet Sauvignon and Franc, Merlot and Petit Verdot. Each component is gently crushed in an ancient Demoisy open mouthed, rubber toothed crusher so that as many berries as possible remain whole. The must is transferred to open fermenters where seeds and skins are kept submerged beneath the free run juice, vinified without any plunging or pumpovers and treated to a traditional foot treading and basket press. The combined free run and pressings are transferred to barrel for completetion of ferments and malolactic. Components are aged eighteen months in a selection of seasoned and new French oak barriques before assemblage.
 
A deeply coloured wine. Lifted nose, fragrant and inviting, cassis and blueberry, tomato vine and herb leafy earthiness. Savoury, spicy and elegant, rhubarb fruit spectrum, a subtle violet nuance and savoury elements of dark chocolate and dried herbs. There is no explosion of fruit, but rather an elegant and gradual building of complexity with persistent mineral, chalky tannins providing authoritative, balanced structure.

A national wine show champion, recipient of the 2008 Jimmy Watson. Flametree is a young and most remarkable little estate which is enjoying a meteoric rise to fame, transpiring solely on the basis of quality and unprecedented trade show successes. A mostly Cabernet Sauvignon wine with a third of Merlot from fruit grown to the Karridale and Carbunup appellations of the Margaret River region. The very special sites produce the most intense wines with ripe dark berry fruit characters, the greatest depth of flavour and soundest structure.

A lifelong friendship between local winemaking identities lead to the establishment of one of the Margaret River's most successful estates. The Flametree wineworks are located on the picturesque shores of Geographe Bay, whence some of the new world's finest Cabernet wines originate. Flametree can lay claim to retaining some of Margaret River's most auspicious vines. Parcels of Cabernet and Merlot grapes are placed into open pot fermenters for several days of cold soak. Fruit is treated to a wild indigenous yeast vinification with gentle plunges and pumpovers, followed by a course of malolactic and a year's maturation in a mixture of seasoned and new French oak barrels.
 
Deep red in colour with a bright purple rim. Classic Cabernet nose of cassis and blackberry with notes of freshly dusted cocoa and subtle spice. The palate is beautifully concentrated, packed with dark fruits and bitter chocolate characters. A juicy, almost sweet mouthfeel with fine tannins and a savoury finish. Aged in tight grained, quality French barrels, the oak has pulled the fruit into line and provided the framework for a classic Margaret River Cabernet Merlot.

A complex cepage of mostly Cabernet Sauvignon with a balance of Merlot, totted up by smaller portions Petit Verdot and Cabernet Franc, sourced from neighbouring properties at Yallingup, the northernmost district of Margaret River. Particular attention is paid to inclusion of fruit from auspicious gravelly soils. Fashioned to retain youthfulness and fruit integrity, even after an extended ageing in French oak, a medium bodied, contemporarily styled Margaret River claret style to be enjoyed alongside meats with rich sauces or ripe, pungent cheese.

Around the vineyards, meticulous management of bud numbers through shoot thinning, achieves a balanced canopy and full fruit ripeness. Varieties come off in an orderly manner and the winemakers are rewarded by harvests of the finest quality. Each parcel is gently crushed into small open fermenters with traditional heading down boards under strictly controlled temperatures. Gentle extractions, always the priority at Forester, are achieved by daily drainings away from the skins and returning back. Batches are pressed to fermenters before being sent to a selection of seasoned and new, exclusively French oak barriques for completion of ferments, malolactic and eighteen months maturation. Medium red colour, purple hues. Clean, aromatic and complex, the classic Margaret River characters of currants, bay leaf and dank earth, a perfumed lift with red berry, cocoa and fine cedar oak. Medium bodied palate with on a length of suede tannins, currant, blackberry and red berry fruit flavours, underlying cedar oak and floral musk like perfume supported by lovely gentle tannins. A smooth, firm finish.

Fox Creek began to flow when a group of medicos decided to realize a lifelong passion and create the best possible wines out of bare earth and sunshine. The Fox Creek vineyards were established from the ground up to be the most environmentally friendly, whilst the vines themselves are spoiled with attention. Dr Jim Watts writes the recipe for a whole that's greater than the sum of parts, Merlot for elegance and plummy fruit, the silk of Cabernet tannins, aromaticness of Cabernet Franc, Petit Verdot for titillating spice and dazzling blueberry fruit.

The essential cépage of Medoc, half of Cabernet and third of Merlot, the balance in Cabernet Franc and Petit Verdot. The superlative quality of Fox Creek begins with an exacting pruning of vines to achieve smaller yields of the most intense fruit. Batches are open fermented for a week and a half on skins before pressing off. The Cabernet component is vinified in a selection of prior use French and American oak barrels, Merlot, Petit Verdot and Cabernet Franc are treated to the finest seasoned French. Alcohol 14.5%
 
Deep purple red. Fresh leafy and minty lift, hints of perfume, chocolates and cigar box, blueberries and blackcurrant, nutmegs and clove. Raspberries, black cherry and blackberry, coffee and mocha, hints of toast, brown spices and roasted nuts, Jim's fine silky tannins cosset the palate, delivering focus, flattering style and splendid length.
