When the national wine press discovered the quality of wine from this boutique Pyrenees estate, the secret was out, the phones rang hot and the Summerfield cellars were emptied in two days. Summerfield's editions are all hand made in small batches to ensure consistency and quality within each bottle. Opulent with blackberry, blackcurrant, raspberry and intense florals throughout, profoundly structured and elegantly framed by the most genteel oaken tannins.

Winemaking is a passionate affair at Summerfield, all vines are cared for by hand and the vinification employs ancient techniques, open vats, hand plunging and barrel fermentation. Grapes on the vine are subject to daily and hourly inspections, intensive hand picking ensures the quality of fruit. A minimal intervention is the critical element. Every bottle is hand crafted and bears the family seal of approval. Summerfield yield to the demands of the fruit, extractions are optimised, the oak maturation is designed to enunciate the terroir while framing the excellence of fruit.

Crafted from the best of vintage Cabernet Sauvignon, the choicest parcels collated from across the wonderful endowment of Tahbilk vineyards. It was the serendipitous discovery of a very old bottle Cabernet, unearthed just after WWII, from within the ageing Tahbilk wineworks, that inspired Eric Purbrick to re establish opearations after a long period of neglect. Tahbilk remain home to the eldest and most distinguished Cabernet vines. Eric Stevens Purbrick is dressed to impress, intensely flavoured with opaque berry flavours, sheathed in a veneer of graceful oak.

Dark plum red. Brooding bramble bouquet, ribena and acssis, background cedar oak. Richly laden palate, dark currants and blackberry, dark cherries, mulberries and plum, garnished with fragrantly varietal mint notes and seasoned by a sprinkle of dried herbs. The exquisite weight and length of palate is supported by integrated French American oak characters and fine, robust tannins.
Tahbilk Museum Release Cabernet Sauvignon

Established circa 1860, amongst the scenic Nagambie Lakes, Tahbilk is one of Australia's most historic wineries, with a long and proud history of producing Victoria's most reliable Cabernet Sauvignon. Following his return from service after World War II, Eric Purbrick discovered a cache of wine hidden in 1876 under the Tahbilk cellars. Though pale in colour, it was sound and drinkable after 71 years. The promise of long lived red wine inspired Purbrick to establish new plantings in 1949, today they are some of Victoria's oldest productive Cabernet vines.

Tahbilk has some 28 hectares of Cabernet which have consistantly yielded wines of considerable richness and character. Younger vines which are the progeny of this older rootstock form the backbone of fruit. Grapes are crushed in the Tahbilk winery's Pit, the must is pumped into the original open oak vats where cultivated yeasts are introduced. Carbon dioxide, which is formed during fermentation, forces skins, the cap, to rise to the top. Twice daily the juice from the bottom is pumped over the top of the cap which serves to extract colour, flavour and tannins. The final wine is treated to maturation for up to eighteen months in a selection of 100 year old French oak barrels.
 
Deep red colour. Aromas of warm red currants, plums and black cherries with hints of mint and Mediterranean herbs. Very crisp and full bodied on the palate, minty, capsicum notes with bright and intense berry fruits, a generous amount of juicy fruit underpinned by a supportive web of fine grained, chewy tannins before a long lasting finish. Well worth pouring alongside bacon wrapped quail or your favourite recipe of slow braised rissole.

Taltarni's great legacy is deeply rooted in the unique combination of low yielding gravelly loam soils of its vineyards and the temperate climate of the Pyrenees, producing wines hallmarked by eloquent regional charm. Crafted exclusively from harvests of estate grown fruit, picked off a canon of western districts sites, where the vines are old and ruddy, precious and parched. Bunches are destemmed into small open top fermenters for eight days vinification. Upon completion, batches are treated to a traditional basket pressing into a selection of seasoned and new French oak barriques for malolactic and eighteen months maturation.

Lovely berry fruit aromatics, a combination of cassis and cigar box with smoky vanilla bouquets, classic varietal characters of blackcurrant wrapped up with fine tannins and extra length, distinguished through it's balance of sweet oak integration and ample fruit. Against a backdrop of historic winery buildings and ancient vines, watered by a crystal clear spring fed stream called Honeysuckle Creek, the Taylor family handcraft one of Australia's most eminent Cabernet wines. Since 1892, St. Andrews Terra rossa soils have produced wines of rare excellence, the original winery still stands today. Grapes are harvested from Blocks A60, A70 and A10 of the St Andrews Vineyard, quickly and gently de-stemmed, keeping berries intact. Following a cold soak and fermentation, St Andrew is pressed to a high proportion of new prestige French oak barrels for completion of malolactic, rack and returned for eighteen months maturation.
 
Dark red with a faint brick red hue to the edge. Bold lifted varietal aromas of cassis, ripe black cherry and aniseed. These are matched with lashings of chocolate, cedar and cinnamon from the French oak maturation. A concentrated wine with a fleshy palate and vibrant fruit flavours of cassis and blackcurrant. Generous and beautifully ripened yet retains the poise and elegance of great Cabernet Sauvignon.

It was the great Cabernet wines of Bordeaux which inspired Bill Taylor to diversify from imports and retail into the highly fraught pursuit of grape growing. An ardent enthusiast of Chateau Mouton Rothschild, Taylor had a keen enough palate and nose to determine that the most auspicious lands for Cabernet Sauvignon were amongst the idyllic rolling pastorals of Valley Clare. Selected on the basis of opulence and intensity, velvet tannins and heady perfumes, the most sensational pickings from the finest vintages are set aside for inclusion into the stately and magnificent, Visionary Cabernet Sauvignon.
