Peter Robertson was a Lancaster gunner during World War II. Over the course of thirty missions, he was introduced to wine by his pilot, John Seppelt of Great Western. Robertson turned to farming after the war and planted the Hilltops first vines in 1969. Robertson's Barwang property has since produced some of the most memorable vintages. Parcels from two elite blocks are vinified into a richly concentrated, classically structured Cabernet Sauvignon, showing great length of black fruit flavours, olives, currants and eucalypt, over a structure of elegant oak and sound tannins, a wine of opulence and grace.

Mike Press knows about red wine, he learned his craft at Penfolds while working alongside the man who created the mighty Grange, before completing tours of duty at Krondorf, Seppelt and Mildara Blass. He also has a good eye for the land, selecting a choice site in Adelaide Hills which yields superior harvests of Cabernet Sauvignon. Such was the quality of fruit grown to the single precious vineyard at Lobethal, that Mike Press received overwhelming critical acclaim and several conspicuous wine show triumphs for his first ever vintage.

$1599each $191DOZEN EACH DOZEN Mike Press personally planted Cabernet Sauvignon vines on his Adelaide Hills property in 1998, they are all closely managed by the Press family and friends, before being harvested carefully by hand at vintage time. The fruit of his coddled homestead vineyard made history in 2006 when it made the final cut of Australia's most prestigious accolade, the Jimmy Watson Memorial Trophy, as an unlabelled cleanskin wine. Parcels of Reynella and CW44 clones Cabernet Sauvignon are treated to a traditional vinification before being filled to a selection of French oak hogsheads for an extended term of maturation.

Bright scarlet purple colour. The nose combines blackcurrant fruit over subtle oak, complexed by varietal Cabernet capsicum and coffee bean notes. Ripe blackberry fruit palate, currant and red cherry flavours, the savouryness of olive and tobacco. Supported by dark chocolate oak and solid, juicy tannins, before a well structured, lingering finish.

Clare Valley Cabernet at its finest, an elegant wine of power and grace, fully evolved after a spell of bottle age under the Mitchell estate cellars. The Sevenhill property was a pioneering homestead, it has supported orchards and vineyards since the 1860s, ulimately replanted to Cabernet Sauvignon in the early 1980s. These vines are now fully mature and yield the most exquisite fruit. Even in its youth, Sevenhill displays magnificent structure, the palate is brimming with cassis cherry flavours and ripe currant notes, before resolving on a soundly savoury tannin finish.

His experiences continue to contribute to the development and refinement of the Mitchell style. Careful land management is nothing new to the Mitchells, who have long known that dry grown fruit makes better wine. Careful soil management, conservative old style farm and biodynamic practices, are essential to a healthy harvest. Cabernet Sauvignon is picked at several different stages of ripeness to capture the full array of varietal fruit characters. The finished wine is matured two full years in a selection of tightly grained French oak barriques, followed by assemblage and an extended term of bottle age before release.

Deep dark red colour. A completely mesmerising bouquet, enthusiastic loganberry and bramble perfumes are met by the vanilla caramel richness of new French oak. The palate is full of luscious black, red and blue berry flavours, characteristic Clare Valley violets and mint, a solidly structured Cabernet supported by a firm backbone of fine grained tannins. A wine to decant and to breathe for optimal enjoyment.

Cabernet Sauvignon are among the earliest planting at Mitchelton, they have thrived under the balmy climes and yield an outstanding harvest with each vintage. A compilation of fruit from some of the oldest blocks have been treated to a traditional vinification and term of age in the pick of luxury oak barriques. Elegantly structured, intense savoury aromas are complemented by sweet leather and musk, the palate is all about concentrated black and red fruits layered over tasty tar and savoury black olives, fine, chewy tannins draw the palate out to exquisite length.

Monarcho was the most eccentric of all jesters at the court of Elizabeth I. He was the only fool ever named by Shakespeare and is featured in Loves Labour Lost. The blue attired Monarcho was more intelligent and politically aware than his behaviour suggested. A fifth of fruit in Jester Cabernet has been treated to the painstaking Amarone technique, drying grapes on open racks to concentrate flavour and soften the tannins. Jester is upfront and approachable for early appreciation, an accessible, mouth filling Cabernet wine.

$2299each $275DOZEN EACH DOZEN From the Willunga precinct of McLaren Vale, where the evenly ripening Shiraz develops exemplary flavours and tannins. Jester is upfront in style and approachable, an earlier drinking wine for immediate appreciation. Crafted to an ancient unique process, a component of the grapes are left to dry on ten kilogram drying racks for several weeks in the traditional Amarone manner to concentrate flavour. The fruit is fermented on skins for six days at cool temperatures to enhance the pure berry fruit. Jester is then pressed and treated to partial barrel fermentation, followed by a natural malolactic before racking and a spell of maturation in a selection of well seasoned French oak barrels.

Deep crimson with brick red hues. Lifted peppery spice leads into an herbaceous mix of blackberries, currants and clove. Bright, lush and juicy, Jester shows a full bodied palate endowed by mouth filling richness. The Amarone treatment contributes hints of liquorice, tar and leather whilst remaining fresh and vibrant. Youthful tannin structure, soft, supple and smooth, a match to moussaka, osso buco or lasagna.

One must have the courage to stand up for one's beliefs and not conform to mediocrity. Serpico was a famous New York cop who wasn't afraid to work against the system, he succeeded in exposing much of the injustice and inequity. Mitolo take Serpico's example to step outside the constraints of established style and redefine the accepted genre of Australian Cabernet. Serpico is made to the Amarone technique of drying grapes before fermenting, concentrating flavours, building great intensity and forming the silkiest tannins.

$7399each $887DOZEN EACH DOZEN Cabernet Sauvignon is hand picked early at around 13° baume off the Chinese block at Lopresti Vineyard and placed onto 10kg racks. Bunches are left to dry for several weeks in the tradtional Amarone manner, the grapes lose a third of their weight in moisture, an old world technique which achieves fruit of extraordinary intensity and flavour. Fruit is then vinified on skins for a fortnight followed by three weeks maceration, softening the palate, as small, aggressive tannins are mellowed, leaving only larger, silky tannins. Components are matured ten months in a selection of seasoned and new French and American oak barriques before being considered for inclusion into the final assemblage.

Deep ruby red colour. Intense varietal perfumes of blackcurrant, tobacco leaf and dried herb over subtle whiffs of smoky, spicy oak. An intriguing palate of concentrated dark berry fruits framed by silky yet mouth coating tannin. The flavours are complex and well layered with blackberry, cigar box and balanced acidity in support toward the long, dry finish. A match with casseroled rabbit, sage leaf and mash.

Mocandunda was planted to a stony ridge, at 450 metres altitude, a place of warm, sun drenched daylight hours, followed by the sobering cool of cloudless nights. A choice block atop the stony ridge was sown to a very special clone, a patch of red loamy clays, given pride of place for the realization of statuesque Cabernet Sauvignon wines. An extended term in the luxury of artisanally coopered French oak, completes an opulent style of Cabernet, its sublime seamlessness and exemplary integration, the ultimate indulgence of boot polish tannins, black bramble berries and urbane ebony oak.
