A solid Cabernet Sauvignon with profound structure and vigorous fruit, the essential Coonawarra style, exuding rich bramble, berries and cassis aromas characters over soft, elegant tannins. Extended maturation in the finest French oak contributes to the wine's overall balance and drinkability. Driven by quality and a hands on approach, representing almost a third of total Hollick production, it's predecessors have won numerous awards at national competitions, including the highly coveted Jimmy Watson, Robert Bryce and Arthur Kelman Trophies.

The long and cool, dry growing seasons that prevail in Coonawarra provide ideal conditions for grapes to accumulate intense flavours and colours. Vinified from a selection of fruit grown to older vine Cabernet Sauvignon planted in the shallow Terra rossa soils of Neilson's Block, replanted by Ian and Wendy Hollick circa 1975, with a contribution from the Wilgha vineyard, acquired in 1987. Hollick know that great wines are made on the land, to this end, grapes are handled carefully to retain the exquisite fruit flavours of the vineyard. A measure of barrel ferments, followed by twenty months maturation in a selection of new and seasoned French oak, achieves elegance and builds sound structure.
 
Bright crimson with purple hues. An elegant mix of mulberry, red currant and plum aromas, alluring floral notes. A round and plush wine with red currant, blackberry and cherry fruit flavours. Hints of mint, black olive and cedar add to the finely structured and balanced palate. A focused and intense wine displaying balance and elegance before a long, persistent finish. A match to crusted roast lamb, potatoes and chunky veg.
Hollick Ravenswood Cabernet Sauvignon

Ravenswood Lane is the link between the Hollick Coonawarra Vineyards, namely the Neilson's Block. First vintaged in 1988, Ravenswood is only released when the wine satisfies the very exacting quality parameters set by the Hollick team. The best parcels of Cabernet Sauvignon from the Hollick vineyards are earmarked for Ravenswood, typically the fruit comes from the oldest vines growing in very shallow Terra rossa soil. Released in extremely limited quantities, it stands as an icon Coonawarra Cabernet Sauvignon of great significance.

The twelve hectare Neilson's Block was one of the original John Riddoch selections, in true Coonawarra fashion it was exploited as a dairy farm until the planting of rootstock in 1975. Extensive canopy renovation has envigorated the vines and revitalised the quality of harvest. Consistently producing some of Coonawarra's best Cabernet, the cream of crop is earmarked for Ravenswood. Once in the winery the utmost care is taken to preserve the unique and exquisite fruit characters which are its raison d'être. The fruit begins vinification in fermenters before being filled to completely new Tarandsaud & Seguin Moreau French oak barriques for completion and eighteen months maturation.
 
Dense crimson with purple hues at the rim. Lifted, penetrating aromas of blackcurrant and plums, cassis and black olive. A wine of genuine class with intense flavours of dark berry fruits and hints of dried herbs, menthol and chocolate oak, over integrated and soft, fine grained tannins that ensure the wine is approachable in its youth, the track suggests it cellars exceptionally well. Complex and concentrated, best enjoyed with fine gourmandise.

Crofters were Scottish tenant farmers who shared the proceeds of harvest with their landlord. Still functional at the Houghton wineworks, is a restored historical homestead of Crofter design. Today, the Houghton team remains at the forefront of viticultural expansion and innovation throughout the premiere winegrowing precincts of Western Australia. It's a well kept secret that Frankland River yields a quality of Cabernet Sauvignon that's world class and second to none. Crofter sings in complete harmony with it's resonant fruit and long delving finish.

Houghton own and operate significant vineyard holdings in most of WA's premier appellations, the winemakers retain access to an exhaustive catalog from which to source the pick of Cabernet Sauvignon. Close management of vines and a holistic approach to viticulture make a major contribution to the ultimate quality of wine. Parcels are assembled from choice Frankland River sites, treated to vinification through the action of wild yeasts in traditional open top fermenters and gently pressed off skins at dryness into a selection of French oak barrels, for completion of malolactic and an extravagant sixteen months maturation.
 
Dark red, scarlet hues. Lifted aromatics of black olive and cassis, dark currants and blueberry are supported by the cedar and spice of French oak. Fruit forward palate of raspberry and cassis, loganberry and black bramble fruit flavours, supported by fine tannins and firm acidity, a wine of superb texture and splendid length.

Dr Gladstones was a long time friend of the late Jack Mann, pioneer of the West Australian wine industry and mentor of Houghton wines. Cabernet Sauvignon is sourced from the Batley vineyard in the Wilyabrup sub region of Margaret River. The red granite gravel loam soils, maritime climate and twenty year old vines contribute to producing wines with richness, structure and intensity. Fruit is hand picked, crushed and vinified in small 2T and 5T open fermenters, hand plunged then pressed to tank, settled and racked directly to a selection of new and one year old Bordeaux coopered French oak barriques. Gladstones is minimally handled throughout its life in oak, until assemblage, sixteen months after vintage.
 
Intense deep purple red with vibrant scarlet hues. High intensity and attractive aromatics of berry fruits, cassis and cigar box. Underlying aromas of star anise and charry oak spice provide wonderful complexity. The dense and structural palate is balanced by fine, firm tannins. Will impress as a youth and evolve over many years.

Houghton has long been one of the leading protagonists within the hemisphere of cutting edge West Australian viticulture. Under the guidance and custodianship of many exceptional winemakers, Houghton has flourished and now enjoys an impressive retinue of vineyards across the length and breadth of Margaret River. Houghton retains access to some of the finest Cabernet Sauvignon anywhere in the country. The select grapes are harvested at ideal ripeness and vinified in open and small static fermenters with careful plunging of the cap to achieve excellent colour and tannin extraction. Wisdom was then pressed directly to Bordeaux coopered French oak barriques for seventeen months maturation.
 
Brilliant, deep red with garnet hues. The bouquet is intensely aromatic. Lightly herbaceous with tomato leaf, mint and cigarbox complemented by clove, spice and charry notes derived from French oak. The flavoursome palate is rich with plum and cherry fruit characters, complemented by dark chocolate and mocha notes. Firm acidity and fine powdery tannins provide length and structure.

Together they produce an elegantly balanced Cabernet wine with ripe, mature tannins backed up by quality French oak. Produced from the top 1% of fruit and only ever made in years when grapes of extraordinarily high quality are harvested.

Abercrombie has claimed Grande Medialle d'Or at Concours Mondial de Bruxelles. Over the years it has been internationally feted with multiple awards including Best in Class International Wine & Spirits Competition and two Blue Gold Medals at the Sydney International. Since inaugural release, the best parcels from a selection of the oldest vineyards in Margaret River, the cooler ripening climes of Mount Barker and Porongurup sub-region of Great Southern, have been set aside for Abercrombie. All fruit is hand picked, sorted and vinified in a mix of small static fermenters and open vats. The wines are hand plunged and pumped over as required to balance the extraction of colour, tannin and flavour development.
 
Opaque red with a purple rim. The nose is filled with blackberry, cedar, tomato leaf, dusty bitumen road and chocolate representing each distinctive component of the harmonious blend. The palate starts with a rush of plush red berry fruit and reaches its zenith with damp earth and forest floor complexity balanced by ultrafine powdery and layered tannins. The finish displays long fruit and structural elements balanced by supporting mocha oak.

An assemblage of the best parcels from the Lange vineyard in Frankland River, established in the late 1990s. Howard Park's Scotsdale property is located at the foothills of the ancient Porongurup range. At 200 to 380 metres above sea level, it is among the highest vineyard sites in all Western Australia. The soils are lateritic gravelly/sandy loams over granite, yields are quite low, the vines are fastidiously maintained and gingerly nurtured with extraordinary attention to detail. Dividends arrive in the form of the most exceptional vintages to be found anywhere in the Australian west.

Howling Wolves incorporates traditional winemaking philosophies with cutting edge vinification techiques. As always, the quality of fruit is paramount, grapes are chosen on the basis of profound varietal regional expression. Vines are picked of their fruit, just as the natural balance of sugar ripeness, flavour and tannins are achieved. Grapes are destemmed and lightly crushed before being vinified on skins over a course of seven to ten days. A gentle pumpover regime allows natural extraction of colour, flavour and tannins. Howling Wolves is treated to a term of ageing in a selection of French oak barriques before a light filtration.

The Hugos are quiet achievers, McLaren Vale agriculturalists for over a century, they always made good wine, not for profit but just for their own enjoyment. Cabernet Sauvignon was planted in 1970, with a view to sharing the tremendous quality of their fruit, the vines are now fully mature and yield vintages of the most wonderful wine. Intensely perfumed and layered with bramble lozenge flavours, swathed in a robe of soft velvet tannins, the proverbial jewel in a velvet glove. Finely integrated French oak is a highlight, dine with Hugo alongside tender beef or gourmandise game.
