Opaquely dark purple red. Black cherry, boysenberries and cassis, varietal leaf, briar and olive notes. Immense concentration on the well proportioned, linear palate, black currants, loganberries and savoury reductions, supported by august tannins and a framework of flattering, amiable oak, its muscular profile lingers long on a finish of sour plum piquancy and dulcet, perfumed dark berry fruits.

One of Australia's longest continuously operating purveyors of fine wine, Taylor Ferguson can trace their origins back to establishment circa 1898. Today, the Taylor Ferguson team can draw harvests from a substantial catalogue of the choicest vineyards to create the most outstanding vintages. Parcels picked off vines thirty to fifty years of age, planted to prestigious sites in Barossa Valley, have been assembled into a sensational Cabernet Sauvignon, endowed with layers of regional chocolate fruit characters, perfumed currant flavours and ripe, supporting tannins.

After each harvest, a search begins for the best grapes from which to make the next vintage. The selection process is diligent and strict. Parcels of fruit which can display the high standards required for inclusion, selected on the basis of vibrant flavour profiles and exemplary varietal expression, become the foundation for Taylor Ferguson. Each vintage brings submissions, this year provided the team with parcels of outstanding Cabernet Sauvignon harvested from good vineyards in the Barossa. Batches are sorted, crushed and inoculated before being treated to a regimen of modern and traditional vinification techniques in a mix of fermenters, followed by a spell of maturation under finely coopered oaks.
 
Deep scarlet, ruby hues. The nose exhibits blackcurrant and mint delicately balanced by characters of spiced/ vanilla American oak. A generous palate, full of berry flavours, mint and dark chocolate complexity rounded out by fine tannins, leading onto a lingering, well balanced finish. To accompany rare venison or rosemary lamb.

The essential Margaret River style of Cabernet, crafted from the pick of the crop grown to the Karridale, Wallcliffe and Wilyabrup districts. Margaret River delivers much of Australia's most distinctive varietal wines, there are unique sub regions and Wilyabrup makes the best Cabernet. After fifteen vintages, the Flametree team have established a pretty good understanding of what works and what doesn't. Assembling the finest parcels means that they can construct a penetrating Cabernet wine with alluring bramble aromas, firm tannins and soft fleshy palate.

Flametree know that if you get the right varieties planted on the right sites you're well on your way to making fantastic wines. A collation of the chocest fruit from good vineyards is assembled to realize more complex and interesting wines. Cabernet Sauvignon is sourced from vineyards at the northern end of Margaret River. All care is taken throughout a very gentle handling and vinification to preserve the vigorous Margaret River fruit character. Soft extractions and cool fermentation temperatures achieve a soft, fleshy wine with lovely aromatics. The finished wine is treated to a year's maturation in a selection of seasoned French oak barrels before fining and filtration.
 
Bright scarlet colour. Blackberry and briar fruits aromas all combine with subtle vanillin oak. Blackberries, plums and dark cherry fruits extend on to the palate where the rich fruit characters merge with subtle oak and gentle tannins to form a lovely medium bodied Cabernet wine, fashioned to a soft, unpretentious and easy drinking style. Match embers with crumbed cotoletta or smoked boudin of veal and lamb.

One of the great endowments of Forest Hill is the age and maturity of its cool climate vineyard. Home to the Great Southern's eldest Cabernet vines, the original plantings are over forty years of age. These unirrigated vines on their own roots produce concentrated and complete wines, elegant and refined. Fashioned from the estate's very best parcels of select, hand picked Cabernet Sauvignon grapes, Block 5 exhibits splendid concentration of silky, grainy tannins, extraordinary intensity and ripeness of fruit with engrossing overall complexity.

There is something very special about the wines of Forest Hill. Part of this, of course, comes from the location. The vineyard is located in Mount Barker and the vines date back to original plantings made in 1965. This makes Forest Hill the oldest cool climate winery in Western Australia. Warm daylight hours coupled with the cool nights of the Great Southern harness ideal conditions for the production of slowly ripened wine styles. Harvests of Cabernet Sauvignon, picked of the superior Block 5, are destemmed and crushed into eight tonnes, open fermenters, inoculated and pumped over thrice daily at 25C. Batches are transferred to oak barrel for completion of malolactic and eighteen months maturation.
 
A deep scarlet colour. Expressions of dark berries, tobacco leaf and subtle earthy notes carry through from the bouquet onto the palate with lingering dark chocolate characters. A long and generous mouthfeel is well supported by a very dense structure of chalky tannins. Approachable now, Block 5 will continue to soften and integrate as it develops into a longer and more complex, mouthfilling wine.

The Forest Hill philosophy is to make individual wines of the highest quality which can express the distinctive regionality of Mount Barker. They have taken aim to produce an approachable, understated Cabernet that's a pure expression of the unique blocks that lie within the forty year old Forest Hill vineyard. An exuberant wine displaying intense layers of plump black fruits, chocolate box aromas and well integrated, luxuriously tight grained oak. An accomplished Cabernet of finesse and elegance, of power and suitably vigorous varietal definition.

Forest Hill's timeline with Cabernet Sauvignon goes back to the original two hectares of planting in 1965, when the earliest batches of fruit were vinified at Houghton's. Forest Hill choose to dry grow their vines, believing it to be a major contributor to vine health and concentration of fruit flavour. As the vineyard developed and more vines were planted, Forest Hill began to be recognised throughout Australia as a producer of very high quality fruit and the backbone behind some of WA's most famous wines. The unique attributes of the region were recognised by the late Robert Holmes à Court who, in 1989 purchased Forest Hill as the oldest vineyard in the Great Southern to complement his ownership of Vasse Felix.
 
Deep red, purple hue. Lifted aromas of dark berries with hints of dry tobacco leaf, earthy undertones and savoury notes add complexity, subtle spices evolve. Medium bodied palate with a firm rich mouthfeel, a wine of considerable intensity and concentration, flavours of black and mulberry, tobacco leaf and subtle earth characters carry through onto the palate. Slightly dusty, chewy tannins, well integrated with good middle palate richness and definition.
Formby Adams Leading Horse Cabernet

In 1891 William Formby wielded his leading team of Clydesdale horses into action, planting the first two acres of Cabernet Sauvignon at Metala. Today his great, great grandson continues the family tradition. Guy Adams grows fruit for some of Australia's most esteemed labels. The pick of the crop however, from four individual plantings on the eminent Metala property, is held back for Formby & Adams, the Cabernet contingent from Brothers in Arms.

Although Metala was settled in the 1850s and is a fifth generation vineyard with a long and proud family history, it is the Brothers In Arms who made it what it is today. Guy Adams is very close to the land worked by his forefathers, he consistently leads the way through a mix of traditional and modern viticultural practices which enable him to extract yields of the finest fruit from his famous vineyard. Cabernet Sauvignon is treated to a traditional vinification followed by eighteen months maturation in a combination of seasoned French oak barriques. Leading Horse Cabernet is bottled without filtration and may form a crust, a decant is recommended.
 
Deep crimson colour with garnet hues. Intense aromas of blackberry, mulberry and dark cherry with hints of fennel and leather supported by spice and tar notes. A generous, structured palate exhibits blackberry and blackcurrant fruit, a touch of mint and an earthy texture. Chewy, textured tannins ensure a finish of balance and great length, Leading Horse drinks beautifully on release.
Fox Creek Three Blocks Cabernet Sauvignon
McLaren Vale

An accord of three very different parcels of superior McLaren Vale vineyard, vinified on skins for a week and a half in traditional open vats, followed by transfer to a selection of seasoned and new French oak barrels for completion of malolactic and eighteen months maturation. The individual Blocks of Cabernet were cannily shifted between different cooperages of oak to impart layers of flavour and enhance structure, the final assemblage is a judicious draught of vineyard parcels to achieve layers of flavour and opulent tannin profile.

Deep cherry red. Fresh leafy lifted cinnamon and cigarbox, overlaying red berry fruits, dark chocolate, roast chestnuts and black cardamon. Fleshy blackcurrant, black cherry and mulberry flavours lead into a blueberry muffin and milk chocolate mid palate. The savoury and linear grape tannins integrate with elegant oak tannins to give the wine fantastic length, finesse and balance.
