Mulberry Tree is the quintessential Langhorne Creek Cabernet Sauvignon, named after an ancient mulberry tree growing right in the middle of an old vineyard, established in the 1920s. Fruit is treated to the traditional regimen of open vat and barrel ferments, followed by an old fashioned press into a selection of seasoned and new, French and American oak hogsheads for malolactic and a year's maturation. A deliciously dark berry wine, the palate is plump and fleshy, rich and round, redolent with hints of eucalypt and mint, its exceptional length is supported by chewy, toothsome tannins.

Excellent Langtons Classification. Exclusively estate grown Cabernet Sauvignon, one of Coonawarra's finest. The low yielding vineyard, planted to the magical Terra rossa soils, is dry grown and hand arch cane pruned, it traditionally yields limited crops of intensely flavoured fruit. Skilled use of traditional oaking techniques achieves a wine that's integrated and seamless, as delicate fine grain French oak supports the essential Coonawarra characters of violets and bramble berry, scorched earth and blueberry cassis perfumes.

Doug Bowen is one of Coonawarra's finest viticulturalists, he endeavours to restrict vine yield to a cropping level which ultimately delivers maximum quality in the finished wine. A regimen of tight pruning translates into long lived Cabernet Sauvignon, full bodied and offering great depth of flavour. The grapes are normally harvested and crushed within the hour, musts are inoculated and vinified in traditional fermenters at cooler temperatures. Upon completion and a course of malolactic, components are rack and returned into a selection of finely coopered French oak barriques for an extended maturation of up to twenty months, infusing remarkable complexity and finesse into the evolving wine.
 
Very intense deep colour reminiscent of blackberries. On the nose this strong wine shows superb Cabernet flavours of blackberries and mulberry with abundant new French oak flavours and toasty cigar oak nuances. The palate is weighty, supported by firm yet soft tannins. The clean varietal fruit characters leave a mark of distinction on the palate, a distinctive, highly regional, classic Coonawarraâ„¢ Cabernet to accompany beef, game dishes and aged cheeses.

Captain Stentiford established his Shiraz vineyard in 1896, naming the property Laira after a merchant trader. Plantings of Cabernet came much later and have since been the source of memorable single vineyard wines. Laira's exceptional character shines when the grapes are fashioned into a pure Cabernet wine, encapsulating the combination of climate and soil, aspect and fruit, that stamps this historical vineyard with individuality. The flavours are distinctly Coonawarra, but the perfume and succulent fruit characters are conspicuously Brands Laira.

Brand's Laira is one of Coonawarra's largest proprietries with almost three hundred hectares under vine. The Brand and Redman families became bonded by matrimony in the 1940s, establishing new blocks over the years and consolidating one of Australia's great winemaking estates. Cabernet Sauvignon grapes are harvested off fully mature vines, fermented on skins for a week and pumped over twice daily to ensure maximum extraction of colour and flavour. Batches are then pressed off while still slightly sweet into a selection of French and American oak 500L puncheons, 300L hogsheads and 225L barriques for completion of ferments, a course of malolactic and eighteen months extended maturation.
 
Garnet red colour. Pure cassis, mint and leafy fruit aromas, cedar oak and mocha notes from barrel ferments and extended maturation. A fruit driven, medium weight palate of cassis and red berry flavours, peppermint and Cabernet leaf notes. Barrel ferment and maturation have contributed mocha oak and cedar characters. A long, fine tannin finish with lingering fruit flavours.

A no expense spared approach to vineyard management leads to a selective harvest of the highest quality fruit, all conducted by hand and sorted bunch by bunch. Components are fermented on skins and treated to daily pumpovers ensuring optimal extraction of flavour and colour. Batches are pressed off skins while still slightly sweet and pumped to new, fine grained French oak barriques and hogsheads for completion of ferments, followed by racking off lees and return to the same barrels fortwo years maturation. Barrels are periodically rack and returned to achieve clarity and contribute to the wine's development. A further term of bottle age serves to integrate the wine and tame the tannins.
 
Deep crimson red. Brooding nose of brambleberry and dark currants, full of cassis and spicy cedar notes underpinned by dried herbs. A rich and complex fruit driven palate displaying sweet, dense, dark berry fruit characters and some chocolate mint notes. The flavours seamlessly integrate with vanilla and mocha oak and flow through to a long, fine and lingering, fruit filled yet savoury, silky tannin finish.

The Evans & Tate team have called upon a harvest of Cabernet Sauvignon from a special block of vine at Wilyabrup. Grapes are all hand picked, crushed and destemmed for several days of cold soak. Batches are inoculated and thoroughly aerated over the course of ten days to optimize colour and ensure softness. The musts are pressed for completion of ferments, racked off lees into a selection of seasoned and new French oak barriques and hogsheads for malolactic and sixteen months maturation.
 
Deep garnet/ purple colour. Lovely bright red strawberry fruit followed by a hint of vanilla showing through on the nose, a balance of bramble/cassis and cherry/plum over supple influence of oak that seems just right. Juicy blood plum and pomegranate flavours, supported by the solid Cabernet structure. Medium bodied, the smooth yet rich, lingering finish is complimented by a length of stylish, firm and judicious tannins.

It was the secret ingredient in many of the nation's most memorable vintages, maestro Wolf Blass called on Langhorne Creek Cabernet for his most salubrious editions of red wine. The Willson family had enjoyed a distinguished reputation as growers of the finest Cabernet for many years before establishing their own label. One of the best kept secrets in Australian viticulture, Langhorne Creek Cabernet is characterized by its universally appealing approachability, statuesque elegance and early drinking grace. The annual flooding of Bremer River replenishes the rich alluvial soils which nourish Bremerton Vineyards, infusing Cabernet grapes with the tantalizing eucalypt characters of local flora. Individual parcels of Cabernet Sauvignon are treated to a spell of cold soak in traditional, small open fermenters for optimal extraction of colours and flavour. Upon completion of ferments, batches are filled to a selection of seasoned and new French and American oak barriques for eighteen months before assemblage.

The very limited release Walter Reserve is a wine of stature and opulence, an outstanding Cabernet Sauvignon grown to the rich, predisposed soils of Langhorne Creek. The winemaking team headed by Rebecca Willson has taken the quality of Bremerton wines to stellar heights. Willson crafts traditional, full bodied, full flavoured, mouth filling Langhorne Creek wines that show a consistency of style, whilst encouraging the true varietal Cabernet characteristics to be expressed. Cabernet Sauvignon is fermented in open vats before being matured two years in completely new French oak. Following some barrel age, each parcel is assessed, the most outstanding parcels are treated to a further term of age before being assembled into the final wine. A term of bottle maturation, up to two years before release totally integrates the tannins, achieving remarkable flavour development.

It was in 1881 that a fine gentleman by the name of Daniel McGregor paid 62 pounds and 2 shillings for a Crown Grant of a hundred acres. The yearly rent for Sussex Location 165 on the fertile banks of Willyabrup Brook was a single peppercorn paid each year on the 25th March, or soon thereafter as demanded. In the 1980s it was replanted to vines and today is one of the Margaret River's most inestimable sites for first growth Margaret River Cabernet Sauvignon. A long lived wine of luxury and complexity, drinking superbly upon release.

The estate operates fifty two hectares of vineyard at the heart of Margaret River, much of it is planted to Cabernet. Brookland Valley has been recognised for producing wines of exceptional quality, claiming numerous trophies and medals on the wine show circuit. Cabernet Sauvignon demonstrates the absolute commitment and focus of the viticultural and winemaking teams to achieve excellence. Grapes are harvested at optimal maturity, de-stemmed and put to small open fermenters. After daily plunging and an extended maceration, the ferment is pressed off to fine French oak for the completion of malolactic, racked several times during the maturation and given a light egg white fine before filtration.
 
Deep, concentrated red in colour. Displays blackcurrant, mulberry leaf and cassis, plum skin fruit aromas, whilst hints of black olive, mint and savoury oak lead into an enticing and complex bouquet. The varietal flavours envelop the palate, dark fruits and tobacco notes prevail. The cabernet expressions are sustained and lengthy, with soft, top shelf tannins and exemplary acid balance.
